No Crust Coconut Pie image

This pie is yummy and makes it's own crust. It usually lasts only a day at our house when I make it.

4 eggs, beaten
¼ cup butter
½ cup self-rising flour
1 teaspoon vanilla extract
1 ¾ cups white sugar
2 cups milk
7 ounces flaked coconut

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, combine eggs, butter or margarine, flour, vanilla, sugar, milk and coconut. Mix well.
  • Pour into 10 inch deep dish pie plate.
  • Bake at 325 degrees F (165 degrees C) for 30 to 40 minutes. Crust will form on the bottom.

1/2 cup butter, melted
1 cup sugar
1/2 cup flour
1 teaspoon vanilla

Steps:

  • In blender, combine all ingredients, cover and process until smooth.
  • Pour into greased 9" deep dish pie plate.
  • Bake at 350° for 50 minutes or until knife inserted near center comes out clean.
  • Cool on wire rack for 1 hour.
  • Refrigerate until serving.

I got this recipe from my Mother-In-Law who was a great cook. Everyone in the Family loves it and it is often requested for covered dish meals at our church dinners.

3 eggs
1 stick margarine
1 tsp vanilla extract
1 1/2 c sugar
3 Tbsp self rising flour
1-12 0z can(s) evaporated milk

Steps:

  • 1. Melt margarine. Mix with flour and sugar. Add eggs one at a time. Add evaporated milk and flavoring.
  • 2. Pour into greased pie plate. Bake at 350 degrees for 30 min or till set.
  • 3. For Coconut pie... Add 1 cup coconut to ingredients. For Chocolate Pie...Add about 3-4 Tablespoons of Cocoa to flour and surgar and continue with recipe.

This classic Egg and Bacon Impossible Pie (also known as a Crustless Quiche) is the perfect budget meal. It's made using six ingredients and can be ready in one hour.

5 rashers short cut bacon (Roughly chopped)
1 brown onion
1 & 1/2 cups tasty cheese (grated)
1/3 cup self raising flour
4 eggs
1 & 1/2 cups milk
salt and pepper (to taste)
3 sprigs of parsley (optional)

Steps:

  • Lightly grease a 5 cup capacity pie dish and preheat your oven to 200 degrees celsius (fan-forced)
  • Dice the bacon and finely chop the brown onion before placing into a frying pan and cooking for 5 minutes over a medium heat until the onion turns translucent and the bacon begins to brown.
  • Add the cooked bacon and onion to a bowl along with the grated cheese and flour and mix until all the ingredients are coated in flour before seasoning with a little salt and pepper.
  • Scatter these ingredients across the base of the pie dish.
  • In a large jug, whisk together the eggs and milk before carefully pouring it over the mixture in the pie dish and garnish with parsley.
  • Place the pie into your preheated oven and bake for 40 minutes or until the pie has risen and is golden.

2 tablespoons unsalted butter
5 tomatoes, ripe, thinly sliced and seeded
3 1/2 ounces emmenthaler cheese, thinly sliced

Steps:

  • Preheat oven to 400 degrees. Spread the cubed bread out on a baking sheet and bake for 2 to 3 minutes. or until it is golden all over.
  • Beat the eggs, with the milk, salt, and pepper, set aside.
  • Place a 9" non stick cake pan in the oven: when it is hot, brush it with the butter, coating the sides and bottom evenly(use a pastry brush for this purpose, but be aware that the bristles might warp on contact with the hot pan).
  • Arrange the tomato slices on the bottom of the cake pan, top with the Emmental, and finish with the cubed bread.
  • Pour the beaten eggs into the cake pan; bake 20 minutes, or until set. Unmold and serve hot or warm.
