CHINESE SWEET BUN DOUGH
After several experiments, I created this cross between a bread and pastry dough that works perfectly for making filled buns. I generally fill with a BBQ filling, but you can be creative.

Steps:
- Whisk the sugar and milk together in a large mixing bowl until the sugar is dissolved. Stir in the yeast, and let stand until a frothy layer forms on the milk, about 10 minutes. Stir in the flour, most of the beaten eggs (reserve about 1 tablespoon of egg in a small bowl for later), vegetable oil, and salt, mixing well until thoroughly combined.
- Turn the dough out onto a well-floured work surface, and knead until smooth and elastic, about 10 minutes. The dough should be slightly sticky. Place the dough into a large oiled bowl, cover with a damp cloth or plastic wrap, place the bowl in a warm spot, and let rise until doubled, 2 to 3 hours.
- Line a baking sheet with parchment paper.
- Remove the dough from the bowl, and knead it briefly to punch down, about 1 minute. Roll the dough out into a rope, and cut it into 12 equal-sized pieces. Roll each piece into a ball, and use your fingers to flatten each ball into a disc about 5 to 6 inches in diameter.
- Place about 2 tablespoons of your favorite bun filling in the center of the dough circle, and bring the edges of the dough up over the filling. Pinch and twist the top together to seal in the filling. Make sure there are no open spots. Place each filled bun seam-side down on the parchment paper while you finish making the rest of the buns. Cover the filled buns with plastic wrap, and let them rise for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Beat the 1 tablespoon of reserved beaten egg with the water to make an egg wash, and brush the top of each bun with the egg mixture. Sprinkle each bun with a few sesame seeds, and bake in the preheated oven until the tops are browned and shiny, turning the baking sheet around halfway through baking, for 20 to 30 minutes. Serve warm.

Steps:
- Mix flours, milk powder, yeast and sugar in a big bowl.
- Add the egg and cold water and mix to form a dough. Add in the butter and salt and knead till a smooth dough forms. This takes a while.
- At first the dough will be greasy and seem as if there is too much butter in it. But as you knead and knead and knead, it will eventually get to the point you want it to be.
- Cover with clingwrap and let rise for about 1 hour or till doubled in size.
- Preheat oven to 380 farenheit.
- Divide dough into portions of 50 or 60 gm each. Shape into balls and leave it to rest for abt 10 minutes Roll out dough and wrap with desired fillings. Shape as required and let it proof on lined or greased baking tray for another 50-60 mins or until dough is double in size.
- Brush dough with egg wash, or milk, if you want it to be less brown, and bake till golden brown and cooked.
- Immediately brush with melted butter after taking it out of the oven and cover with a tea cloth to give it a soft crust.

SWEET POTATO MANTOU (CHINESE STEAMED BUNS)
Mantou are filling Chinese buns, served for breakfast, or as part of a meal. Sweet potato mantou have more flavor and nutrition than plain mantou. They are colorful, and are easily formed into attractive shapes. This recipe should also work well with carrots or squash.

Steps:
- Peel and cook sweet potato.
- Puree cooked sweet potato in blender with water or milk and sugar.
- Pour sweet potato liquid into a bowl, sprinkle with yeast, and allow to dissolve.
- Sift dry ingredients together.
- Stir flour mixture into yeast mixture. Knead in 1 additional cup of flour as needed.
- Melt butter or lard and knead into dough.
- Let rise until double (60-90 min).
- Roll dough into flat rectangle; starting from front edge, roll dough into log. Cut log into 16 equal segments. - Place buns in steamer basket, on cheesecloth, about 1 inch apart.
- Steam vigorously for 15-20 minutes.
- (The buns can be cooked in the steamer basket of your rice cooker while the rice is cooking. They don't all fit at one time, so I freeze the the rest of the shaped, raw, buns on a flat baking sheet, then transfer to a freezer bag. I can pull them out a few at time to thaw and steam as needed.).
