CHICKEN BREASTS WITH FETA AND FIGS

Chicken Breasts With Feta and Figs image

Cooked figs go beautifully with meat, especially a griddled or pan-cooked chicken breast. I always seem to circle back to feta when I'm working with figs in a savory dish. I love the flavor of the earthy, salty cheese against the subtle, sweet fruit.

Provided by Martha Rose Shulman

Categories     dinner, main course

Time 1h30m

Yield 4 servings

Number Of Ingredients 11

4 5- to 6-ounce boneless, skinless chicken breasts
Salt and pepper
2 teaspoons chopped fresh rosemary
2 garlic cloves, peeled and crushed
2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 ounces feta, crumbled (about 1/2 cup)
1 1/4 teaspoons fresh thyme leaves
1/2 cup red wine
8 fresh figs, cut in small dice
1 tablespoon honey
Rosemary sprigs for garnish (optional)

Steps:

  • One at a time, place each chicken breast between pieces of plastic wrap or parchment and lightly pound with a mallet until it is 1/2 to 3/4 inch thick. Chicken breasts should be of uniform thickness.
  • Place chicken breasts in a bowl, season with salt and pepper and toss with rosemary, garlic and 2 tablespoons olive oil. Cover bowl and refrigerate for 30 minutes to an hour.
  • Place oven on lowest setting, around 200 degrees. Cook the chicken: Heat a large cast-iron skillet or grill pan over high heat for 5 minutes. Add remaining olive oil to pan and reduce heat to medium-high. Turn over chicken breasts in marinade to coat them, then add them to the pan, rounded side down. Cook for 4 to 5 minutes on one side, until cooked halfway through.
  • Turn chicken breasts over and carefully arrange feta on top, dividing it equally among the 4 breasts. Sprinkle about 1/4 teaspoon thyme leaves over feta on each breast. Cook 4 to 5 minutes, until breasts are cooked through. Feta will warm but will not melt. Transfer to a baking sheet and keep in warm oven while you cook the figs.
  • Add wine to pan and scrape with a wooden spoon to deglaze the bottom. Boil wine until it has reduced by half, then add figs, honey and remaining thyme. Cook, stirring, until figs break down and begin to look jammy, about 3 minutes. Remove from heat.
  • Serve chicken breasts with fig compote on side and garnish with rosemary sprigs.

CURRIED CHICKEN THIGHS

Curried Chicken Thighs image

This recipe came from a friend who helped me complete my mission to find a curry that I like. On my last out of town visit to her, she even took me to her local grocery store to buy her favorite curry powder. It's a Madras blend by Sun Brand, very mild and not at all aggressively spiced. And what do you know? I now like curry. I only buy the boneless thighs when they are on sale. Bone-in thighs with the skin removed work equally as well. A little less water is needed using those but a bit more cooking time is needed.

Provided by Kitchen Witch Steph

Categories     Curries

Time 25m

Yield 2-4 serving(s)

Number Of Ingredients 9

4 boneless skinless chicken thighs (about 1 pound)

1 dash ground ginger
1 dash ground cumin

1/3 cup water
1/2 cup sour cream

Steps:

  • Cut chicken into 1-inch strips. I have kept bone-in thighs whole.
  • Heat oil in 10-inch skillet until hot.
  • Cook chicken in oil over medium-high heat until brown on all sides.
  • Sprinkle with remaining ingredients except sour cream.
  • Reduce heat. Cover and simmer about 10 minutes or until chicken is done. (longer for bone-in thighs.

HOME-STYLE CHICKEN CURRY

Home-style chicken curry image

A rustic and authentic quick Indian one-pot packed with tonnes of hot Asian spices and fragrant coriander.

Provided by Roopa Gulati

Categories     Dinner, Main course

Time 45m

Number Of Ingredients 15

1 large onion
6 garlic cloves, roughly chopped
50g ginger, roughly chopped
4 tbsp vegetable oil
2 tsp cumin seeds
1 tsp fennel seeds
5cm cinnamon stick
1 tsp chilli flakes
1 tsp garam masala
1 tsp turmeric
1 tsp caster sugar
400g can chopped tomatoes
8 chicken thighs, skinned, boneless (about 800g)
250ml hot chicken stock
2 tbsp chopped coriander

Steps:

  • Roughly chop 1 large onion, transfer to a small food processor, and add 3 tbsp of water - process to a slack paste. You could use a stick blender for this or coarsely grate the onion into a bowl - there's no need to add any water if you are grating the onion. Tip into a small bowl and leave on one side.
  • Put 6 roughly chopped garlic cloves and 50g roughly chopped ginger into the same food processor and add 4 tbsp water - process until smooth and spoon into another small bowl. Alternatively, crush the garlic to a paste with a knife or garlic press and finely grate the ginger.
  • Heat 4 tbsp vegetable oil in a wok or sturdy pan set over a medium heat.
  • Combine 2 tsp cumin seeds and 1 tsp fennel seeds with a 5cm cinnamon stick and 1 tsp chilli flakes and add to the pan in one go. Swirl everything around for about 30 secs until the spices release a fragrant aroma.
  • Add the onion paste - it will splutter in the beginning. Fry until the water evaporates and the onions turn a lovely dark golden - this should take about 7-8 mins.
  • Add the garlic and ginger paste and cook for another 2 mins - stirring all the time.
  • Stir in 1 tsp garam masala, 1 tsp turmeric, and 1 tsp caster sugar and continue cooking for 20 secs before tipping in a 400g can chopped tomatoes.
  • Continue cooking on a medium heat for about 10 mins without a lid until the tomatoes reduce and darken.
  • Cut 8 skinless, boneless chicken thighs into 3cm chunks and add to the pan once the tomatoes have thickened to a paste.
  • Cook for 5 mins to coat the chicken in the masala and seal in the juices, and then pour over 250ml hot chicken stock.
  • Simmer for 8-10 mins without a lid until the chicken is tender and the masala lightly thickened - you might need to add an extra ladleful of stock or water if the curry needs it.
  • Sprinkle with 2 tbsp chopped coriander and serve with Indian flatbreads or fluffy basmati rice and a pot of yogurt on the side.

AFGHAN-STYLE CHICKEN KORMA WITH DRIED SOUR PLUMS

Afghan-style chicken korma with dried sour plums image

Add dried sour plums to this Afghan-inspired curry to impart an interesting salty, sour flavour. If you can't get them, use dried sour cherries instead

Provided by Diana Henry

Categories     Dinner

Time 1h15m

Number Of Ingredients 16

chana dhal
dried sour plums, or 100g dried sour cherries
sunflower oil
8 chicken bone-in pieces (use thighs if you like), skin removed
onion, finely chopped
ginger, peeled and finely chopped
garlic cloves, finely chopped
ground turmeric
tomatoes, chopped
green chillies, halved, deseeded and finely sliced
Greek yogurt
chicken stock (or use water)
red chilli, finely sliced
coriander
lime wedges
flatbreads or cooked rice

Steps:

  • Put the chana dhal in a bowl, cover with water and leave to soak for 3 hrs. Meanwhile, put the dried plums or cherries in a second bowl, cover with warm water and leave to soak for 1 hr.
  • Heat the oil in a deep 30cm frying pan, and brown the chicken pieces in batches, seasoning as you go. Transfer the browned chicken to a bowl as you cook.
  • Add the onions to the pan and fry over a medium-low heat for 8-10 mins until soft and pale gold. This takes a bit of time. Add the ginger and garlic, and cook for another 3 mins, then add the turmeric. Stir everything together until the spices are fragrant.
  • Drain the chana dhal and tip into the pan along with the tomatoes and chillies. Continue to cook, stirring occasionally until the tomatoes have collapsed slightly. Stir in the yogurt, stock and some more seasoning. Return the chicken pieces and any resting juices to the pan, then drain the plums and mix these in. Bring everything to just under the boil (it's important that the mixture doesn't fully boil, or the yogurt will curdle), then turn the heat down to low. Cover and cook for about 15 mins, then remove the lid and cook for 15-20 mins more until the chicken is cooked through and the liquid has thickened.
  • Scatter over the sliced chillies and coriander, then serve with lemon or lime wedges, and flatbreads or rice.
