Curried Cabbage and Peas image

This is from one of my favourite cook books, The Vegetarian Epicure (book2), by Anna Thomas. It is a recipe I do often as its economical, low cal and very tasty. When I'm not on a diet I serve it with naan bread! However I normally just eat it on its own. Just entered it because I wanted to get the nutritional values for it!

1 medium head green cabbage
3 tablespoons vegetable oil (although I only use 2)
1 teaspoon crushed dried red chili
1/2 teaspoon ground ginger
1/2 teaspoon whole mustard seeds
1/2 teaspoon cumin
2 bay leaves
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
2 teaspoons salt
1 cup water
2 1/2 cups fresh peas (or frozen)
1 tablespoon butter
1 1/2 teaspoons garam masala
1 tablespoon lemon juice
1/2 teaspoon sugar
1 -2 tablespoon yogurt (optional)

Steps:

  • Shred the cabbage coarsley.
  • Measure out the crushed red chilis, ginger, mustard seeds, cumin, bay leaves, coriander, turmeric, and salt.
  • Heat the vegetable oil in a large skillet (I use a large saucepan) and stir in the prepared spices. Heat the spices gently for about 2 minutes stirring often.
  • Add the shredded cabbage and saute it stirring often, until it is all evenly coated with the spices and beginning to wilt, 10 to 15 minutes.
  • Add the water and the peas, cover, and cook over medium heat for 20 minutes.
  • Remove the cover, stir in the butter, garam masala, lemon juice, and sugar, and simmer uncovered, for another 10 to 15 minutes. There should be very little or no excess liquid at this point. ( although I like to leave some because I think it's delicious!).
  • Stir in a little yogurt if desired and serve hot with rice and raita.

This is an authentic Indian cabbage and pea curry. The recipe is designed to replicate the cabbage and peas dish at our local Indian restaurant. Hope you enjoy it! It's very spicy (i.e, it might make you cry), so you may want to tone it down a little.

3 tablespoons vegetable oil
1 teaspoon crushed dried red chili

1 tablespoon soy margarine or 1 tablespoon ghee (for authenticity)
1 1/2 teaspoons garam masala (warm Indian spices)
1 tablespoon lemon juice
1/2 teaspoon sugar

Steps:

  • Shred the cabbage coarsely.
  • Heat the oil in a large skillet and stir in the crushed red chilies, ginger, mustard seeds, cumin, bay leaves, coriander, turmeric, and salt.
  • Heat the spices gently for about 2 minutes, stirring often.
  • Add the shredded cabbage and saute it, until it is evenly coated with the spices, and beginning to wilt, 10 to 15 minutes.
  • Add the water and the peas.
  • Cover, and cook over medium heat for 20 minutes.
  • Remove the cover, stir in the margarine, garam masala, lemon juice, and sugar, and simmer- uncovered- for another 10 to 15 minutes.
  • There should be very little or no excess liquid at this point.
  • Serve hot with basmati rice.
  • Enjoy!

Chick peas, cultivated mainly in the northern regions of India, are often combined with a mixture of vegetables, creating interestind dishes. Simple and basic this dish has many variations. Spoon it over any hot, cooked grain such as rice, millet, or bulgur.

2 teaspoons vegetable oil
1 cup chopped onion
3 garlic cloves, finely chopped
2 1/2 teaspoons curry powder
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 small head cauliflower, cut into small flowerets
1/2 cup water
1 (16 ounce) can salt-free stewed tomatoes
1 (16 ounce) can chickpeas, rinsed and drained
1 cup peas

Steps:

  • Heat oil in a large nonstick skillet over medium heat. Add onion and garlic.
  • Sprinkle with curry powder, cumin, and cayeene. Cook 3 minutes, stirring frequently and adding small amounts of water as necessary, about a tablespoon at a time, to prevent sticking.
  • Add cauliflower and water to skillet. When water boils, reduce heat to medium-low, cover skillet and simmer 5 minutes or until cauliflower is tender crisp.
  • Add remaining ingredients, mixing well. Cover and simmer 15 minutes.

CHICKPEA, POTATO, AND CABBAGE CURRY

This is one of our favorite Madhur Jaffrey recipes from her wonderful book "From Curries to Kebabs: Recipes From the Indian Spice Trail". We like this with steamed basmati and parathas. My honey likes leftovers cold in his lunch. I use young green cabbage for this, and sometimes if I'm distracted I will use rinsed, canned chickpeas. I have used habanero and scotch bonnet peppers, and also red pepper flakes, it all depends on your personal taste, and what's available at the grocery. The preparation times do not include the chickpea soak/cook time.

1 cup dried garbanzo beans
1 cup chunked onion
4 garlic cloves
1/4 fresh habaneros or 1/4 fresh scotch bonnet pepper, to taste
2 tablespoons oil
1 tablespoon hot curry powder (to taste)
1 teaspoon dry roasted and ground cumin or 1 teaspoon just cumin powder
1 lb potato, peel and cube
1 -2 teaspoon salt (to taste)
4 1/2 cups cabbage, chunks

Steps:

  • Soak the chickpeas overnight in water to cover. Drain, recover with fresh water and bring to a boil. Reduce heat and simmer covered until very tender. Drain and reserve the cooking liquid. Add enough water to the reserved cooking liquid to equal 2 1/2 cups.
  • Put the onion, garlic, peppers and 1/4 cup of water in a blender and process until smooth. You can always add more pepper in the end, but you can't take it away.
  • Heat the oil over a medium high heat. Put in the onion paste and stir fry for 2-3 minutes.
  • Reduce the heat to medium low, then cover and continue cooking the paste. for another 2-3 minutes. Stir it frequently just to prevent sticking, and keep it covered between stirs.
  • Add the curry powder and the cumin, stir.
  • Add the chickpeas, potatoes, the lesser amount of salt, and the reserved chickpea cooking liquid.
  • Bring to a boil then reduce heat and cover. Cook gently, stirring occasionally until the potatoes are done to your tastes, 20 - 25 minutes.
  • Add in the cabbage and an additional 1/2 - 1 cup of hot water. Bring back to a simmer, cover and cook for an additional 10 - 15 minutes, or until the cabbage is just softened. Do not over cook the cabbage.
  • Taste and adjust the salt/ peppers to your tastes.
