These delicious bars are great holiday treats, but the kids like them all year long. I used this recipe over and over when our five children were at home. Now I'm thrilled to bake a batch for my grandchildren. -Geraldine Grisdale, Mt. Pleasant, Michigan

2-3/4 cups all-purpose flour
1 cup packed brown sugar
1 large egg
1/2 cup butter, softened
1/2 cup shortening
1/2 cup chunky peanut butter
1 teaspoon vanilla extract
1/2 teaspoon salt
TOPPING:
1 cup semisweet chocolate chips, melted
1/2 cup chunky peanut butter
1-1/2 cups crushed cornflakes

Steps:

  • In a large bowl, combine the first eight ingredients; beat until crumbly. Press into an ungreased 9-in. square baking pan., Bake at 350° for 25-30 minutes or until set. Cool for 5 minutes. Meanwhile, in a small bowl, combine chocolate chips and peanut butter; stir in cornflakes. Gently spread over top. Let stand until set. Cut into bars.

Number Of Ingredients 9

1 Devil's Food Cake mix (ONLY the powder mix, not the other ingredients listed on the box)
1/3 cup butter, melted
1 egg
3/4 cup peanut butter (I prefer crunchy, but it's up to you!)
2 teaspoons vanilla
3 cups powdered sugar
1/2 cup whipping cream
optional: 2 tablespoons of milk for thinning if necessary
1 recipe of my Chocolate Ganache, prepared OR 1 can of store-bought chocolate frosting

Steps:

  • Preheat oven to 350ºF. Line a 9x13 baking dish with parchment (foil is ok too, but it will stick slightly to the bottom of the bars) and lightly spray with non-stick cooking spray.
  • In a very large bowl mix together cake mix, melted butter, and egg until a dough forms.
  • Press dough evenly into the prepared dish. Bake for 12 minutes.
  • Cool completely in pan.
  • In a large bowl combine peanut butter and vanilla. Beat with an electric mixer on medium speed for 30 seconds. Add powdered sugar and whipping cream and beat until smooth (with the exception of crunchy peanut butter chunks), scraping bowl occasionally. If mixture is too thick, add 1-2 tbsp of additional milk to thin it.
  • Spread mixture evenly over the cooled cake mix crust.
  • Place bars in the refrigerator while preparing the ganache. Or simply heat a can of store-bought chocolate frosting in the microwave for 30 seconds to soften!
  • Spread the ganache or frosting over the peanut butter layer. Refrigerate for 2-3 hours, or until ganache is set and peanut butter layer is chilled.
  • Cut into bars and serve!

1-1/2 cups cornflakes
1/4 cup Spanish peanuts
1/2 cup milk chocolate chips, melted

Steps:

  • In a large saucepan over medium heat, bring corn syrup and sugars to a boil. Remove from the heat; stir in peanut butter. Fold in cornflakes and peanuts., Gently press into a 9x5-in. loaf pan coated with cooking spray. Spread melted chocolate evenly over top. Cover and refrigerate for 1 hour or until firm. Cut into bars.

No-Bake Peanut Butter Crunch Bars image

No-bake and easy-to-make, these healthier Peanut Butter Crunch Bars come together with real food ingredients and are the perfect treat for any time of the year.

2 cups quick oats
1 cup crisp rice cereal*
1/3 cup unsweetened shredded coconut (may sub additional crisp rice cereal)
1/3 cup flaxseed meal
1 Tbsp. chia seeds
1 cup + 2 Tbsp. creamy peanut butter
1/3 cup honey (may sub maple syrup for vegan-friendly)
2 Tbsp. virgin coconut oil, melted
1 ½ tsp. pure vanilla extract
1-2 Tbsp. water
4 Tbsp. chocolate chips
1 tsp. coconut oil

Steps:

  • In a medium bowl combine the quick oats, rice krispies, coconut, flaxseed meal, and chia seeds. Stir to combine then add the rest of the bar ingredients (except for the water). Mix well. The dough should stick together easily. If not, mix in 1 Tbsp. of water at a time until dough sticks together nicely.
  • Line an 8×8 or 9×9 pan with parchment paper so that paper overlaps edges. Transfer the dough to the pan. Spread the dough out evenly and with your hands press dough VERY firmly into the pan.
  • Place pan in the freezer for at least 30 minutes (this can be done the day before or even a few days before).
  • For the chocolate drizzle: combine the chocolate chips and coconut oil in a small saucepan over low heat. Stir continuously until smooth and drizzly. You may also use a microwave at 50% power for 30-second increments stirring between each increment until smooth and drizzly.
  • After bars have been in the freezer, remove the bars from the pan by grabbing onto the parchment paper flaps and place on a cutting board.
  • Drizzle the chocolate evenly over the bars. The chocolate should harden quickly since the bars are cold.
  • With a sharp knife, cut the bars into 16 squares. Serve and enjoy!
  • Bars hold together best when stored in the fridge or freezer.

1 cup chunky peanut butter
2 cups powdered sugar
One 12-ounce box vanilla wafers
One 12-ounce bag mini semisweet chocolate chips
2 cups semisweet chocolate chips
1/2 cup creamy peanut butter
1/2 cup chopped peanuts

Steps:

  • For the filling: Grease a 9-by-13-inch pan with some butter.
  • Using a stand or electric hand mixer, mix together the butter and chunky peanut butter until smooth. Stir in the sugar a cup at a time.
  • Add the vanilla wafers to a food processor and process until they are in crumbs. Then add the crumbs and mini chocolate chips to the peanut butter mixture. Spread it evenly into the buttered pan and set aside.
  • For the frosting: Using a double boiler or a microwave, melt the chocolate chips and creamy peanut butter. Allow to cool for a couple of minutes, then pour over the base. Spread the frosting out evenly and sprinkle over the chopped peanuts. Refrigerate for at least 1 hour, then cut into 20 bars.

Steps:

  • Heat oven to 350°F.
  • Combine dry cake mix, butter and 1/3 cup milk; press 2/3 onto bottom of 13x9-inch pan. Bake 12 to 14 min. or until center is almost set; cool 3 min.
