DUTCH-OVEN JALAPEñO CHEDDAR BREAD RECIPE BY TASTY
Impress your friends with this homemade dutch-oven bread. Bread-making can be time consuming but this recipe uses active yeast to help speed up the process. And with cheddar and jalapeño involved, you know you're in for a treat.

- In a large bowl, combine the bread flour, 2 cups (200 g) of cheddar cheese, the chopped jalapeños, and salt. Stir well.
- In a separate large bowl, combine the warm water and yeast. Pour the flour mixture on top of the water and use a silicone spatula to stir until the dough comes together.
- With the spatula, fold the dough around the edges of the bowl toward the center, rotating the bowl each time and folding a total of 8 times. Cover with a kitchen towel and let rest in a warm place for 60 minutes, or until almost doubled in size.
- Using the spatula, fold the dough toward the center again 8 more times. Cover with the towel and let rest for 30 minutes.
- Add the Dutch oven and lid to the oven, and preheat to 450˚F (230˚C) for 30 minutes.
- Lightly flour a clean work surface and your hands. Carefully peel the dough out of the bowl and onto the floured surface. Flip over and carefully brush away excess flour. Fold the edges of the dough towards the center 8 times, then flip over the dough and transfer to a piece of parchment paper.
- Brush the top of the dough with the olive oil, so the cheese will stick. Sprinkle the remaining ½ cup (50 g) of cheese on top. Use a sharp knife to score the bread with an "X", which will allow steam to escape. Arrange the jalapeño rings on top of the cheese.
- Carefully remove the Dutch oven from the oven and use the parchment to lift the bread into the pot. Cover with the lid and bake for 30 minutes, then remove the lid and bake for 20 more minutes, until the bread is golden brown.
- Carefully slide the bread out of the pot and onto a wire rack. Remove the parchment paper and let the bread cool for at least 1 hour before slicing.
- Slice the bread and serve as desired.

EASY CRUSTY JALAPEñO CHEESE BREAD
Steps:
- In the bowl of a stand mixer, combine the water, sugar and yeast. Allow to stand for 5 minutes until foamy.
- Add the flour and salt then knead with the dough hook for 5 minutes.
- The dough will be slightly sticky but shouldn't be wet. If it is, add 1-2 tbsp flour and knead in.
- Knead in the jalapeños and cheese.
- Bring the dough together into a ball with your hands. Dust over 1-2 tbsp flour (you want it to be well covered).
- Cover the bowl with a damp kitchen towel and allow the dough to rise for 1 hour until doubled in size. Leaving the dough in a warm spot will aid the rising.
- When the dough has proved, turn it out onto a floured surface. Fold the edges into the center of the dough, pinching the seams together then place into a floured bowl, seam side up. Dust over more flour.
- Cover with the tea towel and allow to rise for another 30 minutes.
- Preheat the oven to 180°C/350°F. Place a pot (dutch oven) with a lid into the oven to preheat.
- Carefully remove the pot from the oven and remove the lid. Transfer the dough to the pot and cover with the lid.
- Place in the oven and allow to bake for 30 minutes.
- Remove the lid and bake for another 10-15 minutes until the bread is golden brown.
- Remove the bread from the oven and allow to cool on a wire rack for 20-30 minutes (or until it has cooled to room temperature) before slicing and serving.

CRUSTY HOMEMADE BREAD - WITH VARIATIONS
When I saw this in my TOH magazine knew I had to try it, only 5 ingredients in the basic recipe and the result is a lovely crusty outer and a pillowy soft inside. The house smelled awesome while it was baking, DH has officially decided that other than sourdough - this is his all time favorite. So try it plain, stud it with cheese or fold in orange peel and cranberries - your family is sure to love it. Be sure to plan ahead as it sits in the fridge overnight. - BASIC:.
- In small bowl, dissolve yeast in wter.
- In large bowl, mix 3 1/2 cups flour and salt.
- Using rubber spatula add yeast mixture, stirring just until smooth (dough will be sticky). DO NOT knead.
- Cover with plastic wrap; let rise at room temperature 1 hour.
- Punch down dough.
- Turn onto a lightly floured surface.
- Pat into a 9" square.
- Fold dough into thirds, forming a 3" square.
- Turn dough over; place in a greased bowl.
- Cover with plastic wrap; let rise at room temperature until almost doubled, about 1 hour.
- Punch down dough and repeat folding process. Return dough to bowl; refrigerate, covered, overnight.
- Line Bottom of a disposable foil rosting pan with parchment paper.
- Dust with cornmeal.
- Turn dough onta floured surface.
- Knead gently 8 times; shape into a 6" round lof.
- Place in prepared pan; dust top with remaining 1 Tablespoon of flour.
- Cover pan with plastic wrap; let rise at room temperature until dough expands in size to a 7 1/2: loaf, bout 1 1/4 hours.
- Preheat oven to 500. Using a sharp knife, make a slash (1/4" deep) across top of loaf.
- Cover pan tightly with foil.
- Bake on lowest oven rack for 25 minutes.
- Reduce oven setting to 450.
- Remove foil; bake 25-30 minutes longer or until deep golden brown.
- Remove loaf to a wire rack to cool.
- CHEDDAR CHEESE Variation:.
- Prepare bread dough as directed.
- Before kneading dough in Step 4, sprinkle with 4 ounces diced sharp cheedar cheese.
- CRANBERRY n ORANGE Variation:.
- Prepare bread dough as directed.
- Before Kneading dough in Step 4 sprinkle with 1 cup dried cranberries and 4 teaspoons grated orange peel.

- Sprinkle yeast over warm water.
- Let stand 5 minutes.
- Stir gently to moisten.
- With mixer, blend softened yeast with cottage cheese, sugar, salt and egg.
- Add flour in 1/2 cup portions to form stiff dough.
- Beat well by hand after each addition.
- Cover dough and let rise in a warm place until double (about 1 hour).
- Butter a 1 1/2 quart casserole.
- Stir down dough and transfer to buttered casserole.
- Let rise another 30 to 40 minutes until almost double.
- Preheat oven to 350 degrees.
- Bake 40 to 50 minutes or until golden brown.
- Brush crust with butter and serve.
- Variations: Add 1 tablespoon grated onion and 2 tablespoons toasted sesame seeds before adding flour.

EASY CRUSTY JALAPENO CHEESE BREAD FANTASTICO

- Important: you will need a heavy pot with a lid. A Dutch oven is ideal; I just use a heavy stew pot with thick sides. I start the dough at 9pm if I want it for dinner the next day.
- In a large bowl combine flour, yeast and salt. Add 1 5/8 cups water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.
- Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and flop dough onto it. Fold it over on itself once or twice. Put some flour on your hands if the dough sticks to them. Cover loosely with plastic wrap and let rest about 15 minutes.
- Divide the bag of cheese into 1/4s, and divide the jar of peppers into 4 portions, too, taking care to remove any stems or woody bits.
- Remove plastic and press the dough flat. Sprinkle it with a portion of peppers and cheese. Fold in half, press flat, sprinkle again. I usually only use 3 of the 4 portions of cheese/peppers. Mash it into a ball, pressing firmly to seal the seam.
- Generously coat a cotton towel (not terry cloth) with cornmeal; put dough seam side down on towel and dust with more cornmeal. Cover with another cotton towel and let rise for about 2 hours. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.
- At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Drop dough into pot, taking care not to burn your fingers. It may look like a mess, but that is O.K. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes.
- Cover with lid and bake 30 minutes, then remove lid and bake another 15 or longer, until loaf is beautifully browned. This may take as long as 60minutes total bake time, but mine is usually done by 45min total.
- Cool on a rack. Listen to it crackle as it cools.

- Gently stir to completely dissolve.
- With an electric mixer, blend the softened yeast into the cottage cheese, sugar, salt and egg.
- Add the flour in 1/2 cup portions to form a stiff but light dough and let rise in a warm place until doubled in bulk.
- Butter a 1 1/2 quart casserole dish and stir the dough down, then add 1 cup of the grated cheddar cheese.
- Turn into the buttered dish.
- Let rise 30 to 40 minutes longer or until almost doubled in size.
- Preheat the oven to 350 degrees F. and bake for 40 to 50 minutes or until golden brown.
- Brush the top with butter.

- Combine the flour, sugar, baking powder, salt, pepper, allspice and nutmeg in a large bowl.
- Stir in cheese, green onions, parsley, dill, thyme, and rosemary.
- In another bowl, combine eggs, buttermilk, and butter and blend well.
- Stir egg mixture into flour mixture just until moistened. Let stand 5 minutes.
- Spoon batter into a greased 8x4 inch loaf pan. Spread evenly.
- Bake at 350 degrees for 50-55 minutes (toothpick inserted near center should come out clean). Cool in pan on a wire rack for 10 minutes. Remove bread from pan and cool 30 minutes more. Serve warm.

- 1. To make the starter: Mix the flour, salt, yeast, and water. It will be very dry; If it doesn't come together, add a bit more water. Cover and let it rest at room temperature, it will become bubbly. To make the dough: Combine the risen starter, with the water, salt, flour, and yeast. Knead, (you may use a mixer or bread machine on the dough cycle,) to make a smooth dough. Place the dough in a lightly greased bowl, cover and let rise for 1 1/2 to 2 hours, until it is nearly doubled. Pat and stretch the dough into a 9" x 12" rectangle. Spritz with water and sprinkle with cheese. Starting with the long side, roll into a log, pinching the seam to seal. Place the log, seam-side down, on a lightly floured or lightly-oiled surface. Cover and let rise for 1 to 1 1/2 hours, until it is puffy, but not doubled. Preheat the oven to 425 degrees. Cut the log into 4 crosswise slices, for mini-breads; or simply cut in half for 2 loaves. Place them on 1 (for 2 loaves) or 2 (for mini-loaves), lightly greased, silpat, or parchment lined baking sheets, cut side up. Spritz with warm water. Bake for 20 minutes (for the mini-loaves) or 35 minutes (for the full sized loaves), or until the cheese is melted and the loaves are very deep golden brown. Remove from the oven and serve warm.

- Combine all of the ingredients in a large mixing bowl, or a large (6-quart), food-safe plastic bucket. For first-timers, "lukewarm" means about 105°F, but don't stress over getting the temperatures exact here. Comfortably warm is fine; "OUCH, that's hot!" is not. Yeast is a living thing; treat it nicely.
- Mix and stir everything together to make a very sticky, rough dough. If you have a stand mixer, beat at medium speed with the beater blade for 30 to 60 seconds. If you don't have a mixer, just stir-stir-stir with a big spoon or dough whisk until everything is combined.
- Next, you're going to let the dough rise. If you've made the dough in a plastic bucket, you're all set — just let it stay there, covering the bucket with a lid or plastic wrap; a shower cap actually works well here. If you've made the dough in a bowl that's not at least 6-quart capacity, transfer it to a large bowl; it's going to rise a lot. There's no need to grease the bowl, though you can if you like; it makes it a bit easier to get the dough out when it's time to bake bread.
- Cover the bowl or bucket, and let the dough rise at room temperature for 2 hours. Then refrigerate it for at least 2 hours, or for up to about 7 days. (If you're pressed for time, skip the room-temperature rise, and stick it right into the fridge). The longer you keep it in the fridge, the tangier it'll get; if you chill it for 7 days, it will taste like sourdough. Over the course of the first day or so, it'll rise, then fall. That's OK; that's what it's supposed to do.
