CUCUMBER DIP
This is a change for a vegetable dip - not the usual onion. Easy to make in a food processor. Must make one day ahead.

Steps:
- Peel and grate cucumber.
- Mix cucumber with vinegar and salt and refrigerate overnight.
- When ready to serve, thoroughly blend cream cheese, mayonnaise, and garlic.
- Press all liquid from the marinated cucumber; discard the liquid and stir the cucumber into the cream cheese mixture.
- Serve with fresh vegetables or a thin corn chip.

CREAMY CUCUMBER DILL DIP
This is very simple and just as impressive. I've posted the full-fat version, but you can make this lower fat by using a low fat cream cheese and a low fat/no fat mayo. You can make this up to 48 hours in advance and it will taste great, just give it a stir before serving.
