POTLUCK TACO SALAD
I found this recipe in an old school cookbook, and I've taken it to many potlucks since then. The layers look so pretty in a glass bowl. -Sandy Fynaardt, New Sharon, Iowa

Steps:
- In a large skillet, cook and crumble beef over medium heat until no longer pink, 6-8 minutes; drain. Stir in 3 tablespoons taco seasoning., In a large bowl, layer beef mixture, lettuce, beans, onion, tomatoes, cheese and crushed chips. In a small bowl, mix salad dressing, taco sauce and remaining taco seasoning; serve with salad.

- In 10-inch skillet, cook beef and taco seasoning mix as directed on seasoning mix package. Set aside to cool. In large bowl, gently mix lettuce, tomatoes, olives, onions and cheese. Add beef mixture; stir gently to mix. Just before serving, add dressing and chips; toss. Eat it all up! This salad does not keep in the refrigerator. Make sure to toss immediately before serving. This salad can be customized to your family's favorite taco ingredients.

- Place ground beef in a large skillet over medium-high heat. Cook until browned and crumbly, about 8 minutes; drain. Add taco seasoning mix and water to ground beef in skillet. Simmer mixture, stirring occasionally, for 2 to 4 minutes. Combine lettuce, bell pepper, tomatoes and green onions in a large salad bowl and toss to mix well. Add ground beef mixture, Cheddar and corn chips and toss lightly to mix. Serve with taco sauce or ranch salad dressing. Variation: Add shredded carrots, cauliflower florets or torn spinach to taste.

- Place all of your spices in a bowl and mix it up. Crumble your raw ground beef into your crock. Sprinkle your seasoning onto your beef and stir it up. Cook high for 1 hour to "brown" the beef a bit. Stir it up and break it up a bit. Then, cook it on low for 5-6 hours, or on high for 2.5 to 3 hours. Drain out the grease before serving. Take your bag of Doritos, open it up and crush up the chips. Then fill it with meat, cheese, and toppings of their choice. Stir it up, and that's it!
CHEESY CRUNCHY TACO SALAD
This is a big hit at BBQ's and potlucks. It is great since noone often brings a salad like this so you dont have to worry about having a duplicate recipe. Also great for a hot weather family meal. Everyone loves it. For vegetarians you can easily omit the meat and mix in a can of black beans instead.
