This sugar cookie dates back to a Swedish woman born in 1877! Her daughter, Esther Davis, shared the recipe with me and she came up with all the exact measurements, since the original cookies were mixed by feel and taste. - Preheat oven to 350°. Cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. SOFT CUT-OUT SUGAR COOKIES
With crisp edges, thick centers, and room for lots of decorating icing, I know you'll love these soft sugar cookies as much as I do. The number of cookies this recipe yields depends on the size of the cookie cutter you use. If you'd like to make dozens of cookies for a large crowd, double the recipe.

- Whisk the flour, baking powder, and salt together in a medium bowl. Set aside.
- In a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter and sugar together on high speed until completely smooth and creamy, about 2 minutes. Add the egg, vanilla, and almond extract (if using) and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine.
- Add the dry ingredients to the wet ingredients and mix on low until combined. Dough will be relatively soft. If the dough seems too soft and sticky for rolling, add 1 more Tablespoon of flour.
- Divide the dough into 2 equal parts. Place each portion onto a piece of lightly floured parchment paper or a lightly floured silicone baking mat. With a lightly floured rolling pin, roll the dough out to about 1/4-inch thickness. Use more flour if the dough seems too sticky. The rolled-out dough can be any shape, as long as it is evenly 1/4-inch thick.
- Lightly dust one of the rolled-out doughs with flour. Place a piece of parchment on top. (This prevents sticking.) Place the 2nd rolled-out dough on top. Cover with plastic wrap or aluminum foil, then refrigerate for at least 1-2 hours and up to 2 days.
- Once chilled, preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. Carefully remove the top dough piece from the refrigerator. If it's sticking to the bottom, run your hand under it to help remove it- see me do this in the video above. Using a cookie cutter, cut the dough into shapes. Re-roll the remaining dough and continue cutting until all is used. Repeat with 2nd piece of dough. (Note: It doesn't seem like a lot of dough, but you get a lot of cookies from the dough scraps you re-roll.)
- Arrange cookies on baking sheets 3 inches apart. Bake for 11-12 minutes or until lightly browned around the edges. If your oven has hot spots, rotate the baking sheet halfway through bake time. Allow cookies to cool on the baking sheet for 5 minutes then transfer to a wire rack to cool completely before decorating.
- Decorate the cooled cookies with royal icing or easy glaze icing. Feel free to tint either icing with gel food coloring. See post above for recommended decorating tools. No need to cover the decorated cookies as you wait for the icing to set. If it's helpful, decorate the cookies directly on a baking sheet so you can stick the entire baking sheet in the refrigerator to help speed up the icing setting.
- Enjoy cookies right away or wait until the icing sets to serve them. Once the icing has set, these cookies are great for gifting or for sending. Plain or decorated cookies stay soft for about 5 days when covered tightly at room temperature. For longer storage, cover and refrigerate for up to 10 days.

- In a large bowl, cream together the butter and the sugar until pale and fluffy.
- Next, add the eggs and vanilla and mix until just combined.
- In a separate bowl, stir together the flour, baking powder, and salt.
- Add the dry ingredients into the creamed butter and mix until a dough is formed.
- Lay some cling wrap on your counter and spoon your dough on top and form a log. Roll up the log like a sausage and chill the dough for at least 1 hour or pop in the freezer and freeze for up to 8 weeks.
- Once your dough is chilled, preheat your oven to 350°F (180°C). Line 2 cookie sheets with parchment paper and set aside.
- Slice the cookies around ¼ inch thick. Place the cookies about 2 inches apart on the prepared cookie sheet.
- Bake for roughly 10-12 minutes or until slightly golden. Remove from the oven and allow to cool completely on a wire rack.
- While the cookies are baking make the icing: Using a whisk, combine the powdered sugar, butter, milk, and vanilla until you have a smooth thick icing. Color the icing with a few drops of food coloring then mix until even in color.
- Using a small offset spatula or the back of a small spoon frost the cookies then scatter over sprinkles. Allow setting for about 30 minutes.
- Once set, cover and store the cookies in an airtight container for up to 3 days.

- Preheat oven to 350°.
- Cream together the butter and sugar in the bowl of a stand mixer for a full 3 minutes.
- Scrape sides and add in vanilla and egg. Mix until combined.
- Add flour and baking powder to the bowl. Mix slowly at first gradually getting faster until the dough comes together. The texture should be like Playdoh. Add a little flour or water if needed to get it to a soft, pliable consistency.
- Turn out onto a floured surface. Use a rolling pin and roll until about 1/4 inch thick. (The cookies will not rise while baking, they will not get thinner while baking. Roll out to your desired FINISHED thickness.)

- Preheat oven to 400f degrees. Line a large baking sheet with parchment paper. In a bowl, beat together eggs, oil, vanilla extract, sugar and Stevia In The Raw®.

- Whisk the egg and vanilla in a small bowl and set aside.
- With a hand held mixer in a large bowl, cream the butter until fluffy. Scrape down the sides of the bowl with a rubber spatula, add both sugars, and continue beating until light, 2 to 3 minutes. Scrape the sides of the bowl again, if needed, then add the egg mixture, beating for about 1 minute. Sift the salt with the flour. Reduce the mixer to a low speed and then add the flour mixture, mixing just until blended.
- Turn the dough out of the bowl. Divide the dough in half and place each half between 2 pieces of lightly floured parchment or waxed paper. Use a rolling pin to flatten the dough into a disk about 1/4-inch thick. Slide the dough/parchment sheet onto a flat cookie sheet, or on the back of a rimmed baking sheet. Refrigerate until firm, about 2 hours or overnight.
- Evenly space the racks in the oven and preheat to 325 degrees F. Place 1 disk of the cookie dough on a clean work surface and peel off the top sheet of paper. Cut cookies with a 1 1/2-inch round or a decorative shaped cookie cutter directly on the parchment. Use a spatula to transfer the cookies to a parchment-lined or non-stick baking sheet, spacing them about 1-inch apart. Repeat with other sheet of dough. Any excess dough can be re-rolled, refrigerated, and cut.
- Bake until the edges of the cookies are a light golden, about 15 minutes. Transfer cookies to a rack to cool.
- For decorating: Whisk the confectioners' sugar with just enough milk to make a thick icing. Transfer icing to a small plastic bag. - Walnut Orange Variation: Add 3/4 teaspoon grated zest of orange with the sugar, and 2/3 cup finely chopped walnuts with the flour.
- Pecan-Cinnamon Variation: Mix 1 teaspoon ground cinnamon with the flour, and add 2/3 cup finely chopped pecans with the flour. Sprinkle the tops of the cookies before baking with a mixture of 2 tablespoons granulated sugar and 2 teaspoons ground cinnamon.
- Almond Variation: Reduce the vanilla extract to 1 teaspoon and add 1/2 teaspoon pure almond extract. Add 3/4 cup chopped toasted sliced almonds to the dough with the flour. If desired, for decoration, brush the tops of the unbaked cookies with some egg white and press a few un-toasted almond slices onto the top of each cookie prior to baking.

SUGAR COOKIES
Delicious sugar cookies, especially if you use the vanilla and almond extracts together. Perfect for roll-and-cut Christmas cookies. Can also be formed into logs for slice-and-bake cookies. Thanks to PetitFour for the original recipe! Prep time includes chilling time.

Steps:
- Mix dry ingredients in separate bowl.
- Using stand mixer or hand mixer, beat butter and sugar until fluffy.
- Beat in eggs one at a time, scraping down bowl each time, then vanilla and/or almond extract.
- Add flour mixture gradually and mix at low speed until comes together.
- Turn out onto flat surface.
- Knead a couple of times just until smooth.
- Pat into a flat disk, wrap in plastic and chill until firm enough to roll, about one hour.
- Roll and cut as desired.
- Bake at 350 about 8-10 minutes on parchment-lined sheets.

Steps:
- In a large bowl, mix oil, butter, sugar, eggs, and vanilla until creamy.
- Mix together cream of tarter, baking soda, flour, and salt. Add these dry ingredients to the creamed mixture. Chill dough for 15 to 20 minutes.
- Roll dough into balls, and place on greased cookie sheets. Press balls with a glass dipped in sugar to flatten.
- Bake at 350 degrees F (175 degrees C) for 8 to 10 min.

Steps:
- Line a cookie sheet with parchment paper.
- Grate almond paste and mix with sugar and egg whites till light and fluffy.
- Pipe the batter onto the parchment paper: make 30 round bases with a diameter of about 4 cm.
- Smooth the bases with your finger if needed.
- Let stand at room temperature for 30 minutes.
- In the meantime, preheat oven to 175 C.
- After the 30 minutes, bake the cookie bases in the preheated oven for 15-20 minutes.
- Let cool on the cookie sheet.
- Filling: Mix the butter with sugar and vanilla sugar till light and fluffy using an electric mixer.
- Add egg yolks one at the time, mixing after each addition.
- Dissolve instant coffee into hot water and add the coffee mixture to the butter mixture.
- Spread the filling on the bottom of the baked cookie bases (i. e. flip them around), making pretty, rounded heaps.
- Transfer the cookies into the fridge or freezer for the filling to set.
- The setting will take about 15 minutes in the freezer and about 30 minutes in the fridge.
- Frosting: melt the chocolate with the coconut butter on top of a double boiler.
- Dip the cookies 1-2 times in the chocolate mixture so that the frosting is covered.
- If you need to dip them more than once, let the chocolate set before dipping again.
- Chocolate biskvi will keep 6-8 days in the fridge and about 3 months in the freezer.
- If you want a fancier presentation, pipe the frosting on the cookie bases in decorative designs.
