1 (16 oz.) pkg. orzo
1/4 cup lemon juice
3 Tbsp. Chopped fresh dill
3 Tbsp. olive oil
1 tsp. salt
1/2 tsp. ground black pepper
3 cups chopped English cucumber
8 oz. dill Havarti cheese, cut into small cubes (about 2 cups)

Steps:

  • 1. Bring a large pot of salted water to a boil over high heat. Stir in orzo, and cook for 8 to 9 minutes or until orzo is tender. Drain well. 2. Meanwhile, in a large bowl, whisk together lemon juice, chopped dill, olive oil, salt and pepper. Add cooked orzo, tossing to coat. Cover and chill until orzo is cold. 3. Stir cucumber and cheese cubes into orzo mixture. Cover and chill until ready to serve.

3/4 pound orzo (rice-shaped pasta)
1/2 cup freshly squeezed lemon juice (3 lemons)
1 cup minced scallions, white and green parts
1 cup chopped fresh dill
1 cup chopped fresh flat-leaf parsley
1 cup medium-diced hothouse cucumber, unpeeled and seeded
1/2 cup small-diced red onion
3/4 pound good feta cheese, large-diced

Steps:

  • Fill a large pot with water, add 1 tablespoon of salt and a splash of oil, and bring the water to a boil. Add the orzo and simmer for 9 to 11 minutes, stirring occasionally, until it's cooked al dente. Drain and pour into a large bowl. Whisk together the lemon juice, 1/2 cup olive oil, 2 teaspoons salt, and 1 teaspoon pepper. Pour over the hot pasta and stir well.
  • Add the scallions, dill, parsley, cucumber, onion, 2 teaspoons salt, and 1 teaspoon pepper. Toss well. Add the feta and stir carefully. Set aside at room temperature for 1 hour to allow the flavors to blend, or refrigerate overnight. If refrigerated, taste again for seasonings and bring back to room temperature before serving.

1/4 cup chopped fresh dill

Steps:

  • Bring 8 cups of cold, salted water to a boil in a medium saucepan. Add the orzo and cook until al dente, 7 to 8 minutes. Drain well.
  • While the orzo cooks, whisk together the mustard, vinegar and some salt and pepper in a medium bowl until smooth. Slowly whisk in the olive oil until emulsified. Set aside.
  • Combine the orzo, green onions, tomatoes and cucumbers in a large bowl; season with salt and pepper and toss to combine. Scatter the feta and dill over the top, drizzle with the vinaigrette, and toss again. Serve immediately, or chill for up to 8 hours.

2 tablespoons lemon juice
1 teaspoon lemon juice

Steps:

  • Place large pot of water on a burner and bring to a boil for the orzo.
  • In a strainer placed over a bowl, toss cucumber, tomatoes, and 1/2 teaspoon of the salt and let drain for 20 minutes.
  • Preheat grill.
  • Cook orzo until JUST done, about 12 minutes. Drain. Rinse with cold water and drain well. Toss orzo with the 1/3 cup oil, lemon juice, 1/3 cup dill, 1/4 teaspoon of salt, and 1/8 teaspoon pepper.
  • Coat salmon with 1 tablespoon oil, remaining 1/4 teaspoon salt, and 1/4 teaspoon pepper.
  • Grill salmon, skin-side up, for 4 minutes. Turn and sprinkle with the 1 tablespoon dill and lemon zest.
  • Cook salmon until golden and just barely done (the fish should still be translucent in the center), about 3 minutes longer.
  • Serve salmon on top of the salad.
