CHEESY SCALLOPED POTATOES
This scalloped potatoes recipe is quick and easy to put together yet tastes incredibly delicious!

Steps:
- Preheat oven to 375°F.
- Wash potatoes and slice ¼″ thick (no need to peel). Drop into boiling water for 5 minutes. During the last minute, add sliced onions to the water. Drain.
- Meanwhile, combine soup, milk, pepper and garlic powder in a bowl. Microwave until hot.
- Put a little bit of the soup mixture in the bottom of a greased 2 QT casserole dish, a 9×9 pan, or an oven-safe pan. Layer ½ of the potatoes, ½ of the soup mixture, and ½ of the cheese. Repeat layers ending with cheese.
- Bake at 375°F for 45-55 minutes or until hot and bubbly.

- Place a third of the potatoes in a shallow 3-qt. baking dish coated with cooking spray. In a small bowl, combine the flour, salt and pepper; sprinkle half over potatoes. - Preheat oven to 350°. In a Dutch oven, melt butter over medium heat. Add onion, mustard, salt and pepper; cook until onion is tender, 6-8 minutes. Add garlic; cook until fragrant. Whisk in flour; continue whisking 3-5 minutes., Whisk in milk; bring to a boil. Reduce heat; simmer, uncovered, until thickened slightly, 8-10 minutes. - Preheat the oven to 375 degrees F (190 degrees C). Grease a casserole dish.
- Arrange sliced potatoes in the casserole dish; season with salt.
- Melt butter in a saucepan over medium heat. Stir in flour until a paste forms. Pour in milk gradually, stirring constantly, until a thick white sauce forms, about 5 minutes. Stir in cheese and remove from heat. Pour sauce over the potatoes.

FOUR-CHEESE SCALLOPED POTATOES

- Position a rack in the upper third of the oven and preheat to 425 degrees F. Generously brush a large skillet with butter, then rub with the garlic. Combine the mozzarella, asiago and raclette in a bowl.
- Heat the skillet over medium-high heat. Add half of the potatoes, spreading them out. Sprinkle with 3/4 teaspoon salt, half of the cut-up butter, half of the shredded cheese blend, and pepper to taste. Arrange the remaining potatoes on top. Sprinkle with 3/4 teaspoon salt, and pepper to taste. Pour the cream over the potatoes, then add the nutmeg and bay leaves; simmer 3 minutes. Dot the potatoes with the remaining cut-up butter.
- Generously brush a shallow baking dish with butter; slide the potatoes into the dish; arrange with a fork, if desired. (If your skillet is ovenproof, you can skip this step and bake the potatoes in the skillet.)
- Sprinkle the potatoes with the parmesan and the remaining shredded cheese blend. Bake until golden, about 25 minutes. Let rest 5 minutes before serving. Discard the bay leaves.

- Preheat oven to 350 degrees F. Cook onion in butter until soft, add flour and cook for 2 minutes, whisking. Whisk in milk and cook until thick and bubbly. Remove from heat and add 3/4 cup of cheese, stirring until melted; season with salt and pepper. Layer half of potatoes in a baking dish and sprinkle with salt and pepper. Cover with half of sauce. - Preheat oven to 350°F
- Spray 2-qt. baking dish with nonstick cooking spray; set aside.
- In small saucepan over medium heat, melt butter.
- Stir in flour, salt and pepper until smooth.
- Gradually stir in milk.
- Bring to a boil, stirring frequently.
- Boil 2 minutes until thickened, stirring constantly.
- Add cheese and chives; stir until cheese is melted.
- Arrange potato slices in prepared baing dish.
- Spoon cheese-chive mixture over potato slices.

RACHAEL RAY'S CHEESY SCALLOPED POTATOES
This recipe comes from Rachael Ray's "Everyday" magazine. This was in the December 2008 holiday edition. I used this recipe on Christmas day and it makes by far the best scalloped potatoes I've ever had. I will be doubling the recipe in 2009. The Gruyere cheese takes this recipe over the top! However, it is a bit on the pricey side.

- Place a rack in the top half of the oven and preheat to 375°. In a large saucepan, combine 2 cups water with the milk, garlic and 1/2 teaspoon salt. Add the potatoes and bring to a boil over medium-high heat, stirring occasionally to prevent the potatoes from sticking to the bottom of the pan. Reduce the heat to medium and simmer until the potatoes are tender but still slightly firm, about 8 minutes.
- Remove the saucepan from the heat and, using a slotted spoon, transfer half the potatoes to a buttered 9-by-13-inch baking dish; arrange the potatoes in an even layer. Sprinkle with half the cheese and the cayenne; season with salt and pepper to taste. Repeat with the remaining potatoes and sprinkle with the remaining cheese. Pour the heavy cream evenly over the top. Bake the scalloped potatoes until golden and crisp on top, 40 to 45 minutes. Let stand for 5 minutes before serving.

- Slice potatoes to 1/8inch slices into a bowl and set aside.
- Preheat oven to 350'.
- In a medium to large pot, melt butter over medium heat.
- Add green onions,red pepper and minced garlic, cook for 2 minutes.
- Add whipping cream, milk,salt and pepper and stir well.
- Add potatoes and bring to a boil, turn heat to low temp and cook for 13 minutes or until tender.
- Spray a 11x7x1 1/2in.dish with Pam.
- Add potato mixture to dish,sprinkle pamersan cheese and swiss cheese over potatoes.
- Bake for 45 minutes, or until lightly golden brown.
- Carefully watch the cheese to keep from browning to dark.
- Let stand 10 minutes before serving.
- Note:May add shredded cheddar cheese or favorite cheese, when applying cheese to casserole before baking.
- Add alittle water to potatoes while boiling if necessary.

- Melt butter. Add flour and stir while cooking over low heat until golden brown.
- Add milk. Stir until thickened. If necessary, add more milk.
- Add dry mustard, A-1, salt, and pepper. Stir well. Reduce heat to low.
- Peel and slice potatoes into thin, even ovals.
- Lay into a greased or pammed 10×13 pan. Pour sauce over potatoes.
- You may not need it all. Reserve extra for mac-n-cheese tomorrow.
- Sprinkle cheddar cheese over top.
