2 cups fresh ricotta cheese
1 clove garlic, peeled and minced
3 large cucumbers, peeled, seeded and cut into 2-inch-long juliennes
1/3 pound smoked salmon, chopped
1/4 cup chopped fresh parsley
1 tablespoon capers
1 pound fusilli pasta
1 tablespoon salt for the pasta, plus more to taste
Freshly ground black pepper to taste
1/4 cup fresh mint leaves, sliced into chiffonad

Steps:

  • Place the ricotta cheese in a serving bowl and beat with a fork until smooth. Stir in the garlic, cucumbers, salmon, parsley and capers.
  • Cook the pasta in a large pot of well-salted boiling water until al dente. Drain. Add the pasta to the sauce mixture and toss. Season with salt and pepper, top with the mint and serve immediately.

8 ounces uncooked penne pasta
1 tablespoon canola oil
2 medium cucumbers, thinly sliced
1 medium onion, thinly sliced
1-1/2 cups sugar
1 cup water
3/4 cup white vinegar
1 tablespoon prepared mustard
1 tablespoon dried parsley flakes
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon garlic salt

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place pasta in a large bowl; stir in the oil, cucumbers and onion. , In a small bowl, whisk the remaining ingredients. Pour over salad; toss to coat. Cover and chill for 4 hours, stirring occasionally. Serve with a slotted spoon. Refrigerate leftovers.

3 seedless cucumbers (usually plastic-wrapped; 2 1/2 to 2 3/4 pounds total), peeled
2 tablespoons unsalted butter
2 tablespoons finely chopped fresh mint
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon finely grated fresh lemon zest
1 teaspoon fresh lemon juice
Special Equipment
an adjustable-blade slicer with 1/4-inch julienne blade

Steps:

  • Adjust blade of slicer to 1/8-inch-thick setting. Using slicer, cut each cucumber lengthwise into long 1/8-inch-thick julienne strips, slicing until you reach core, then rotate cucumber a quarter turn and continue slicing and rotating until left with nothing but core. Blanch cucumber "noodles" in a 4-quart pot of boiling salted water 1 minute, then drain in a colander. Immerse colander with cucumbers in a large bowl of ice and cold water to stop cooking, about 2 minutes. Drain cucumbers, then transfer to a clean kitchen towel and pat cucumbers dry.
  • Heat butter in a 10-inch heavy skillet over moderate heat until foam subsides, then cook cucumbers, mint, salt, pepper, zest, and lemon juice, tossing to coat, until just heated through, about 1 minute.

1/2 pound penne
3 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
1/2 cup extra-virgin olive oil
Freshly ground black pepper
1 cup chopped cooked chicken
1 cup diced cucumber
1 cup halved cherry tomatoes
1/2 cup crumbled feta cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the penne and cook according to the package directions; drain and rinse under cold water. Transfer to a large bowl.
  • Meanwhile, make the dressing: Combine the garlic, red pepper flakes and olive oil in a small saucepan. Cook over medium heat, stirring, for 3 minutes; let cool. Season with salt and black pepper.
  • Add the chicken, cucumber, cherry tomatoes and feta to the pasta. Pour the dressing over the pasta salad and toss to coat. Season with salt and black pepper. Chill for up to 3 hours.

1 (8 ounce) package bow tie pasta
1 large cucumber, thinly sliced
1 large onion, thinly sliced
1 ½ teaspoons dried dill
¾ cup white vinegar
1 cup white sugar
1 cup water
1 tablespoon vegetable oil
1 tablespoon prepared mustard
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook the bow tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes. Drain and rinse several times with cold water until pasta is cool.
  • Stir pasta, cucumber, onion, and dill in a salad bowl. Whisk vinegar, sugar, water, vegetable oil, mustard, salt, and black pepper in a separate bowl until sugar and salt have dissolved. Pour dressing over the pasta mixture and toss lightly to coat with dressing. Let chill for 2 hours before serving.

This is a delicious cold salad--perfect for barbeques and picnics. Someone gave this recipe to me years ago and it has been hit! It is very easy to make and everyone always wants the recipe. This is something different than the same old pasta salad.

1 (16 ounce) box angel hair pasta
1 (16 ounce) jar marzetti coleslaw dressing (or you could use your own slaw dressing)
2 cucumbers
2 bunches green onions
1 tablespoon sugar
1 tablespoon red wine vinegar

Steps:

  • Break pasta into thirds and cook until done and store in refrigerator to cool. I usually add a little of the Slaw dressing so it doesn't get too stuck together.
  • Dice cucumbers into small cubes and cut onions.
  • Mix all ingredients together. It is as easy as that. Tastes even better after it has cooled for a while.
