This delicious Indonesian Beef curry is slow cooked to produce a wonderful spicy and tender beef rendang. Serve up with some coconut rice. Delish!

1 1/2 Onions
4 red chillies
3 large garlic cloves
1/2 tsp salt
1/2 tsp Tumeric
2 tsp cumin seeds
2 tsp coriander seeds
Vegetable Oil
1,3 kg chuck steak, cut large (say about 1 inch cubes)
1 sq. inch fresh ginger, thinly sliced into rounds
1 tsp sugar
2 400 ml cans coconut milk
40g desiccated coconut
2 x curry leaves
2 tbsp Rendang Curry spice paste
2 tbsp crispy onions
Chopped fresh coriander
2 tbsp Roasted Almonds

Steps:

  • Start by putting the onions, 2 of the chillies, garlic, salt, cumin, coriander and tumeric into a food processor. Zap it all into a paste.
  • Fry the paste for about 2-3 minutes and then put it into your slow cooker or Dutch oven.
  • Then take the steak pieces and fry them in the oil in batches until brown on all sides.
  • When the steak is browned add it to whichever cooking vessel you are using.
  • Then cover the steak and fried paste with the coconut milk. Then add the ginger, sugar, coconut, curry leaves and Rendang curry paste.
  • Stir well to mix all the ingredients together.
  • Then cook at 160C for about 3-4 hours, or until the meat has become tender and is beginning to fall apart.

4 cups coconut milk
1 cup water
3 tablespoons minced garlic
3 tablespoons minced shallot
1 1/2 tablespoons minced galangal
1 1/2 teaspoons minced fresh turmeric
1 teaspoon to 1 1/2 tablespoons minced chile (medium to very spicy)
2 teaspoons ground nutmeg
1 teaspoon ground toasted cardamom
1 teaspoon ground toasted coriander
1 teaspoon ground toasted cumin
1 teaspoon minced ginger
2 or 3 Indonesian bay leaves (see Cook's Note)
One 2-inch cinnamon stick
1 stalk lemongrass, minced
2 pounds beef chuck, cut into 2-inch cubes
1 tablespoon sugar
1 teaspoon kosher salt

Steps:

  • Put the coconut milk and water in a wok or large pan over medium to high flame and bring to a boil. Add the garlic, shallot, galangal, turmeric, chile, nutmeg, cardamom, coriander, cumin, ginger, bay leaves, cinnamon stick and lemongrass and bring to a boil again. Add the beef. After about 5 minutes, turn the flame down to a simmer. Add the sugar and salt. Cook, stirring every 5 minutes, until the coconut milk turns oily, separates and rises to the top (this is the sign that it's done), about 2 hours.

This flavorful dish is reputed to be a copy of the recipe served at the Ramayana Room, Hotel Indonesia, Djakarta during the 1960's. The jalapeno pepper is a western substitution. Feel free to use any hot green pepper in your dish.

2 stalks lemongrass, crushed and chopped
1 jalapeno pepper, deseeded and finely minced
3 garlic cloves, finely minced
2 tablespoons gingerroot, finely shredded
1 teaspoon coriander powder
1 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/4 teaspoon cinnamon
2 tablespoons sesame oil
2 lbs lean beef, cut into 1-inch cubes
1 small onion, coarsely chopped
1 green bell pepper, coarsely chopped
1 red bell pepper, coarsely chopped
1 carrot, thinly sliced
6 ounces coconut milk
2 tablespoons lime juice
1 tablespoon sugar

Steps:

  • In a small blender, combine lemongrass, jalapeno pepper, garlic, ginger, corriander, turmeric, cumin, and cinnamon. Puree to thoroughly blend into a spice paste.
  • Heat sesame oil in a large wok or frying pan and stir fry beef cubes until browned on all sides.
  • Add spice mixture and stir-fry until lightly browned and fragrant.
  • Add onion, green pepper, and carrot and continue stir frying until vegetables are just tender.
  • Add coconut milk, lime juice and sugar. Stir to blend.
  • Bring to a boil, reduce heat, and simmer for about 30 minutes, stirring occasionally, until meat is tender and sauce is thickened.
  • Serve over steamed rice.

INDONESIAN BEEF NOODLE CURRY

This is a simple way to cook a beef curry, the use of cabbage gives this dish a different slant. Not many ingredients so give it a go. You could omit the noodles and serve with boiled rice.

1 onion, finely sliced
2 garlic cloves, sliced
1 tablespoon oil
1 tablespoon curry powder
1 teaspoon ground coriander

1 cup sliced green beans
1/4 lb noodles
1 cup shredded cabbage

Steps:

  • Heat the oil and brown the onions and garlic.
  • Add the curry powder and coriander, cook for 2 minutes.
  • Add the meat and brown it on all sides, add the coconut milk, cover and simmer for 40 minutes.
  • Add the beans and noodles, cook for 10 mins,.
  • add the cabbage and cook for 5 minutes.

This is a very close representation to what I have had in restaurants. But beware because it can be quite spicy depending on the heat of the chiles you use. The beef should be almost falling apart. Serve with steamed white rice and Achar. From Secrets of Slow Cooking.

3 lbs beef stew meat, cut into 1-2-inch pieces (I use a chuck roast & cut it up)
8 red chilies, stemmed and coarsely chopped (you can take out the seeds to reduce the heat level)
1/2 small onion, chopped
2 inches fresh ginger, peeled and chopped
3 garlic cloves, chopped
1 stalk lemongrass, tough outer layers removed, tender insides finely sliced
1/3 cup tamarind paste (combined with 1/3 cup warm water)
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon chili powder (ground chiles, not the chili pepper spice blend)
1 (15 ounce) can light coconut milk
2 teaspoons sugar
salt

Steps:

  • Put the beef in the slow cooker.
  • In a blender or food processor combine the chilis, onion, ginger, garlic, lemongrass, tamarind paste, 1 cup warm water, and the spices.
  • Puree until smooth, then pour over the beef.
  • Stir in the coconut milk and cook, covered, on the low setting for 5-6 hours.
  • The beef will be tender and the sauce will be dark brown.
  • Ladle most of the sauce into a small saucepan and cook over medium high heat to reduce until slightly thickened, about 30 minutes.
  • Pour the sauce back in the cooker and cook on high for 30 minutes to 1 hour longer.
  • Stir in the sugar and season with salt to taste.
  • Serve over steamed rice.

Curried beef was a staple when I was growing up, therefore consider it one of my favourite 'comfort' foods. More often than not, my Mother used goat meat. If you get the chance, I highly recommend giving it a try. The curried meat was usually served with Rice 'n Peas (Recipe #373354 is a good version) or plain white rice. You could also substitute the beef with pork tenderloin. The amount of curry given is just a guideline. Each brand and type of curry has it's own unique qualities and intensity. If you do not have access to scotch bonnet peppers, habeneros or jalapenos will do. Freezes well for later use.

2 tablespoons vegetable oil
1 cup onion, chopped
2 teaspoons garlic, minced
1 scotch bonnet pepper, seeded and chopped
2 tablespoons curry powder
1 lb lean beef, cut into 1-inch pieces
1 cup beef broth (or more)
2 sprigs thyme
1 teaspoon salt
1 teaspoon black pepper
2 -3 tablespoons flour (optional)
1/2 cup cold water (optional)

Steps:

  • Heat oil in a large saucepan, over medium heat.
  • Add onions, garlic, scotch bonnet pepper and curry powder. Stir until onions begin to soften.
  • Add beef, and stir until meat is browned and well coated with the spice mixture.
  • Add broth, thyme, salt and pepper. Bring to a boil.
  • Reduce heat, then simmer, covered, for 1 to 1-1/2 hours, or until the meat is tender. Meat should be almost covered with liquid at all times. Add more broth if necessary.
  • If you like a thicker gravy, mix together the cold water and flour. Bring the curry to a boil, and stir whilst adding the water/flour mix. Simmer until thickened.

1 1/2 tablespoons canola oil
1/2 cup thinly sliced shallot

2 teaspoons ground coriander
3/4 teaspoon salt
1 1/2 teaspoons ground cumin

1 (3 inch) cinnamon sticks
1 cup organic vegetable broth (such as Swanson Certified Organic)
1 tablespoon fresh lime juice
1 1/4 cups water
1 cup uncooked basmati rice
1 cup light coconut milk
1/4 teaspoon salt

Steps:

  • To prepare curry, heat a large skillet over medium-high heat. Coat the pan with cooking spray. Place half of the beef in skillet; cook 1 minute on each side or until browned.
  • Remove the beef from pan. Keep warm. Repeat process with the remaining beef.
  • Lower heat to medium; add oil to pan. Add shallots, ginger, garlic, and chiles; cook 4 minutes or until tender, stirring occasionally.
  • Stir in coriander and next 6 ingredients (through cinnamon); cook 30 seconds, stirring constantly.
  • Return beef to pan. Add broth; bring to a simmer. Cover, reduce heat, and simmer 35 minutes or until beef is tender.
  • Uncover and cook 10 minutes or until sauce thickens. Discard cinnamon stick; stir in juice.
  • To prepare rice, bring 1 1/4 cups water and remaining ingredients to a boil.
  • Cover, reduce heat, and simmer 18 minutes or until liquid is absorbed. Remove from heat. Let stand, covered, 5 minutes.
  • Fluff with a fork. Place 2/3 cup rice onto each of 6 plates; top each serving with 1/2 cup curry.

From a recipe by Dunston Harris. Remember that habaneros are extremely hot, so handle carefully. Also, if you like it milder, you can substitute another type of chillie or even bell pepper (if you don't care for much spice at all). While different chillies do have different flavors, the heat level takes precedence and you should only cook with chillies of your personal choice (in any spicy recipe). Also, use the most tender beef you can get. I know the economy is poor right now, so if you use an economical cut of beef, you can extend the cooking time to get it tender. just watch your liquid levels, since they will disappear and you don't want to burn it.
