1/4 cup honey
1/4 cup lemon juice
1/2 teaspoon grated lemon zest
1 small mango, peeled and diced
1 tablespoon canola oil
1 small onion, peeled and quartered
1 jalapeno pepper, seeded and halved
1 teaspoon paprika
1/2 teaspoon garlic salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon pepper
2 boneless skinless chicken breast halves (6 ounces each)

Steps:

  • In a small bowl, whisk the honey, lemon juice and zest until blended. Set aside 1/4 cup. In a small bowl, gently combine the mango and remaining honey mixture; cover and refrigerate. In a blender or food processor, combine the oil, onion, jalapeno, paprika, garlic salt, cinnamon, allspice, pepper and reserved honey mixture; cover and process until onion and jalapeno are finely chopped., Place the chicken in an 8-in. square baking dish coated with cooking spray. Spoon half of the spice mixture over each piece turn over and top with remaining mixture. Bake, uncovered, at 375° for 25-30 minutes or until juices run clear. Serve with mango mixture.

A quick and easy meal to throw together. For the sweet chilli sauce I use a brand that is quite spicy so it gives it a nice kick. You may want to adjust the amount listed if your brand is more on the sweet side.

4 chicken breasts
1 teaspoon fresh ground black pepper
1 teaspoon ground cumin
1 teaspoon paprika
4 slices prosciutto
2 mangoes, peeled and sliced into thick slices
olive oil
1 mango, peeled and chopped
2 garlic cloves, crushed
2 tablespoons honey
3 tablespoons sweet chili sauce (Read description)

Steps:

  • Place chicken between sheets of greaseproof paper and pound lightly with a meat mallet to flatten until close to equal thickness.
  • Combine black pepper, cumin and paprika in a small bowl.
  • Sprinkle mix over chicken.
  • Layer prosciutto and mango slices on chicken and roll up, secure with toothpicks.
  • Heat a little olive oil in a pan brown chicken on both sides.
  • Place breasts in an oven proof dish and finish in a 180 degree C oven for about 25 Min's or until chicken is cooked through.
  • Mango Sauce.
  • Place all the sauce ingredients into a small saucepan and cook, stirring, 4-5 Min's or until sauce has thickened slightly.
  • Remove and blend or process sauce to make a smooth puree like mixture.
  • Serve chicken breasts drizzled with sauce.

2 tablespoons olive oil
1/2 cup orange juice
1 teaspoon lime zest

1/2 avocado

Steps:

  • Toast the cumin seeds in a dry skillet over medium-high heat until fragrant, about 2 minutes. Place the cumin seeds, garlic, chile pepper, salt, olive oil, orange juice, and lemon juice into the bowl of a blender; grind to a coarse paste. Toss the chicken with the marinade, then place into the refrigerator, and allow to marinate for about 2 1/2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a skillet over medium-high heat. Cook the chicken for 2 to 3 minutes on each side until browned. Place into the oven, and cook until the juices run clear, about 8 minutes. When the chicken is done, remove, cover with foil, and allow to rest for 3 to 5 minutes.
  • While the chicken is in the oven, whisk together the olive oil, orange juice, lime zest, honey, and soy sauce in a skillet over medium-high heat. 2 chicken breasts
1 mango
1 lime
1 fresh jalapeno pepper
2 fresh garlic cloves
1 tablespoon crystallized ginger
4 tablespoons fresh cilantro
2 tablespoons malt vinegar
1 teaspoon white wine vinegar
2 tablespoons olive oil
1 teaspoon sea salt
ground black pepper

Steps:

  • Trim and butterfly chicken breasts. Salt and pepper to taste.
  • At this point you can either grill the chicken breasts or cook in a medium skillet over medium-high with a small amount of olive oil. The chicken will need to cooked long enough that juices run clear. You'll prepare the mango mixture while the chicken cooks.
  • Squeeze juice from lime into small dish and combine with vinegars.
  • Finely chop cilantro and add to lime juice/vinegar mixture. Add the crystallized ginger and salt and set aside.
  • Peel and dice mango into a bowl. Set aside.
  • Remove the seeds from the jalapeno, and finally chop 1/2. Add to the mango. You can chop and use the remainder for a spicier dish.
  • In a small skillet, heat a small amount of olive oil over medium heat.
  • While the oil heats, mince garlic and then saute in oil for 1-2 minutes.
  • Add the mango/jalapeno mixture to the garlic/oil and heat for 3 minutes over medium.
  • Add the lime/vinegar/ginger to the skillet. Reduce heat to medium-low and continue to cook for 3 more minutes, stirring constantly. The mixture should thicken from the sugar in the mango. If the chicken is still not ready, keep the mixture warm over low heat.
  • Spoon the mango mixture over the cooked chicken breast and serve.

1/4 cup kosher salt
2 tablespoons sugar
1 1/2 lbs boneless skinless chicken breasts
1 1/2 tablespoons coconut oil, melted
12 ounces medium shrimp
4 wooden skewers
1/2 cup rice wine vinegar
1/2 cup Agave, necture
1/4 cup water
1 tablespoon sambal oelek (to taste) or 1 tablespoon chili paste (to taste)
1 tablespoon garlic, finely minced
1 tablespoon lime zest
1 tablespoon red wine vinegar
1 tablespoon honey
1 tablespoon soy sauce
1 large mango (peeled and diced)

Steps:

  • Fill a large bowl with 1 quart of warm water with the Kosher salt and sugar. Stir until the salt and sugar is mostly dissolved. Add the chicken and brine 15 minutes. Remove the chicken breast and rinse with cold water, then pat dry.
  • Soak the skewers in water a few minutes. Spear the shrimp, 7-8 per skewer. Season to taste with salt and pepper.
  • Preheat the oven to 450°F.
  • Preheat a large cast iron grill pan over high heat. Brush the chicken with the coconut oil. Seasoning both sides of the chicken with salt and pepper. Grill the chicken 1½ minutes per side. Transfer the chicken to a foil lined baking sheet. Pour on ¾ of the sauce.
  • Bake 8 to 10 minutes or until the chicken reaches 165°F. Remove from oven loosely cover with foil. Let stand 5 to 10 minutes.
  • Heat the grill pan, coated with nonstick cooking spray, on medium heat. Add the shrimp skewers and brush on half of the remaining sauce. Cook 2-3 minutes. Flip and brush on the remaining sauce. Cool 1-2 minutes. Transfer to a serving dish. Serve the chicken and shrimp along with rice and a veggie side dish.

2 tablespoons vegetable oil
1 pound skinless, boneless chicken breast halves - cubed
1 clove garlic, minced
6 tablespoons tamari soy sauce
¾ cup water

3 tablespoons hot sauce, or to taste
1 ripe mango, peeled and cubed
¼ teaspoon crushed red pepper flakes
1 teaspoon cornstarch
1 tablespoon warm water

Steps:

  • Place the sweet potatoes into a saucepan and fill with enough water to cover. Simmer over medium-high heat until tender, about 15 minutes. Drain and set aside.

3 garlic cloves, chopped

1 canned piquillo pepper or 1 whole canned pimiento, cut into thin strips

Steps:

  • Whisk first 11 ingredients in medium bowl for marinade. Place chicken in large resealable plastic bag; add marinade. Seal bag; turn several times to coat chicken. Refrigerate chicken at least 4 hours and up to 1 day, turning bag occasionally. Using tongs, transfer chicken from bag to plate, allowing excess marinade to drip back into bag. Reserve marinade.
  • Heat 1 tablespoon oil in heavy large wide pot over medium heat. Add chorizo and sauté until beginning to brown and fat begins to render, about 3 minutes. Using slotted spoon, transfer chorizo to medium bowl. Increase heat to medium-high. Add half of chicken, skin side down, to pot. Sauté until brown, about 5 minutes per side. Transfer to plate. Repeat with remaining chicken.
  • Pour off all but 3 tablespoons fat from pot; discard excess fat. Add chopped onions; sauté 4 minutes, scraping up any browned bits. Add chopped bell pepper and chopped garlic. Sauté until onions are translucent, about 2 minutes. Mix in rice, stirring to blend with vegetables. Add 2 1/2 cups broth, tomatoes with any juice, paprika, saffron, and reserved marinade. Bring to boil, stirring to blend. Return chicken, chorizo, and any accumulated juices to pot, pressing chicken partially into rice.
  • Reduce heat to low, cover, and simmer 15 minutes. Arrange piquillo pepper strips over chicken pieces. Cover and continue to simmer until rice is tender and chicken is cooked through, adding more broth by 1/4 cupfuls if rice is dry, about 10 minutes longer. Season to taste with salt and pepper.
  • Transfer rice and chicken to large shallow bowl. Garnish with cilantro and lime wedges and serve.

I got this from a friend at church; I haven't made it yet, but she brought it to a potluck and it was so yummy I had to ask for the recipe. It is credited to The Bean Education & Awareness Network. Prep time includes marinating time. ****update**** I messed up the marinating once I finally made this and left out the garlic and red pepper in the marinade. Instead I put the garlic in while sauteing the chicken and put in the red pepper with all the other spices. This made it pretty spicy, but good!

1 (8 ounce) bottle fat-free Italian salad dressing
3 garlic cloves, minced
1/2 teaspoon ground red pepper
1 lb boneless skinless chicken breast, cut into 1/4-inch thick strips
1 tablespoon olive oil
2 medium bell peppers, chopped (red or green are fine)
1 medium onion, chopped
1 teaspoon oregano
1/2 teaspoon ground black pepper
1/2 teaspoon ground cumin
6 cups cooked rice
2 (15 ounce) cans black beans or 3 cups cooked black beans, rinsed
2 (14 1/2 ounce) cans diced tomatoes
chopped fresh cilantro

Steps:

  • Combine dressing, garlic and red pepper in a 2 cup glass measure or medium glass bowl. Place chicken in large glass bowl, pour dressing over chicken, cover and marinate at least 30 minutes, but overnight is fine.
  • Remove chicken from marinade, drain well, discard marinade. Heat oil in large skillet over medium high heat until hot. Add chicken, cook 5-7 minutes, stirring until chicken is slightly brown, spooning off any excess liquid.
  • Add bell peppers, onion, oregano, pepper, and cumin. Cook, stirring, 4-5 minutes or until vegetables are tender.

3/4 cup orange juice
1 tablespoon (packed) grated orange peel

For chicken
2 teaspoons cumin seeds
6 large garlic cloves, minced
1 large serrano chili, stemmed, minced
1/2 teaspoon salt
3/4 cup olive oil
3 tablespoons orange juice
3 tablespoons fresh lime juice
6 skinless boneless chicken breast halves
2 large firm but ripe mangoes, peeled, pitted, cut into 1/2-inch pieces

  • Make dressing:
  • Whisk vegetable oil, orange juice, orange peel, honey and soy sauce in small bowl to blend. Season dressing to taste with salt and pepper. (Dressing can be prepared 1 day ahead. Cover and refrigerate.)
  • Make chicken:
  • Stir cumin seeds in heavy medium skillet over medium-high heat until seeds are fragrant and slightly darker in color, about 2 minutes. Transfer seeds to medium bowl. Add minced garlic, minced chili and salt to seeds; mash mixture with back of fork to form coarse paste. Heat olive oil in same skillet over medium-high heat until very hot, about 2 minutes. Pour hot olive oil over garlic mixture; stir to blend. Let stand 15 minutes. Whisk in orange juice and lime juice. Pour marinade into 13x9x2-inch glass baking dish and cool. Add chicken to marinade; turn to cnd cool. Add chicken to marinade; turn to coat. Cover chicken and refrigerate at least 1 hour and up to 3 hours.
  • Combine mangoes and avocados in medium bowl. Add 6 tablespoons dressing and toss to coat.
  • Prepare barbecue (medium-high heat). Remove chicken from marinade; discard marinade. Grill chicken until cooked through, about 5 minutes per side. Transfer chicken to work surface. Let stand 5 minutes. Cut each chicken piece crosswise into 1/3-inch-thick slices.
  • Place lettuces in large bowl. Toss with enough dressing to coat thoroughly. Season to taste with salt and pepper; mound lettuces on 6 plates.
