- Crust: Combine wafer crumbs, sugar and melted butter. Press into a 9x13" pan and bake at 350 degrees for 5 minutes. Allow to cool. Filling: Put 1/2 cup cold water into a small bowl. Sprinkle both packets of gelatin powder over top and leave for one minute. Add 1/2 cup boiling water and stir until the gelatin is dissolved. Set aside. Place yogurt and sour cream into a large bowl. Add gelatin and whisk all together until combined. Beat whipping cream with powdered sugar and vanilla until stiff. Fold into yogurt mixture with the blueberries. Pour over crust. Refrigerate until set. To serve, slice into squares and garnish each square with a sprinkle of graham crumbs and a few blueberries. You can also garnish with edible flowers, as in the photo. Enjoy! - 1. Soften gelatin in 1/4 cup of cold water and set aside. Place 1 cup of the blueberries in a saucepan with 1/2 c. water. Cover and cook until the skins burst, 3 to 5 minutes. Remove from heat and strain; there should be 3/4 c. Stir in softened gelatin, sugar, lemon juice and remaining 1/2 cup of water.Pour into sherbet dessert glasses. Chill until mixture begins to thicken. Beat egg white with electric beater until fluffy. Fold in remaining whole blueberries. Divide up into the sherbet glasses; top with whipped cream,a blueberry and a mint leaf on top, if desired.

This is a recipe I discovered about 25 years ago when grape gelatin was hard to find! It's a terrific side dish or a delicious dessert. It's very rich in flavor and can be made ahead of time. Also good with cherry gelatin and cherry pie filling.

- Mix graham cracker crumbs, melted butter, and 1/4 cup white sugar in a bowl. Measure 1/4 cup crust mixture and set aside. Press remaining crust mixture into a 10x6x2-inch pan.
- Combine water, 1/2 cup white sugar, and gelatin in a saucepan over medium-low heat; cook and stir until gelatin and sugar dissolve, about 5 minutes.
- Stir sour cream and yogurt together in a bowl. Gradually stir gelatin mixture into sour cream mixture; stir in vanilla extract. Refrigerate until partially set, about 30 minutes.
