SIMPLE CUCUMBER SOUP
The most simple yet one of the best soups I had so far. A simplified version of my mum's cucumber soup. No need for salt, pepper, or seasonings, just a good vegetable broth. I like to have it with a good slice of toasted bread and some good cheese.

Steps:
- Melt butter with the oil in a large saucepan over medium-high heat. Cook and stir onion and garlic in the butter mixture until tender, 3 to 5 minutes. Add cucumber and zucchini slices; cook and stir until softened, 2 to 3 minutes. Pour vegetable broth over the mixture; bring to a boil, reduce heat to medium-low, and let simmer until the vegetables are cooked through, 20 to 25 minutes. Remove from heat and cool a few minutes.
- Pour soup into a blender no more than half full. Cover and hold lid in place with a towel; pulse a few times before leaving on to blend. Puree in batches until smooth.

COOL CUCUMBER SOUP

- In a blender, combine the yogurt, cucumber, scallion and dill. Pulse until pureed. Season, to taste, with salt and pepper. Ladle into individual bowls. Top each serving with 2 tablespoons of diced tomato, drizzle with 1/2 teaspoon of olive oil and garnish with a dill sprig.

CUCUMBER SEAWEED SOUP
The only thing this has in common with the familiar European-style cucumber soups is the cucumber. Otherwise the ingredients-from the dashi to the soy sauce-are strictly Asian. This sublimely refreshing soup can be served hot or cold. When chilled, it's especially good with a few pieces of shrimp added to each bowl.

- Put the dashi in a medium saucepan and bring almost to a boil, then lower the heat so the mixture is steaming but not bubbling. Add the tofu and heat through, about 5 minutes. Stir in the soy sauce, mirin, salt, and pepper; taste and adjust the seasoning.
- Toast the nori by either holding it over a flame for a few seconds per side or drying it in a 300°F oven for about 10 minutes. Crumble the nori and divide it and the cucumber slices among 4 soup bowls. Ladle the hot soup over them and serve immediately. Alternatively, refrigerate the soup and serve it cold, garnished with the cucumber and nori.
CUCUMBER SOUP
The refreshing cucumber soup is served cold, so it will go down well on a summer's day. Ladle it into bowls for a smaller gathering, or pour into small cups for an amuse-bouche.

- Finely chop a third of one of the cucumbers and set aside for when you're ready to serve later. Roughly chop the remaining cucumbers and tip into a blender or food processor along with the yogurt and the lime juice from one lime. Add the tarragon, most of the mint leaves and most of the chives. Blitz until the mixture is smooth. Taste the soup and add some or all of the lime juice from the second lime if you want more acidity.
- Pour the soup into bowls or small cups, scatter over the finely chopped cucumber, remaining mint leaves and the rest of the chives. Drizzle with a little rapeseed oil just before serving.

- Soak the dried seaweed cuts in cold water for 10-15 minutes. Drain and squeeze out the excess water. Cut to smaller size if needed.
- Place the seaweed in a large bowl, add the soy sauce for soup, sugar, vinegar, garlic, chili flakes, and sesame seeds; Mix well.
- Add the cucumber and green onion to the seaweed mixture. Pour the sea kelp stock and mix well. Taste and adjust seasoning for your liking.

- Prepare the dried seaweed by soaking for 10 to 20 minutes and rinsing well. (See my miyeok guk recipe for more.) Boil water in a small pot, and add 1 teaspoon of salt. Blanch the soaked seaweed briefly, 20 to 30 seconds. Drain and rinse with cold water. Drain again, squeeze out excess water, and cut into bite size pieces.
- In a medium size bowl, gently toss the vegetables with the seasoning ingredients. Set aside for about 10 minutes. You can make ahead up to this point several hours or a day before, if desired.
- Mix in 4 cups of cold water and season with salt. Start with a half teaspoon of salt, taste and add more if necessary. Refrigerate to chill. Serve in chilled bowls with some ice cubes.
