- Melt the butter in a skillet over medium heat; mix the corn, green pepper, onion, and curry powder into the melted butter, cover the skillet, and cook until the vegetables are just tender, 8 to 10 minutes. Stir the sour cream into the vegetable mixture, season with salt and pepper, and continue cooking until hot, stirring continually, 2 to 3 minutes. Serve immediately.

- Heat the rapeseed oil in a large pan. Add the onion and cook for 8-10 mins until soft. Add the garlic cloves, red or green chilli, carrot and celery. Cook for 2 mins, then add the ground turmeric, mild or medium curry paste, chicken or vegetable stock cube and lentils. After 30 secs, pour in the coconut milk and 800ml boiling water. Cover and simmer for 15 mins. Add the sweetcorn, cover and cook for 3 mins. Leave the soup chunky or part-blend. Season to taste. Top with a halved soft-boiled egg, coriander leaves and green chilli slices.

- Heat oil in a large pot over medium heat. Saute onion until tender and translucent. Stir in the curry powder. Add the chopped carrots, and stir until the carrots are coated. Pour in the vegetable broth, and simmer until the carrots are soft, about 20 minutes.
- Transfer the carrots and broth to a blender, and puree until smooth. Pour back into the pot, and thin with water to your preferred consistency.

CURRIED PEA SOUP WITH FRIZZED GINGER

- Melt the butter in a large heavy-bottomed pot over medium-high heat. Add the onion, celery, and leek and season with salt and pepper. Saute the vegetables until they are softened but not browned, about 5 minutes. Add the curry powder, stir, and cook for 2 minutes more.
- Add the stock and herb sachet to the pot. Bring to a boil over high heat, then lower the heat and let simmer until the vegetables have completely softened, 10 to 12 minutes. Add the peas and simmer for an additional 10 minutes.
- Use tongs to remove and discard the herb sachet.
- Use an immersion blender to puree the soup in the pot, or puree it in batches in a standing blender, then return the soup to the pot over medium heat. Stir in the creme fraiche, being careful not to let the soup return to a boil. (If you like, reserve a few tablespoons of the creme fraiche to drizzle over each serving.)
- Divide soup among individual bowls and serve at once, topping each serving with a drizzle of creme fraiche, if desired, and a few pieces of frizzled ginger.
- Pour the oil into a heavy-bottomed stockpot or lobster pot. Add all the other ingredients and cook, stirring, over medium-low heat until the vegetables have all softened but not colored, about 15 minutes. Pour in 6 quarts water, raise the heat to high, and bring the water to a boil, then lower the heat and let the liquid simmer for 2 hours.
- Carefully strain the stock through a fine-meshed strainer set over a large bowl or pot, pressing down on the solids with a wooden spoon to extract as much liquid and flavor as possible. Let the stock cool, then refrigerate for up to 1 week or freeze in batches to be thawed and used as needed.
- Pour oil into a small pot and heat to 265 degrees F. Shave the ginger into a fine julienne using a Japanese mandoline, vegetable slicer, or very sharp thin-bladed knife. Adds the ginger crisps to the oil, frying them until crispy, about 1 minute; use a slotted spoon to remove them to a paper towel-lined plate to drain. Salt as soon as it hits the paper. These crisps can be held at room temperature for up to 2 hours.
CARROT-GINGER SOUP WITH CURRIED CROUTONS
This warm and comforting soup is a perfect for cool weather. The ginger in the soup delivers a nice little kick and the curried croutons add great flavor and crunch. If you'd like to make the soup dairy free, replace the melted butter for the croutons with olive oil and omit the butter that's blended into the soup.

- Place a baking rack in the middle of the oven and preheat to 400 degrees F. Line a small baking sheet with parchment and set aside.
- Heat the oil in a large pot over medium-high heat. Add the carrots. Cook, stirring occasionally, until the carrots turn bright orange, about 2 minutes. Add the onions and cook until translucent, about 3 minutes. Add the ginger, garlic, 1 teaspoon salt and 1/4 teaspoon pepper and cook, stirring, until fragrant, about 2 minutes. Stir in the coconut milk and 3 cups water. Bring to a boil, reduce the heat and simmer until the carrots are completely tender, about 10 minutes.
- Meanwhile, make the croutons: Melt 2 tablespoons of the butter. Remove the crust from the bread and cut the slices into 1/2-inch cubes. Toss the cubes with the melted butter, curry powder, 1/4 teaspoon salt and pinch pepper. Spread the bread over the prepared baking sheet and bake in the middle of the oven until golden brown, 8 to 10 minutes.
- Once the carrots are tender, transfer the soup to a blender in two batches. Add 1 tablespoon of the remaining butter to each batch and blend until smooth. Reheat the soup if necessary. Taste and adjust the seasoning. Serve hot topped with the croutons.

- Heat oil in a large saucepan. Add onion; cover and cook over medium heat, stirring occasionally, until softened, about 5 minutes. Add curry powder and cook 30 seconds until fragrant.
- Add broth, corn, potatoes, lemon juice and salt to saucepan; bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, partially covered, until potatoes are tender, about 20 minutes; remove from heat.
- In a blender, food processor or using an immersion blender, puree mixture (in batches if necessary), until smooth. Strain through a fine mesh sieve into a bowl, pressing on solids to extract as much liquid as possible.

- Bring the first 5 ingredients to a boil.
- Add the ham and ginger and bring back to a boil.
- Mix the cornstarch wtih the cold water until smooth.
