AMAZING TOMATO CURRY

1.2 kg ripe mixed tomatoes
1 pinch of saffron
20 g flaked almonds
4 cloves of garlic
4cm piece of ginger
2 fresh red chillies
olive oil
1 handful of fresh curry leaves
1 teaspoon mustard seeds
1 teaspoon fenugreek seeds
1 teaspoon cumin seeds
1 onion
1 x 400 g tin of light coconut milk
2 teaspoons mango chutney

Steps:

  • With the tip of a knife, prick the tomatoes, removing the cores from any larger ones. Carefully plunge them into fast-boiling water for 45 seconds, then drain and peel away the skin.
  • Cover the saffron with 100ml of boiling water and leave to infuse.
  • Toast the almonds in a large non-stick frying pan over a medium heat until golden, then tip into a small bowl and place the pan back on the heat.
  • Peel and very finely chop the garlic, ginger and chillies.
  • Drizzle 1 tablespoon of oil into the pan, then add the curry leaves, followed by all the spices. Peel and quarter the onion, click apart into petals, then add to the pan with the garlic, ginger and chilli and fry for 3 minutes, stirring constantly.
  • Add the tomatoes, coconut milk and saffron water, then cover and simmer for 20 minutes, removing the lid and adding the mango chutney halfway.
  • Season to taste with sea salt and black pepper, then scatter over the almonds. Serve with fluffy rice.

1 small onion, peeled and finely chopped
3 tablespoons curry powder
1 tablespoon sweet paprika
1 3/4 cups plum tomato sauce (see Micro-Tip)
2 cups chicken broth
2 tablespoons fresh lemon juice
2 teaspoons kosher salt
Freshly ground black pepper to taste
1/4 cup lowfat yogurt, optional

Steps:

  • Place butter in a 2 1/2-quart souffle dish with a tightly fitting lid. Cook, uncovered, at 100 percent power in a high-power oven for 2 minutes. Stir in onion. Cook, uncovered, for 2 minutes.
  • Stir in curry powder and paprika. Cook, uncovered, for 2 minutes.
  • Remove from oven. Stir in tomato sauce. Whisk in chicken broth. Cook, covered, for 5 minutes.
  • Remove from oven and uncover. Stir in lemon juice, salt and pepper. Ladle into bowls. Top each serving with 1 tablespoon yogurt, if desired.

3 medium ripe tomatoes
1 tablespoon peanut or vegetable oil
1 1/2 to 2 pounds large sea scallops
Salt and freshly ground black pepper
2 tablespoons curry powder, or to taste
1/2 cup heavy cream, sour cream, or yogurt, optional
Juice of 1 lime
1/2 cup washed, dried, and chopped fresh cilantro

Steps:

  • 1.Core the tomatoes (cut a cone-shaped wedge out of the stem end), then cut them in half horizontally. Gently squeeze out the liquid and shake out most of their seeds. Chop their flesh into 1/2-inch pieces and set aside. Heat a 12-inch nonstick skillet over medium heat for about 3 minutes. While it is heating, sprinkle the scallops with salt and pepper and spread the curry powder on a plate.
  • 2. Add the oil, then quickly dredge the scallops lightly in the curry powder and add them to the pan. About 2 minutes after you added the first scallop, turn it-;it should be nicely browned (if it is not, raise the heat a bit). When the scallops are all browned and turned, cook for another minute, then add the tomatoes and the cream if you're using it (if you are using yogurt, lower the heat immediately; it must not boil).
  • 3. Heat the tomatoes through, then taste and add more salt and pepper if necessary. Sprinkle with the lime juice, stir in the cilantro, and serve.
  • Keys To Success
  • SINCE YOU'RE USING a large quantity of curry powder here, it should not be super-hot. (This is obviously a matter of taste, but I prefer a mild, sweet curry.) The powder itself must be fairly fine; if it is too coarse, the resulting crust will be gritty rather than crisp.
  • DREDGE THE SCALLOPS lightly in the curry, not as heavily as you would in flour.
  • KEEP THE SCALLOPS rare; they're at their best that way, and perfectly safe, as long as they're fresh.

1 medium yellow onion, chopped finely around (150g)
1 tablespoon freshly grated ginger
1 teaspoon chili paste (or to taste)
3 garlic cloves, crushed

This is a real favourite in my home, a lovely warm curry that I normally serve with steamed rice, chanai roti and mango chutney. It makes a great dinner party dish as it is sooo easy to make and everyone loves it. My English mum is very anti-curry and she not only asked for the recipe but made it for herself and some girlfriends a few days later. (Although she did decide she didn't really need to measure the curry paste (!!) so her curry was about 3 times as hot as mine). The tomatoes add a really nice touch. This is based on a Woman's Weekly recipe.

2 skinless chicken breasts, diced
2 tablespoons peanut oil
2 onions, chopped
1 teaspoon sugar
1 teaspoon finely chopped ginger
1/3 cup musaman curry paste
1 (400 ml) can light coconut cream
1 1/2 tablespoons plain flour
2 tablespoons water
2 tomatoes, chopped
1/4 cup cashews or 1/4 cup peanuts, chopped (I prefer the cashews)

Steps:

  • Heat oil in a large saucepan or wok; cook onion, sugar and ginger over medium heat for about 4 minutes or til onion has softened.
  • Stir in curry paste for about 2 minutes; add chicken, cook til lightly browned.
  • Add coconut cream; simmer, covered, for about 30 minutes.
  • Blend flour with water; stir into curry over high heat til mixture boils and thickens.
  • Add tomato, stir til hot.
  • Serve onto bed of steamed rice; sprinkle with nuts.

1 tablespoon olive oil
1/2 cup onion, minced
1 tablespoon red curry paste
28 ounces canned peeled whole Italian plum tomatoes
13 1/2 ounces coconut milk
15 ounces straw mushrooms
1/2 lb firm tofu (drained & cubed)
2 tablespoons brown sugar
2 tablespoons lime juice, fresh
2 tablespoons basil, fresh, chiffoned

Steps:

  • In a medium sized non-aluminum sauce pan heat oil, onion and Red Curry Paste. Cook over a medium heat until onions are soft and curry is dissolved & fragrant.
  • Blend or process tomatoes until smooth and add to sauce pan. Add Coconut Milk and mushrooms. Bring to a boil and turn heat down to a simmer.
  • Add tofu, sugar, lime juice. Simmer, stirring occasionally, until tofu is warmed through. Stir in chiffoned basil. Serve with or without rice garnished with sprigs of basil.

1 1/4 kg firm tomatoes
1/2 telegraph cucumber
500 g onions
3 large apples
2 tablespoons salt
3 cups cider vinegar
2 cups sugar
4 tablespoons curry powder (hot)
2 tablespoons flour
2 tablespoons turmeric
2 garlic cloves, finely chopped or 1 tablespoon minced garlic
1/2 cup water

Steps:

  • Blanch Tomatoes to remove skin.
  • Chop peeled tomatoes into cubes, cut peeled onions into 1cm cubes, cut peeled and cored apples into 1cm (½ in) cubes, peel cucumber and cut into cubes taking out the seeds.
  • Combine tomatoes, onions, cucumbers and apples in large bowl, sprinkle salt over - cover and stand for a few hours overnight.
  • Combine vinegar and sugar in large pan, stir over heat until sugar dissolves. Bring to boil, add drained vegetables, bring back to boil, reduce heat. Simmer 10 minutes.
  • Mix flour, curry powder, garlic and turmeric to smooth paste with water, add to pan, stir until mixture boils and thickens. Reduce heat and simmer 10 minutes, or slightly longer to get to the consistency that you like.
  • Remove from heat, pour into sterilized jars.

1 1/2 lbs fresh okra or 2 (10 ounce) packages frozen okra
4 cups tomatoes, peeled, cored, seeded and crushed or 4 cups canned tomatoes, crushed, preferably organic
1/4 cup peanut oil or 1/4 cup canola oil
3/4 cup onion, chopped fine
1 tablespoon garlic, chopped fine
1 tablespoon curry powder
1 teaspoon ground coriander
2 tablespoons hot green chili peppers, chopped (optional)
3 tablespoons coriander leaves, fresh, chopped
3/4 cup chicken broth, preferably homemade and unsalted (or vegetable broth)
salt & fresh ground pepper

Steps:

  • If fresh okra is used, trim off tough stems.
  • If frozen okra is used, defrost and drain.
  • Put the tomatoes in a saucepan and bring to the boil.
  • Cook, stirring often to prevent sticking, until the tomatoes are reduced to about two cups.
  • Heat the oil in a saucepan over medium high heat and add onions and garlic.
  • Cook, stirring, until the mixture is softened.
  • Sprinkle with curry powder and ground coriander and cook briefly.
  • Stir in the tomatoes and cook about five minutes; reduce heat if mixture is sticking.
  • Stir in chilies and fresh coriander.
  • Add the okra, chicken broth and salt and pepper to taste.
  • Bring to a boil, reduce heat and simmer 15 minutes or until the okra is tender.

This is such a wonderful canning recipe. I use these tomatoes for "everything" from my Spaghetti sauce, soups, stews to Salas's. My DH & I love putting them up as this recipe was handed down to my DH's from his grandmother. My DH helped make this canning recipe with his mother for years it is a favourite of his and mine! We get our tomatoes from a farmer's family who have grown beautiful hot house tomatoes for year's. I was told by my MIL & DH that I had incorrectly titled the tomato recipe OOPS! Bon Appétit!

8 lbs tomatoes (red ripe or green)
2 lbs sugar
4 tablespoons salt
1 tablespoon curry
1 tablespoon dry mustard
2 tablespoons cornstarch or 2 tablespoons flour
2 lbs vidalia onions (sliced)
26 ounces white vinegar
2 ounces white vinegar, aside for mixing dry ingredients

Steps:

  • Cut tomatoes & slice onions put in a very large pot.
  • Sprinkle with salt.
  • Let stand overnight.
  • Drain liquid off.
  • Cover with vinegar and bring to a boil.
  • When tomatoes are boiling add sugar.
  • Boil for 30 minutes.
  • Add mixture of mustard, curry with 1 oz of vinegar.
  • Boil for 20 minutes longer.
  • Mix flour or cornstarch with 1 oz of vinegar.
  • Add to boiling tomatoes boil another 10 minutes.
  • Put in sterilized jars with clean dry sealers.
  • Note: boiling time depends on how thick you want the tomatoes for the final product.

8 medium green tomatoes, chopped
3 large onions, chopped
2 teaspoons curry powder (more if you wish)
1 teaspoon paprika
salt and pepper
1 1/2 cups sour cream (use lite if you wish)
1/2 cup buttered breadcrumbs
1/4 cup grated parmesan cheese

Steps:

  • In a large skillet cook the tomatoes and onions until very soft (if there is a lot of fluid you may want to drain some off before adding the sour cream).
  • Stir in the curry powder, paprika, salt and pepper.
  • Let the mixture cool and stir in the sour cream.
  • Pour into lightly buttered casserole dish.
  • Sprinkle top with crumbs and parmesan.
  • Bake in 350F degrees oven until the casserole is bubbly and the topping is well browned (about 30- 45 minutes).
  • You can prepare ahead and pop it in the oven 45 minutes before dinner.
