6 Mission Gluten Free Spinach Herb Tortillas, warmed
½ tsp. Curry powder
½ tsp. Ground cumin
½ tsp. Ground coriander
½ tsp. Chili powder
½ tsp. Salt, divided
½ tsp. Pepper, divided
1 ½ cups Cauliflower florets, small, blanched and drained well
½ can (19 oz.) Chickpeas, drained and rinsed
2 tbsp. Coconut oil, melted and divided
⅓ cup Greek yogurt
⅓ cup Cilantro, finely chopped
1 tsp. Lime zest
2 tbsp. Lime juice
1 tbsp. Ginger, minced
1 Garlic clove, minced
1 Apple, peeled, diced
1 rib Celery, diced
2 tbsp. Cashews, chopped
2 tbsp. Red Onions, finely diced
1 cup Spinach

Steps:

  • Preheat oven to 425°F. In large bowl, stir together curry powder, cumin, coriander, chili powder and ¼ tsp. each salt and pepper. Add in cauliflower, chickpeas and 1 tbsp. coconut oil; toss to coat. Arrange in single layer on parchment paper-lined baking sheet and bake for 15 to 20 minutes. Mash slightly with a fork.
  • In another large bowl, stir together Greek yogurt, cilantro, lime zest, lime juice, ginger, garlic and remaining salt and pepper.
  • Combine chickpea and cauliflower mixture, apple, celery, cashews, red onion and spinach. Then stir in yogurt mixture.
  • Warm tortillas according to package directions.
  • Spoon curried chickpea and cauliflower mixture down center of each tortilla leaving a small border on either end. Fold up bottom of tortilla over filling; fold in sides and roll up tightly starting from the bottom.

1 pound cauliflower florets, (cut into bite sized pieces (about 4 cups))
1 Tablespoon canola oil
1 small onion, (chopped)
2 cloves garlic, (minced)
1 Tablespoon curry powder
1/2 teaspoon ground cumin
1/2 teaspoon mustard seed
1 teaspoon chili garlic sauce or sriracha
1/4 teaspoon salt
1 14 ounce can chickpeas, (rinsed)
1 teaspoon lime juice
2 Tablespoons minced cilantro
4 frozen paratha or Naan breads, or tortillas ((use Gluten Free wraps or serve over rice or quinoa to make this recipe Gluten Free))

Steps:

  • Lightly steam or microwave cauliflower on high until just starting to soften, about 3-4 minutes. Set aside.
  • Heat canola oil over medium high heat in a 10 inch skillet. Add onion and cook until softened, about 3-4 minutes. Stir in garlic, curry powder, cumin and mustard seed and cook until fragrant, about 30 seconds. Stir in chili garlic sauce, salt, chickpeas and cauliflower. Cook until chickpeas are heated through and cauliflower is softened, about 5 minutes. Remove skillet from heat and stir in lime juice and cilantro. Spoon into paratha breads (cooked according to directions on package), Naan bread or tortillas and fold into a wrap.

2 cups low-sodium vegetable broth
One 13.5-ounce can unsweetened coconut milk
4 cloves garlic, finely grated
1 tablespoon finely grated peeled fresh ginger (from a 1- to 2-inch piece)
1 serrano chile pepper, stemmed and finely chopped (remove seeds for less heat)
2 1/2 teaspoons curry powder, preferably Madras
Kosher salt
Two 15.5-ounce cans chickpeas, drained and rinsed
2 cups lightly packed baby spinach, roughly chopped
1 1/2 cups basmati rice
1/2 medium head cauliflower, cut into small florets (about 3 heaping cups)
1/2 small red onion, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking dish with nonstick spray.
  • Whisk the vegetable broth, coconut milk, garlic, ginger, serrano, curry powder and 2 teaspoons salt together in a medium bowl until combined. Add the chickpeas and spinach and stir to coat.
  • Spread the rice evenly in the bottom of the prepared dish. Pour in the coconut-milk mixture, distributing the chickpeas and spinach evenly over the rice. Scatter the cauliflower and onion over the top, making sure to go all the way to the edge of the pan (it's okay if the cauliflower is not completely submerged in liquid).
  • Cover tightly with foil and bake until the vegetables have softened but are still vibrant, about 25 minutes. Remove the foil and bake until the cauliflower is charred in spots and the rice is cooked through, 20 to 25 minutes more. Let sit for 5 minutes to allow the rice to absorb more of the moisture. Serve topped with cilantro, a drizzle of yogurt and lime wedges for squeezing.

1 large onion, chopped
1 small head cauliflower, broken into florets
1 cup water, divided
4 medium carrots, thinly sliced
3 large cloves garlic, minced
1 tablespoon grated fresh ginger

½ teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon ground cinnamon

Steps:

Steps:

  • Heat olive in a skillet over medium heat. Add onion, curry powder, and ginger; cook and stir until onion is soft, 5 to 7 minutes. Add tomatoes and cook for 6 minutes.
  • Stir in tomato paste, then 1 cup water. Add cauliflower and chickpeas; stir to coat. Reduce heat, cover, and simmer until cauliflower is tender, 15 to 20 minutes.

2 tablespoons vegetable oil
2 1/2 cups onions, chopped (2 medium onions)
6 cups cauliflower florets (from 1 medium head)
5 teaspoons curry powder (use hot or use regular curry powder and add about 1/2-1 teaspoons of red pepper flakes)
2 (15 1/2 ounce) cans garbanzo beans, drained
2 (10 ounce) cans rotel (I use the Mexican variety)
1 (14 ounce) can unsweetened coconut milk (Low-fat would work fine)
1 teaspoon garam masala
1/2 teaspoon ground cumin
1/4-1/2 teaspoon ground ginger

Steps:

  • Heat oil in large saute pan over medium heat. Add onions and sauté until golden brown.
  • Add cauliflower, curry powder, and garbanzo beans; stir.
  • Add Rotel, coconut milk, garam masala, cumin, and ginger. Heat to medium-high, and bring to a boil.
  • Reduce heat to medium-low, cover, and boil gently until cauliflower is tender and liquid thickens slightly, stirring occasionally, about 16 minutes.
  • Season to taste with salt, if desired. Serve with crusty bread or over rice.
