TRADITIONAL GERMAN SPAETZLE



Traditional German Spaetzle image

Perfect texture and perfect flavor, these traditional German Spaetzle are just like you know and love them from the Swabia region of Southern Germany!

Number Of Ingredients 5

2 cups all-purpose flour ((you can also use whole wheat flour))
1 1/2 teaspoons salt
4 large eggs
1/2 cup milk or water + more as needed
butter for serving

Steps:

  • Add the flour and salt to the bowl of a stand mixer. Stir to combine. Crack the eggs into a small bowl and whisk them. Make a well in the center of the flour mixture and pour the eggs in it. Add the milk (start with using slightly less and add more as needed). Attach a dough hook to the stand mixer and "knead" the dough for 16-20 minutes, or until bubbles appear (see pictured instructions for details). After 15 minutes or less of beating, use a wooden spoon to scoop and pull the dough. If bubbles/holes appear, the dough is done.
  • Bring at least 2 quarts of lightly salted water to a boil, then reduce to a simmer. Using a Spätzle maker of your choice (I use and prefer the Spätzle press), press the noodles into the simmering water and cook for about 2-3 minutes, or until the noodles float to the top. Use a slotted spoon to transfer the noodles to a colander, and then dump the noodles in a large bowl of ice water. Drain the noodles again, toss with some melted butter and serve warm.
  • Make Ahead: The Spaetzle can be stored in the fridge for at least a couple of days and then reheated. Melt some butter in a large skillet and toss the Spätzle in it to heat through.

2 eggs
1 tsp baking powder
1 c milk
1/2 tsp salt
flour - enough to make a batter of the consistency of a medium pancake

Steps:

  • 1. Beat eggs; add baking powder, flour, milk and salt. Put about 3 tablespoons lard in frying pan and heat. Pour the mixture into the hot fat and brown on one side. Turn it over and brown on the other side. Then use your spatula and start to cut it up in small pieces and keep on stirring it until it is browned and won't stick together and isn't doughy. Serve and enjoy!

½ cup hoisin sauce
½ cup water
1 tablespoon cornstarch
1 teaspoon white sugar
½ teaspoon grated fresh ginger
¼ teaspoon red pepper flakes
kosher salt and freshly ground black pepper to taste
4 cups water
2 (3 ounce) packages ramen noodles (without flavor packet)
2 teaspoons peanut oil
1 bunch asparagus, cut diagonally into 1-inch pieces
2 carrots, peeled and sliced diagonally
½ onion, sliced
3 cloves garlic, pressed
1 cup thinly sliced cooked chicken
2 cups sliced napa cabbage
1 cup sliced mushrooms

Steps:

  • Whisk hoisin sauce, water, cornstarch, sugar, ginger, red pepper flakes, salt, and black pepper together in a bowl to make sauce.
  • Bring water to a boil in a large pot. Add ramen noodles. Cook, stirring occasionally, until tender, about 3 minutes. Drain.
  • Heat peanut oil in a nonstick skillet over medium-high heat. Add asparagus, carrots, onion, and garlic; saute until slightly tender, 3 to 5 minutes. Add chicken; toss until warmed through, about 2 minutes. Add cabbage and mushrooms. Pour in sauce; toss until coated. Reduce heat to low, cover, and cook until flavors combine, 3 to 5 minutes more.
  • Serve sauteed asparagus mixture over noodles.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles at a boil until tender yet firm to the bite, about 8 minutes; drain.
  • Melt butter in a skillet or large pot over low heat. Add bread crumbs and stir until coated in butter. Mix noodles into bread crumbs mixture. Cook, stirring occasionally, until a crust forms on the bottom, about 30 minutes; season with salt.

150g pack medium egg noodle
1 tbsp vegetable oil
2.5cm piece fresh ginger, finely chopped
2 garlic cloves, finely chopped
1 large carrot, cut into matchsticks
1 yellow pepper, deseeded and thinly sliced
100g mangetout, sugarsnaps or frozen peas
2 spring onions, finely chopped
85g beansprout (optional)
2 tbsp soy sauce
1 tsp white wine vinegar

Steps:

  • Cook the noodles according to pack instructions.
  • Meanwhile, heat the oil in a wok or large frying pan, then stir-fry the ginger, garlic, carrot, pepper and mangetout, sugar snap or frozen peas over a high heat for 2-3 mins.
  • Drain the noodles thoroughly, add to the pan with the onions and beansprouts, if using, then stir-fry for 2 mins.
  • Mix together the soy sauce and vinegar, stir into the pan, then cook for 1-2 mins. Divide between individual plates or bowls and serve immediately.

My ancestors all settled in one area, and every year, they have a festival where they serve these egg noodles in a dish referred to as chicken and noodles.

3 egg yolks
1 whole egg
1 1/2 cups flour
1/2 teaspoon salt
1 1/2 cups water

Steps:

  • Beat eggs, water, salt.
  • Add flour.
  • Mix with fork until you can use your hands. May have to add more flour if dough is not stiff enough.
  • Divide in half.
  • Roll out on newspaper, thin crispy cloth towel, or parchment paper. Roll VERY thin. Nearly paper thin.
  • Let dry until you can cut them easily.
  • Cut in strips about 1 inch wide.
  • Stack these strips on top of one another. Cut VERY thin perpendicular to strips. You will end up with noodles about 1 inch long, a fraction of an inch wide, and paper thin.
  • Put noodles in bowl and let dry for 30-60 minutes, or freeze. Best to allow to dry and then freeze.
  • To cook, drop into boiling broth or water until done. Better yet, add to the chicken and noodles recipe.

HOT GERMAN BUTTERED NOODLES



Hot German Buttered Noodles image

If you have ever been to the Bavarian inn in Frankenmuth MI this what they use on top of their hot buttered noodles (crushed Ritz buttery crackers). I can taste them just writing this. Yum Yum. I use Maggi brand chicken bullion cubes in the box of eight. You can usually find them in the Mexican section of your super market. They are extra large, really soft and dissolve easily. Do not add salt to this recipe, the bullion is loaded with it and most people use salted butter so you should be covered there. Use more butter if you like, 6 ozs seems just right for me. Enjoy

1/2 gallon water
2 chicken bouillon cubes
8 ounces extra wide egg noodles
1/2 cup water
6 ounces butter
1 teaspoon parsley
6 Ritz crackers, crushed

Steps:

  • Add 1 ½ bullion cubes to ½ gallon water in a medium pot, bring to a boil. Add noodles and set timer for 1 min longer than the longest time listed on the package, stir a couple of times while cooking.
  • While noodles are boiling add 1/2 cup water, 1/2 chicken bullion cube and butter to glass measuring cup. Microwave for 45 seconds on high, Stir. If the butter is not melted all the way microwave again for 30 seconds and mix well until bullion is dissolved.
  • When noodles are done drain water from pot but do not rinse, add butter mixture and parsley. Mix well until most liquid is absorbed, about a minute.
  • Serve immediately with crushed Ritz crackers on top.
