This chutney is a beautiful colour...especially when you use the deep deep orange apricots. I just guessed at the amount of jars and it is not stated in the recipe.

2 1/2 lbs apricots, pitted and quartered
1 lb brown onion, peeled and diced
2 cups sultana raisins
1 lb brown sugar
2 cups cider vinegar
1 teaspoon chili powder
2 teaspoons mustard seeds
1 1/4 teaspoons salt
1 teaspoon turmeric
3/4 teaspoon cinnamon

Steps:

  • Mix together all the ingredients in a large saucepan.
  • Bring to a boil. Reduce heat and simmer for about 1 hour, uncovered, or until juice has thickened.
  • Pour into warm sterilized jars and seal.
  • May be eaten immediately but the flavour improves after a few days.

1kg apricot
2 red onions
5cm piece ginger
2 apples
2 red chillies
1 tsp Chinese five-spice powder
1 tsp paprika
1 tsp coarsely crushed black peppercorn
1 tsp salt
400ml cider vinegar
450g granulated sugar

Steps:

  • Halve and stone the apricots, then chop them into small pieces. Peel and coarsely chop the onions, ginger and apples, and put in a food processor. Roughly chop the chillies and add to the food processor along with the seeds. Blitz until finely chopped, then tip into a large pan and add the spices, salt and vinegar. Bring to the boil, then turn down and simmer for 10 mins, stirring occasionally.
  • Add the apricots and return to the boil. Simmer for a further 10 mins until the apricots are starting to soften, then tip in the sugar and stir until dissolved. Increase the heat and boil for 15-20 mins, stirring occasionally, until the mixture is thick and leaves a brief trail when a wooden spoon is dragged across the base of the pan.
  • Pot into warm clean jars and label. Store for up to a year in a cool dry place.

2 fully ripe papayas (seeded and finely chopped)
1 cup white vinegar
1/4 cup water
1/4 cup brown sugar
1 tablespoon mustard seeds (Crushed)
3/4 teaspoon salt
1 teaspoon garam masala
1 tablespoon curry powder
1 medium onion, finely chopped

Steps:

  • Put a heavy bottomed pan over medium heat and add vinegar,water, sugar and mustard and bring to boil.
  • Cook until liquid becomes syrupy.
  • Add papayas and curry powder, salt, garam masala.
  • Cook 2 minutes more, stirring constantly.
  • Remove from heat and mix in onion.
  • Cool to the room temperature.
  • Pour in jar and refrigerate for 5 days before using.

1 red onion finely chopped (can use vegetable chopper to easily chopped the vegetables)
¼ cup ginger (crushed, skinless)
½ cup white raw sugar (granulated)
¼ cup white wine vinegar
1 tsp Kashmiri hot chili powder
1 tsp garam masala
1 tsp cumin powder
salt
1 cup water

Steps:

  • Dump all the ingredients and cook covered for 45-60 minutes. Cook at the lowest flame. Cool down to room temperature and seal in air tight container. Stays fresh for a month.
  • I served mine with salmon cakes.

1 tablespoon salad oil
1 large onion (chopped)
1 tablespoon grated ginger
1 tablespoon mustard seeds
1 teaspoon curry powder
1/2 teaspoon cayenne pepper
2 cups coarsely chopped dried apricots
2/3 cup golden raisin
1/2 cup vinegar
1/3 cup sugar
1/3 cup chopped cilantro

Steps:

  • In a 3 quart, non-stick frying pan, combine oil, onion, and ginger.
  • Add mustard seed, curry powder, and cayenne pepper to pan and stir for 4 minutes before adding the remaining ingredients.
  • Do not yet add cilantro!
  • Let cook for 7 minutes, taste a sample, and add salt if desired while stirring in the cilantro.
  • Remove from heat and let cool.
  • Package and place in refrigerator.
  • Serve with cream cheese.
  • on bread slices.
  • on crackers, or with Indian curries.

425g ripe tomatoes, peeled, deseeded and chopped
425g caster sugar
140g cooking apple, peeled, cored and chopped
140g onion, finely chopped
140g dried apricot, chopped
3tbsp chopped fresh root ginger
2tsp salt
450ml white wine vinegar
1 ¼kg pear, peeled, cored and cut into bite-size pieces

Steps:

  • Combine all the ingredients, except the pears, in a large, thick-bottomed saucepan and bring to the boil. Simmer uncovered over a very low heat, stirring occasionally with a wooden spoon. Continue to cook for about 1 hr, giving it a stir every 10 mins, until the mixture is syrupy. Add the chopped pears and cook for another 30 mins, stirring occasionally. Leave to cool completely, then store in sterilised, clean jars.

2 cups all-purpose flour
1/4 teaspoon kosher salt
1/4 cup olive oil
For filling
2 tablespoons vegetable oil
1/2 medium onion, finely diced
2 large cloves garlic, minced
1 tablespoon fresh ginger, grated (from1-inch knob)
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 pound lamb stew meat, such as shoulder or boneless leg, cubed
2 tablespoons curry powder
1/2 teaspoon ground cumin
1/4 cup dry white wine
1/2 cup chicken stock or low-sodium chicken broth
1 large potato, peeled and cut into 1-inch pieces
1/4 cup fresh or frozen peas
1/4 cup fresh cilantro, chopped
To fry and serve
8 to 10 cups vegetable oil
Accompaniment: Apricot Chutney

Steps:

  • Make dough
  • In large bowl, whisk together flour and 1/4 teaspoon salt. Add olive oil and, using fingertips, blend until mixture resembles coarse meal. Add 1/4 cup water and stir with fork just until mixture comes together.
  • Turn dough out onto lightly floured surface and knead until smooth and elastic, about 10 minutes. Transfer to medium bowl, cover with towel, and set aside to rest for at least 30 minutes.
  • Make filling
  • In medium saucepan over moderately high heat, heat oil. Add onion, garlic, ginger, 1/4 teaspoon salt, and 1/4 teaspoon pepper and sauté until softened, about 4 minutes. Add lamb and sauté until browned, about 8 minutes.
  • Stir in curry powder and cumin and sauté 2 minutes. Stir in wine and cook, stirring frequently, until liquid is almost completely absorbed, about 2 minutes. Stir in chicken stock, reduce heat to low, cover, and simmer until lamb is tender, about 30 minutes. (Lamb can be cooked ahead and refrigerated, covered, up to 24 hours.)
  • While lamb is cooking, in medium saucepan over moderately high heat, combine potatoes and water to cover by 1 inch. Bring to boil, then reduce heat to moderately low and simmer, uncovered, until tender, about 15 minutes. Drain in colander, then transfer to large bowl and, using fork, gently mash. Stir in remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • In small saucepan over moderately high heat, boil peas in salted water until tender, about 1 minute for frozen and 5 minutes for fresh. Drain, rinse under cold running water, and drain again. Transfer to bowl with potatoes.
  • When lamb is tender, transfer to food processor and pulse until finely chopped but not puréed. Transfer to bowl with potatoes and peas. Add cilantro and fold mixture to combine. (Filling can be made ahead and refrigerated, covered, up to 8 hours.)
  • Form and fry samosas
  • Divide dough into 12 equal pieces and roll each piece into ball.
  • On floured surface, using rolling pin, roll out 1 ball to 6-inch-diameter circle. Spoon about 2 tablespoons filling into center. Moisten finger with cold water and run around inside edge of dough circle.
  • Imagining circle as face of clock, grasp edge at 2 o'clock and pull up over center of filling. Work around edge, pulling up at 4, 6, 8, 10, and 12 o'clock positions and crimping edges where they come together to seal, to form bundle resembling a truncated pyramid. Transfer to large baking sheet.
  • Repeat to form remaining samosas. (Samosas can be formed ahead and refrigerated on baking sheet, loosely covered with plastic wrap, up to 2 hours.)
  • In heavy 6-quart pot over moderately high heat, heat 4 inches of oil until thermometer registers 350°F. Working in batches of 3 and returning oil to 350°F between batches, fry samosas until golden brown, 4 to 5 minutes. Transfer to paper towel-lined platter to drain.
  • Serve immediately with apricot chutney.

2 tablespoons red wine vinegar
1/4 cup sugar
2 tablespoons honey
1/2 small onion, minced
1 tablespoon fresh ginger, grated (from 1-inch knob)
1/8 teaspoon ground cloves
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
6 ounces dried apricots (about 20 to 25 apricots), roughly chopped

Steps:

  • In small saucepan over low heat, stir together 3/4 cup water, distilled and red wine vinegars, sugar, honey, onion, ginger, cloves, salt, and pepper. Simmer, uncovered, until onions are very soft, about 5 minutes. Add apricots and simmer, uncovered, until apricots are very soft and liquid is syrupy, about 40 minutes. Cool to room temperature before serving. (Chutney can be made ahead and refrigerated, covered, up to 2 days.)

8 oz cream cheese ((250g) at room temperature)
4 oz sharp cheddar cheese (shredded or MacLaren's Imperial Sharp Cold Pack Cheddar Cheese)
1/2 tsp mild curry powder (or *see Note 3 below)
3/4 cup mango chutney (or *see Note 2 below)
1/4 green onion (green part only, diced)
1/4 cup currants and/or raisins
1/4 cup dried cranberries
1/4 cup pecans and/or walnuts (chopped)
Shredded coconut (optional, to taste)

Steps:

  • In a bowl with an electric mixer, or the bowl of a stand mixer fitted with the paddle attachment, beat together the cream cheese and cheddar cheese until well combined and fluffy. Add the curry powder and mix in well.
  • Spoon cheese mixture into a 6-inch springform pan or a similar sized dish or bowl. (*You can use any dish that will make the mixture about 1-inch thick). Alternately, you can shape into a 6-inch disc by hand. Cover with plastic wrap and refrigerate at least 2 hours or up to 24 hours, until chilled and firm.
  • Meanwhile, make the topping by combining the topping ingredients and stirring together the ingredients. (*You can use any or all of the topping ingredients you like or have on hand. If you are skipping some, add a bit more of the ones you are using, until you have a thick topping mixture). You can cover and refrigerate separately until ready to serve or use right away.
  • To serve, remove from springform pan, if using. Spoon topping overtop and serve with crackers, apple slices or Naan chips or crisps.
