1 tablespoon kosher salt
1 tablespoon coriander seeds, cracked
1 tablespoon ground chipotle chile powder
1/2 tablespoon ground cumin
1/2 tablespoon smoked paprika
3/4 teaspoon mustard powder
6 10- to 12-ounce double-cut pork chops
3 tablespoons olive oil

Steps:

  • Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
  • In a small bowl, combine the salt, coriander, chipotle powder, cumin, paprika and mustard powder. Pat the chops dry with paper towels and season both sides with the spice mixture. Rub the exterior of the seasoned chops with the olive oil.
  • Sear the chops over the hot side of the grill until the exterior forms a nice crust, about 4 minutes per side. Move the pork to the low side of the grill, cover the grill and cook until the pork reaches an internal temperature of 140 degrees F, 10 to 12 minutes. Transfer the pork to a cutting board, let it rest for 5 to 10 minutes and then serve.

Using crushed cumin instead of ground will give the chops a bit of fresh texture, but if you don't have cumin seeds, feel free to substitute.

6 center cut, boneless pork chops
1/2 c vegetable oil
1/4 c soy sauce
1/4 c Worcestershire sauce
1 tsp minced garlic
1 tsp cumin
2 Tbsp brown sugar
salt and pepper, to taste

Steps:

  • 1. Place the pork chops in a casserole dish laying flat.
  • 2. Next mix together the remaining ingredients in a bowl.
  • 3. Puncture the pork chops with a fork all over. Pour the marinade on top of the chops, then refrigerate 4-6 hours - flipping them over once while marinating. Remove from the fridge the last hour before grilling.
  • 4. Grill on med-low for about 5 min on each side, or until cooked through. *I always spoon on the marinade too while they are cooking* Discard marinade when finished cooking.

Steps:

  • Puree the garlic, onion, sour orange juice, oregano, cumin, salt and pepper in a food processor or blender, place 1/2 of the mixture into a large sealable bag with the pork chops and marinate in the fridge overnight.
  • Heat the grill or a grill pan to medium-high heat, add the pork chops and cook until lightly golden brown on one side, about 3-5 minutes, flip them and cook until the pork chops are done, about 3 minutes.
  • Meanwhile, heat the oil in a pan over medium heat, add the onions and cook until just tender, about 5 minutes, add the remaining mojo sauce, bring to a simmer and remove from heat.
  • Serve the grilled pork chops covered in the mojo and onion sauce and enjoy!

3 ripe but firm peaches, unpeeled, pitted and cut into 1/4-inch dice
1/4 cup red onion, finely diced (about 1/2 small onion)
2 tablespoons canned chipotle chiles in adobo, minced
1/4 cup fresh lime juice
1/4 cup fresh cilantro, chopped
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
For pork chops
1/4 cup whole cumin seeds
6 pork rib chops, each about 1 1/2 inches thick (ask your butcher to cut them for you)
3 tablespoons olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly coarse-ground black pepper

Steps:

  • Make salsa
  • In medium bowl, toss together all ingredients. Transfer to serving dish and set aside.
  • Prepare grill
  • If using charcoal grill, open bottom vents. Light charcoal. Leaving about 1/4 of grill free of charcoal, bank lit charcoal across rest of grill so coals are about 3 times higher on opposite side.
  • If using gas grill, open hood, light all burners, and set on high. Close hood and preheat 10 minutes.
  • While grill is heating, coat chops
  • Using electric spice grinder, pulse cumin seeds 2 to 3 times to crack. (Alternatively, place seeds on cutting board and crush lightly with small sauté pan, using gentle rocking motion.) Rub chops with oil, sprinkle with salt and pepper, and coat with cumin seeds, pressing firmly to adhere.
  • To cook chops using charcoal grill
  • Charcoal fire is medium-hot when you can hold your hand 5 inches above rack over area where coals are piled highest for 3 to 4 seconds. Sear chops on lightly oiled grill rack directly over hottest part of coals, turning over once, until well browned, about 3 to 4 minutes per side. Move chops to coolest part of grill, then cover with inverted roasting pan and grill, turning over once, until thermometer inserted diagonally into center of each chop (avoid bone) registers 145°F, about 12 minutes total. Transfer chops to platter and let stand, loosely covered with foil, 5 minutes (temperature will rise to 150°F). Serve, passing salsa on side.
  • To cook chops using gas grill
  • When grill is preheated, sear chops on lightly oiled grill rack, turning over once, until well browned, about 3 to 4 minutes per side. Turn off 1 burner (middle burner if there are 3) and put chops above shut-off burner. Reduce heat on remaining burner(s) to moderate and grill pork, covered with lid, until thermometer inserted diagonally into center of each chop (avoid bone) registers 145°F, about 12 minutes total. Transfer chops to platter and let stand, loosely covered with foil, 5 minutes (temperature will rise to 150°F). Serve, passing salsa on side.

zest and juice 1 lemon
1 tsp cumin seed , lightly crushed
2 pork chops (about 450g)
140g Chantenay or baby carrot
½ tsp ground cinnamon
natural yogurt , to serve

Steps:

  • In a large bowl, whisk together half the oil, half the honey, the lemon zest and juice, and the cumin seeds. Add the pork chops and ensure they are well coated. Heat a large frying pan and add the chops along with the glaze. Cook for 5-7 mins on each side, basting with the glaze every so often. Remove from the pan, wrap in foil and leave to rest.
  • Meanwhile, boil the carrots until just tender, about 10 mins. Mix together the remaining oil and honey, the cinnamon and some seasoning. Add this to the pan you've just cooked the pork in, along with the carrots. Toss to coat, heat through, then serve the carrots alongside the chops with a dollop of natural yogurt.

1/2 cup tomato paste
2 tablespoons dried ancho chile powder
1/2 tablespoon adobo seasoning (seasoning salt ok)
1/2 teaspoon ground cumin
1 teaspoon garlic powder
1/2-2 teaspoon cayenne pepper (amount to taste)
1/4 teaspoon ground cloves
1 tablespoon fresh lime juice (Mexican limes preferred)
2 tablespoons oil (whatever type you use)

Steps:

  • Mix together ingredients for seasoning paste in a small bowl.

5 teaspoons cider vinegar

  • Prepare grill or heat broiler.

1 sprig fresh rosemary

Steps:

  • In a small bowl, mix together roasted garlic paste, rosemary and olive oil. Place pork chops in a baking dish. Spread mixture over chops. Marinate 30 min. or overnight.
  • Crush or roughly chop cumin seeds and peppercorns. Place in a small saucepan and toast over medium-low heat until fragrant, 1 to 2 min. Add honey, sprig of rosemary and bay leaf. Heat just until small bubbles appear in the honey and the mixture is warmed through. Remove glaze from heat.
  • Preheat barbecue to medium-high heat. Season pork chops with salt and grill 2 min. per side. Lower heat to medium and, basting continually with the glaze, cook until done, 8 to 10 min.
