Time 1h25m

Yield 8

Number Of Ingredients 19

2 cups all-purpose flour
1 teaspoon salt
7 tablespoons cold vegetable shortening
6 tablespoons cold butter
6 tablespoons cold water, or as needed
3 tablespoons butter
2 carrots, diced
1 onion, diced
2 stalks celery, diced
⅛ teaspoon ground black pepper
2 tablespoons all-purpose flour
2 cups cubed cooked turkey
2 tablespoons butter
2 cups chicken broth
1 (15 ounce) can cut green beans, drained
1 (10.75 ounce) can condensed cream of mushroom soup
½ (15 ounce) can cream-style corn
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon chopped fresh thyme

Steps:

  • In a bowl, whisk together 2 cups of flour with salt. Using a pastry cutter, cut the vegetable shortening and 6 tablespoons of cold butter into the flour mixture until the butter and shortening are the size of small peas. Sprinkle on cold water, 1 tablespoon at a time, and gently gather the moistened dough together with a fork until it just begins to clean flour from the side of the bowl. Separate the dough into 2 equal-size pieces, form into rounds, and refrigerate until needed.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt 3 tablespoons of butter in a large skillet over medium heat, and cook the carrots, onion, and celery with black pepper until the onions are translucent, about 8 minutes. Transfer the mixture into a bowl; set aside. Place 2 tablespoons of flour into a resealable plastic zipper bag, and toss the cooked turkey meat into the flour; shake the bag to coat. Melt 2 more tablespoons of butter in the same skillet over medium heat, and cook the turkey meat in the butter until the flour coating turns golden brown, about 10 minutes. Pour the chicken broth into the skillet about 1/2 cup at a time, and stir until the broth begins to simmer and thicken, about 5 minutes. Remove the skillet from the heat. Stir in the cooked vegetables, green beans, cream of mushroom soup, cream-style corn, parsley, and thyme until the filling is thoroughly combined.
  • Roll out one of the dough pieces on a floured work surface to a circle about 11 inches in diameter, then fit the crust into a 10-inch pie dish. Pour the filling into the bottom crust. Roll out the second crust into an 11-inch circle, lay it on top of the filling, then pinch and fold the two crusts together at the edges to seal. Cut 5 slits into the top crust to vent steam.
  • Bake the pie in the preheated oven for 15 minutes; lower the oven temperature to 350 degrees F (175 degrees C) and bake until the filling is bubbling and the crust is golden brown, about 25 more minutes.

Provided by Jessica Fisher

Categories     Main Course

Time 1h15m

Number Of Ingredients 16

1 1/2 cup unbleached, all-purpose flour
1/2 cup butter (cut into cubes)
1/4 cup water (cold)
2 tbsp olive oil
1 onion (chopped)
3 ribs celery (chopped)
1 cup mushrooms (sliced)
1 cup carrots (chopped)
salt
black pepper
4 cup russet potatoes (cooked and cubed )
3 cup chicken (cooked and cubed) (turkey can also be used)
1 batch Homemade Cream of Chicken Soup (about 2 cups or leftover gravy)
1/2 tsp dried dill
1/2 tsp dried summer savory
1/2 tsp dried thyme

Steps:

  • Preheat the oven to 375 degrees. Spray a 9x13-inch baking pan with nonstick cooking spray.
  • Prepare the pastry crust. In a food processor fitted with a metal blade, pulse together the flour, butter, and 1/2 teaspoon salt, until coarse crumbs are formed. Alternatively, you can do this in a bowl with a pastry blender or two table knives. Add the water a few drops at a time until the dough comes together easily. Transfer the dough to a sheet of plastic wrap. Form it into a flat disk or block, wrap well, and refrigerate until ready to assemble the pie.
  • In a large nonstick skillet, heat the oil until shimmering. Add the onion, celery, mushrooms, and carrots. Saute on low for 15 minutes until the vegetables are tender and caramelized. Season to taste with salt and pepper.
  • Meanwhile, simmer the potatoes in salted, boiling water if you don't already have leftover cooked potatoes to use.
  • In a large bowl, combine the cooked vegetables, cream of chicken soup, chicken, and herbs. Pour this mixture into the prepared baking dish.
  • Transfer the dough to a lightly floured surface and roll out to a 10x14 inch rectangle.
  • Fit the dough over the top of the chicken filling. (If you're going to freeze the pie, wrap it well and store in the freezer at this point.)
  • Cut a few vent holes and bake for 45 to 60 minutes until the crust is golden brown and the filling is bubbly.
  • If baking a frozen pie, do not thaw. Place the pie in a 400 degree oven for 15 minutes. Then reduce the heat to 375 degrees and continue baking until done, about 45 minutes more.

  • Sprinkle flour on the veggies and stir to combine. Add chicken broth, stir to combine, the sauce will begin to thicken as it cooks. Add salt and pepper to taste, red pepper flakes, bay leave and stir to combine. Lastly, add the half and half then give a good stir to combine. Reduce the heat and simmer on medium-low heat for another 8 to 10 minutes. check and adjust seasoning to taste. If the sauce is getting too thick at this point, add water or broth to lighten it. Take it off the heat and serve immediately. Enjoy

  • Heat butter in a large saucepan over medium heat. Cook onion, carrot and celery until soft, about 7 minutes. Sprinkle vegetables with flour and stir to coat. Cook, stirring, for a minute, then add the broth, milk and cream. Bring to a simmer, add pepper and salt to taste. Add potato, cover, and cook until tender, about 12 minutes.
  • Remove from heat and stir in frozen peas, leftover turkey and herbs. Let cool for 30 minutes (or see note in post).
  • Meanwhile, preheat oven to 375ºF with a baking sheet or pizza stone placed on the lowest oven rack. Roll out bottom pie crust (if using) to about 12" and gently transfer to a 9x2" pie dish. Chill in the freezer for 10 minutes. When filling has cooled and oven is hot, pour filling into frozen pie crust. Roll out top crust slightly larger than the pie plate and drape it over the filling, pinching it together with bottom crust. Cut a few slits for steam vents and brush with egg wash. Bake on preheated baking sheet/stone for about 35 minutes, until crust is golden and filling is bubbling out.

  • Cut chicken breast into bite sized pieces, season with kosher salt and pepper. Prepare a large, deep pan with a little bit of olive oil (2tsp or so) and cook chicken bites over medium heat for about 3 minutes on each side until browned and cooked through. Remove chicken bites from the pan and set aside.
  • In the same pan, add 1 tablespoon of butter, chopped shallots and carrots. Cook over medium-low heat until softened, about 5 minutes. Then add the peas and corn, as well as the rest of the butter. As the butter melts, mix in the 2 tablespoons of flour until all the veggies are coated.
  • Add broth and simmer (small bubbles, not a boil) for 1-2 minutes, stirring so the flour gets smooth and not clumpy. Stir in milk as it starts to thicken, then add thyme, and more salt and pepper if desired. Simmer for 8-10 minutes, stirring often, until the sauce is nice and thick, enough to coat a spoon. Add cooked chicken into the mixture.
  • Spoon chicken pot pie filling into individual, oven-safe ramekins. Top with panko and broil under high heat for about 1 minute until lightly browned. Serve warm.

  • Preheat your oven to 475 degrees. Grab an oven safe skillet and place it on an element over medium high heat. Add butter and wait for it to melt. Next, cook onion and celery until tender. No more then 5 minutes. Stir in flour and cook until a light brown color. Around 1 minute or so. Add broth and cream and simmer until it thickens, about 7 minutes. Add shredded chicken or turkey and the peas and carrots. Stir until coated and evenly distributed throughout.
  • Combine stuffing with the egg in large bowl. Mix until blended. I usually use my hands to do this. I find it much quicker. Tear off two pieces of parchment paper and place stuffing in between the two sheets. Using a rolling pin flatten the stuffing so it is large enough to cover the top of your skillet. Try and make the stuffing into a circle. Remove top piece of parchment paper and flip on top of your full skillet. Mine is never perfect, just do your best. Feel free to cut stuffing in half and then flip it on top. Whatever you think is easier. Make sure that all of the stuffing is inside your skillet and not hanging over when you are baking it in the oven.
  • Turkey pot pie is the perfect dish to make the day after Thanksgiving. It uses both leftover turkey and stuffing, and our Turkey Pot Pie with Stuffing Crust recipe uses just two dishes and cooks up in less than 30 minutes. Although leftover homemade stuffing works best here, one 6-ounce box of stuffing mix, prepared according to package instructions and chilled, will suffice. For this recipe, a 12-inch oven safe skillet is the best choice.
  • Bake until stuffing is a beautiful golden brown color and crisp, around 15 minutes. Serve and enjoy!
