CRISPY PORK WITH SAUCY SPICY NOODLES



Crispy pork with saucy spicy noodles image

Crispy fried pork served with saucy, spicy noodles is a delicious dinner and perfect substitute for your favorite takeout.

1 tbsp sesame oil
2 tsp chilli oil
3 garlic cloves (crushed)
1/3 cup soy sauce
1/3 cup hoisin sauce
1 tbsp rice vinegar
3 tbsp honey
2 tsp chilli flakes
1 cup water
2 tsp cornstarch / cornflour
500 g (1lb) pork tenderloin (cubed )
2 eggs
1 tbsp soy sauce
½ cup flour
½ cup cornstarch
1 tsp salt
500 g noodles (cooked and drained)
spring onion/green onion (finely chopped )

Steps:

  • In a large pan, heat the sesame and chilli oils together then add the garlic.
  • Cook until fragrant (30 seconds, or so) then add the soy sauce, hoisin sauce, rice vinegar, honey and chilli flakes.
  • Mix cornstarch with water to make a slurry then add and allow to simmer. Cook for a few minutes until the sauce has thickened slightly. Set aside.
  • Chop the pork into bite-size chunks. In a large bowl, whisk together the eggs and soy sauce.
  • In a separate bowl, whisk the flour, cornstarch and salt together. Coat the pork first in the flour, then in the egg and finally in the flour again.
  • Heat a large pot of vegetable oil over high heat and once hot, carefully add the pork in batches and fry until golden brown and cooked through, approximately 5-7 minutes.
  • Remove with a slotted spoon and allow to drain on a wire rack set over a sheet pan.
  • Cook the noodles in a large pot of salted water until al dente then drain. Toss the noodles with the sauce.
  • Serve the noodles and sauce in bowls topped with crispy pork and spring onion.

1 8-ounce package thin Chinese noodles
1/4 cup plus 2 teaspoons vegetable oil
12 ounces ground pork
1 tablespoon minced peeled fresh ginger
1/4 cup low-sodium chicken broth
1/2 cup chopped bread-and-butter pickles, plus 1/4 cup brine from the jar
1/4 cup plus 2 tablespoons low-sodium soy sauce
1/4 cup toasted sesame seeds
1 tablespoon Asian chili-garlic sauce
2 teaspoons packed light brown sugar
2 Persian cucumbers, halved lengthwise and thinly sliced
1 cup cherry or grape tomatoes, chopped

Steps:

  • Bring a large pot of water to a boil. Add the noodles and cook as the label directs. Drain and toss with 2 teaspoons vegetable oil.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the pork and 2 teaspoons ginger; cook, breaking up the meat with a wooden spoon, until lightly browned, about 3 minutes. Add the chicken broth, pickles and 2 tablespoons each pickle brine and soy sauce and cook, scraping up any browned bits, until the liquid evaporates, about 4 minutes.
  • Meanwhile, puree 3 tablespoons toasted sesame seeds in a blender until finely ground, about 15 seconds. Add the remaining 3 tablespoons vegetable oil and puree until smooth. Add 1/4 cup water, the chili-garlic sauce, brown sugar and the remaining 1/4 cup soy sauce, 2 tablespoons pickle brine and 1 teaspoon ginger; puree until combined.
  • Top each serving of noodles with the sesame dressing, pork, cucumbers and tomatoes. Sprinkle with the remaining 1 tablespoon sesame seeds.

1 (60 g) package dried egg noodles (60g)
250 g pork mince
1 small red onion, chopped finely (100g)
2 garlic cloves, crushed
2 teaspoons grated fresh gingerroot
1/3 cup coarsely chopped fresh coriander leaves
1 egg yolk
1/4 cup plain flour (35g)
1 teaspoon sambal oelek
1 teaspoon fish sauce
1 teaspoon salt
peanut oil, for deep-frying
1/3 cup sweet chili sauce (80ml)
2 tablespoons lime juice

Steps:

  • Crumble noodles in a large heatproof bowl, cover with boiling water; stand for five minutes or until tender; drain.
  • Combine the noodles with the pork, onion, garlic, ginger, coriander, egg yolk, flour, sambal oelek, fish sauce and salt in a bowl; mix well. Roll teaspoons of the mixture into balls.
  • Deep-fry pork balls in hot oil, in batches, until browned and cooked through. Serve pork balls with thecombined chilli sauce and lime juice.

3 tbsp sesame oil
350g lean pork mince
350g egg noodles
thumb-sized piece ginger, peeled and chopped, or 1½ tbsp ginger purée
3 garlic cloves, crushed, or 1 tbsp garlic purée
320g stir-fry veg (we used 2 x 160g bags of mangetout, baby sweetcorn, beansprouts, carrots and peppers)
4 tbsp low-salt soy sauce
2 tsp cornflour
4 tbsp sweet chilli sauce

Steps:

  • Heat the oil in a wok or frying pan. Add the mince, break it up with a spoon and fry over a high heat for about 8 mins until browning. While the meat cooks, boil a kettle, then pour the hot water over the noodles. Set aside for 5-10 mins to soften.
  • Add the ginger, garlic and veg to the pan and stir-fry for 2-3 mins. Mix 1 tbsp soy sauce with the cornflour to make a paste. Add the remaining soy sauce, the chilli sauce and 2 tbsp water. Drain the noodles and add to the pan with the sauce. Cook until the sauce coats the noodles, adding a splash of water if needed, then serve.

¼ cup soy sauce
½ tablespoon Frank's Red Hot Original Sauce
2 tablespoons brown sugar
1 tablespoon chili oil
2 tablespoons rice vinegar
1 tablespoon vegetable oil
2 tablespoons ginger, minced
4 cloves garlic, minced
1 lb ground pork
1 teaspoon cornstarch, stirred into 1 tablespoon water
8 oz rice noodle, cooked
2 carrots, peeled into thin strips
2 persian cucumbers, cut into 3 in (7 cm) matchsticks 4 scallions, thinly sliced on a bias
½ cup fresh cilantro leaves
½ cup roasted peanut, chopped
lime wedge

Steps:

  • In a small bowl, whisk together soy sauce, Frank's Red Hot Original, brown sugar, chili oil, and rice vinegar until sugar dissolves. Set aside.
  • In a skillet or wok, heat the vegetable oil over high heat. Add ginger and garlic and let sizzle for one minute. Add ground pork and quickly start stir-frying. Continually toss the pork until almost no pink remains in the meat. Pour in the sauce, bring to a simmer, and continue stirring the pork. Pour in the dissolved cornstarch. Stir until sauce thickens slightly, then remove from heat.
  • Assembly: Pile rice noodles in each bowl. Spoon pork with sauce on top of noodles. Place carrots and cucumbers in small piles. Garnish with scallions, cilantro, and peanuts. Serve with lime wedges on the side.

From Easy Asian Cookbook. YUM! This recipe is for deep fried meatballs made of ground pork and noodles. The recipe called for hokkien egg noodles, but since I couldn't find any, I substituted eggless chow mein noodles and they worked great.

9 ounces chow mein noodles
10 1/2 ounces ground pork
6 scallions, finely chopped
2 garlic cloves, crushed
4 tablespoons finely chopped cilantro
1 tablespoon fish sauce
2 tablespoons oyster sauce
1 1/2 tablespoons lime juice
peanut oil, for deep frying
1/3 cup chili sauce
2 teaspoons mirin
2 teaspoons ginger, finely chopped
1/2 cup Japanese soy sauce

Steps:

  • Prepare the dipping sauce by combining the sweet chilli sauce, mirin, ginger and soy sauce. Set aside.
  • Place the noodles in a bowl and cover with boiling water. Soak until tender then drain and pat dry. Cut into 2" lengths.
  • Preheat peanut oil in a wok to 350 degrees.
  • To the noodles, add the pork, scallion, garlic, coriander, fish sauce, oyster sauce and lime juice and combine well.
  • Roll the noodle and pork mixture into tablespoon sized balls.
  • Deep fry the balls in batches for 2-3 minutes or until golden and cooked through.
  • Drain on paper towel and serve with dipping sauce.
