2 skinless, boneless chicken breast halves - cut into strips
1 tablespoon olive oil
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ cup salsa
2 pita breads
8 ounces diced tomato
1 cup shredded lettuce
½ cup sliced avocado
2 tablespoons low-fat sour cream

Steps:

  • Cut chicken into strips. In a skillet, saute in hot oil until almost done. Sprinkle garlic powder, onion powder, salt, ground black pepper and cayenne pepper over chicken. Add salsa and simmer until done (about 5 minutes).
  • Split pitas in half, fill with chicken and garnish with tomatoes, lettuce, avocados and sour cream. Add whatever garnishes you like and eat!

1/4 cup mayonnaise
1/4 cup ranch salad dressing
4 pita breads (6 inches), halved
8 lettuce leaves

Steps:

  • In a large bowl, combine the chicken, cucumber, grapes, carrots and walnuts. Combine mayonnaise and ranch dressing. Pour over chicken mixture; toss to coat. , Line pita halves with lettuce; spoon about 1/2 cup chicken salad into each. Refrigerate until serving.

3 pita breads (6 inches)
1/4 cup olive oil
1/4 cup balsamic vinegar
3 tablespoons lemon juice
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
2 garlic cloves, minced
2 teaspoons grated lemon zest
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cooked chicken
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 English cucumber, halved and sliced
1 pint cherry tomatoes, halved
1 small red onion, quartered and sliced
1/2 cup crumbled feta cheese

Steps:

  • Cut each pita bread into eight triangles; split in half. Place on a baking sheet. Bake at 350° for 10-12 minutes or until lightly toasted. , For dressing, in a small bowl, whisk the oil, vinegar, lemon juice, oregano, garlic, lemon zest, sugar, salt and pepper. , In a large bowl, combine the chicken, garbanzo beans, cucumber, tomatoes and onion. 1 tablespoon olive oil
1 1/2 pounds boneless, skinless chicken breasts, cut into about 1/2 inch cubes*
1/2 cup mayonnaise
1 cup chopped celery
1 cup chopped red onion
3 large hard-boiled eggs, chopped
3/4 teaspoon dried dill weed
1/8 teaspoon garlic powder
Salt and black pepper, to taste

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add chicken and cook, stirring constantly until chicken is cooked thoroughly and no longer pink (about 7 to 8 minutes). Drain off juices and allow to cool.

4-5 cups Taylor Farms Romaine Hearts , chopped into bite-sized pieces
1/2-1 whole English cucumber, cut in half lengthwise and sliced
1/2-1 whole pint grape tomatoes, halved
1/2 medium red onion, thinly sliced
1/2 - 3/4 cup feta cheese, optional (use more or less to taste)
3-5 whole wheat pitas
oil and vinegar or Greek dressing (*my simple vinaigrette dressing recipe is below)

Steps:

  • Place chopped romaine, cucumber, tomatoes, onion, and feta into a large salad bowl. Top with a bit of dressing and toss to combine.
  • Slice pitas in half and carefully fill each pocket with a generous amount of salad. Top with extra dressing if needed. Best if eaten right away.
