CRUSTLESS FETA AND CHEDDAR QUICHE
Sonoma Diet, all waves. Also for those who love cheese. This has nice flavor, but if you wish, you could be little more generous with the herbs. This serves great with a light side salad or a piece of whole grain toast, which are acceptable for waves 2 and 3 if you are following the Sonoma diet.

Steps:
- Preheat oven to 350°F
- Lightly coat a 9 inch pie plate with cooking spray.
- In a medium bowl combine eggs, pastry flour, garlic, dillweed, pepper, and kosher salt.
- Stir in cottage cheese, broccoli, feta, and cheddar.
- Spoon into the pie prepared plate.
- Bake for 40-50 minutes or until a knife inserted near the centre comes out clean.
- Cool on a wire rack for 5-10 minutes before serving.

CRUSTLESS QUICHE #2 W/BACON AND FETA
This is another version of my other recipe for Crustless Quiche - this one is lower in fat as it has no butter, feta instead of cheddar and a bit of bacon.

Steps:
- Whip eggs and milk. I use KitchenAid.
- Add flour, whip some more.
- Stir in cheese, bacon, potato and onion.
- Add salt, pepper, basil.
- Pour into a pie dish and bake at 375F for 45 minute.
CRUSTLESS BACON AND POTATO QUICHE
I made this for a church dinner by compiling my favorite parts of 2 different egg casseroles. The dish was scraped clean! This is good for Brunch, or for a main dish.

Steps:
- Preheat oven to 350^. Spray 11x7 glass baking dish w/cooking spray. In baking dish, layer potatoes.
- In medium bowl, beat eggs, cottage cheese, oregano, and garlic powder w/wire whisk until well blended. Add green peppers, mushrooms, cooked bacon, and onions (withhold a few tablespoons of the green chives to sprinkle on top after baking).
- Pour egg mixture over the top of the hashbrowns. Top with shredded cheese. Bake for 30 minutes, or until knife inserted in center comes out clean. Top with the remaining chives and tomatoes, if desired. Let stand 5-10 minutes before cutting.

Steps:
- HEAT oven to 325 degrees F.
- RESERVE 2 tablespoons each onions and tomatoes. Cook bacon in large skillet until crisp. Remove bacon from skillet, reserving 1 tablespoons drippings in skillet. Drain bacon on paper towels. Add mushrooms to reserved drippings; cook and stir 2 minute or until tender. Remove from heat. Crumble bacon. Add to skillet with remaining onions and tomatoes; mix well.
- BEAT eggs and sour cream with whisk until well blended. Pour into greased 13x9-inch baking dish; top with bacon mixture and cheeses.
- BAKE 30 minute or until center is set. Top with reserved onions and tomatoes. Let stand 5 minute before cutting to serve.

- Preheat oven to 350F/175C and spray a 9 inch or 9.5 inch glass or crockery pie pan with non-stick spray.
- Cut the bacon into short thick slices and cook it in a hot frying pan until bacon is completely cooked and nicely crisp and browned.
- Drain the cooked bacon on paper towels (or not, if you prefer to keep the fat) and put the browned bacon in the bottom of the pie pan, reserving a little bacon to sprinkle on the top.
- You may want to remove some bacon fat if there seems to be too much. Brown the mushrooms in the bacon fat over medium-high heat until they are completely cooked and starting to brown.
