2 cups cold milk
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
2 chocolate-covered toffee bars (1.4 oz. each), chopped, divided
1 ready-to-use reduced-fat graham cracker crumb crust (6 oz.)
1 oz. BAKER'S Semi-Sweet Chocolate, melted

Steps:

  • Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in half the COOL WHIP and all but 3 Tbsp. toffee.
  • Pour into crust.
  • Refrigerate 1 hour.
  • Top with remaining COOL WHIP, toffee and melted chocolate before serving.

2 cups cold 2% milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1/2 cup sour cream
2 medium firm bananas, sliced
1 cup sugar
1 cup chopped pecans
1 large egg, lightly beaten

Steps:

  • In a large bowl, whisk the milk, pudding mixes and sour cream for 2 minutes. Let stand for 2 minutes or until thickened. Fold in bananas. Pour into a 1-1/2-qt. bowl. Cover and refrigerate until serving., For topping, combine the sugar, pecans and egg. Spread into a greased 15x10x1-in. baking pan. Bake at 350° for 20 minutes or until browned and crunchy. Cool., Using a spatula, loosen pecan mixture from pan and break into small pieces. Sprinkle over pudding just before serving.

This was my ex father in law's recipe for Yorkshire puddings. He was a career cook in the Canadian military. These always turn out light and crispy. Great with a roast dinner and lots of gravy!

2 eggs (at room temperature)
1 teaspoon salt
1 1/3 cups milk (at room temperature)
1 cup flour

Steps:

  • Beat the eggs together until light.
  • Beat in the remaining ingredients well.
  • Let stand, covered for 1 hour.
  • (This is a really important step) Fill muffin tins 1/4 full of oil or drippings and put into a hot oven until the fat is sizzling hot.
  • (450*F) Fill each muffin cup half full of batter, Place in a 450*F oven and bake for 20 minutes, gradually lowering the oven temperature every 5 minutes by 25 degrees until puffed, crispy and brown.

  • Sauce: In small saucepan over medium heat, add the cream, milk and 1 Tbsp. of the sugar. Heat until bubbles form around edge of the pan.
  • Meanwhile, in a separate bowl, whisk the egg yolks with the remaining 1 Tbsp. of sugar. When cream mixture is ready, whisk a small amount into the egg mixture, then add more, a bit at a time, until you have added about 1/2 a cup or so. Stir the tempered egg mixture back into pan with the rest of the cream and cook, stirring constantly, until thick enough to coat spoon, about 2 to 3 minutes. It shouldn't boil. (Test by dipping a spoon into mixture. It should coat the spoon and you should be able to run your finger through it and it will leave a clear line).
  • Pour sauce through a fine-mesh strainer and in to a bowl. Stir in vanilla and alcohol (if using). Place plastic wrap directly onto the surface of the sauce and refrigerate until cold, at least 1 hour. Sauce will thicken slightly as it cools. (You can make ahead. Will keep covered in the refrigerator for up to 3 days.)
