Creamy Dill Cucumber Toasties image

I got this recipe years ago from a friend of a friend. I love it and make it all the time for parties. It looks great on the platter, and it is super easy! Everyone loves it!

1 (8 ounce) package cream cheese, softened
1 (.7 ounce) package dry Italian-style salad dressing mix
½ cup mayonnaise
1 French baguette, cut into 1/2 inch thick circles
1 cucumber, sliced
2 teaspoons dried dill weed

Steps:

  • In a medium bowl, mix together cream cheese, dressing mix and mayonnaise.
  • Spread a thin layer of the cream cheese mixture on a slice of bread, and top with a slice of cucumber. Sprinkle with dill. Repeat with remaining ingredients.

A creamy, yet light and refreshing spread that is perfect to use on crackers, baguettes, bagels or on top of vegetable slices.

1/2 medium size cucumber, peeled and cut into chunks
3 green onions
1 8 oz. block cream cheese, softened
1 teaspoon Worcestershire Sauce
1/8 teaspoon salt

Steps:

  • Add cucumber to food processor bowl.
  • Cut the roots off green onions and place in food processor.
  • Cover and process until coarsely chopped - be sure to not over process. You want chunks not puree/liquid.
  • Add cream cheese, Worcestershire sauce and salt to the bowl and cover and process until smooth. Transfer mixture to a serving bowl.
  • Cover and refrigerate overnight to allow the flavors to meld.

6 teaspoons extra-virgin olive oil
3 ounces feta
1/2 teaspoon fresh lemon juice
Coarse salt and ground pepper
1 small English cucumber, thinly sliced crosswise

Steps:

  • Preheat oven or toaster oven to 450 degrees. Split baguette lengthwise and lightly brush cut sides with 2 teaspoons olive oil. Bake until golden around edges, 5 minutes. Meanwhile, in a small bowl, mash together feta, 4 teaspoons oil, and lemon juice with a fork. Season with salt and pepper. Spread feta mixture evenly over toasted baguette and top with cucumber. Season with salt, pepper, lemon juice, and a drizzle of oil. Cut into pieces to serve.

8 oz cream cheese
1/2 c mayonnaise
1 pkg good season's italian dressing (dry mix)
1 large baguette loaf (sliced)
1 large english cucumber or fresh summer cuke

Steps:

  • 1. Mix cream cheese,mayo and italian dressing together,let rest in fridge for atleast an hour.
  • 2. Slice or have the market slice for you, the baguette.
  • 3. Peel and Slice cucumber in as 1/4"(or so)slices
  • 4. Spread cheese mixture on slice of bread add 1 slice of cucumber, sprinkle Dill weed. Repeat till all is used. Arrange on pretty plate.
