GRILLED PORTOBELLO MUSHROOM STEAKS

Grilled Portobello Mushroom Steaks image

These Grilled Portobello Mushroom Steaks are perfect for indoor or outdoor grilling. It's an easy recipe that takes less than 30 minutes from start to finish. Just marinate, grill and enjoy!

Provided by Melissa Huggins

Categories     Entree

Time 30m

Number Of Ingredients 9

4 large portobello mushrooms (, stems removed and dry brushed clean (*see note))
3 tablespoons balsamic vinegar
3 tablespoons gluten-free tamari ((sub soy sauce))
2 tablespoons grapeseed oil ( or preferred oil)
1 tablespoon vegan worcestershire sauce ((sub vegan steak sauce))
1-2 teaspoons liquid smoke ((sub with 1 teaspoon smoked paprika))
1 large garlic clove (, minced or crushed)
1/2 teaspoon granulated onion
salt and fresh cracked pepper (, to taste)

Steps:

  • In a large and shallow baking dish, whisk all the marinade ingredients together. Taste and add more seasoning if desired (*note: the flavors will be concentrated).
  • Add the mushrooms to the dish and liberally brush the marinade on all sides. You can also spoon it on. Let it sit for 10-20 minutes, flipping and brushing again midway through the marinating time.
  • Heat a Grill, Grill Pan OR Skillet over medium-high heat. When fully heated, brush with oil and place the mushrooms on top (they should sizzle when they hit the pan). Don't move them once they are in the pan, just gently press down with a spatula or tongs. Give them a minimum of 4-5 minutes so they sear. Flip over and sear the other side, adding more oil if needed (you can also brush on more marinade). Grill until browned and tender about 4-5 minutes. Enjoy!

MARINATED GRILLED PORTABELLA MUSHROOM RECIPE

Marinated Grilled Portabella Mushroom Recipe image

Marinated Grilled Portobello Mushrooms are a hearty vegan and/or vegetarian option for summer barbecues, and this recipe is bursting with fresh, spicy and delicious flavors.*Please note that 6 hours of the prep time is marinating time.

Provided by Valentina K. Wein

Categories     Side Dish

Time 6h18m

Number Of Ingredients 8

2 large portobello mushrooms (about 3 ounces each)
1 tablespoon Tamari or soy sauce, (low sodium)
1 teaspoon lime juice
1 scallion (finely chopped)
1 teaspoon garlic (minced)
1 teaspoon chili paste ((I like Sambal Oelek))
¼ cup grape seed oil
salt and freshly ground black pepper

Steps:

  • Clean the mushrooms. Use a damp towel to gently wipe the mushrooms clean. Then use the dull side of a small paring knife to gently scrape off the gills from the underside of the mushroom. (This little extra step is important because this portion of the mushroom can become quite bitter when it's grilled.)
  • Make the marinade. In a small mixing bowl, combine the tamari or soy sauce with the lime juice, scallion, garlic and chili paste. Then gradually mix in the oil and blend until smooth.
  • Marinate. Place the two mushrooms in a large zip-lock bag and pour the marinade over them. Use your hands to ensure the marinade is evenly covering both sides of the mushrooms. Place the bag in the refrigerator to marinate for at least 6 hours, and ideally overnight.
  • Grill. The next day, when you're ready to cook, preheat your BBQ or stove-top grill. Remove the mushrooms from the bag, gently shaking any excess marinade back into the bag. (Save this for later!) Put the mushrooms on a large plate and season both sides with the salt and pepper. Place the mushrooms on the preheated grill -- if you don't hear a sizzle, take them off until it's hot enough! They will not grill and caramelize properly unless the grill is hot enough! Grill the mushrooms until they are nicely charred and tender, about 3 or 4 minutes per side.
  • Slice and serve. After the mushrooms have slightly cooled, cut them into then slices, place them on serving plate and drizzle with the remaining marinade. Unlike when you're cooking "real" meat, this is totally safe to do! The mushrooms can be served, hot, warm, room temperature or chilled in a salad!

GRILLED PORTOBELLO MUSHROOMS

Grilled Portobello Mushrooms image

How to make the best Grilled Portobello Mushrooms. Simple recipe that's perfect for a portobello steak, grilled portobello mushroom burger, or easy side.

Provided by Erin Clarke / Well Plated

Categories     Main Course     Side Dish

Time 25m

Number Of Ingredients 10

4 large portobello mushrooms (stems and gills removed, wiped clean)
1/4 cup balsamic vinegar
1 tablespoon extra virgin olive oil
1 tablespoon low sodium soy sauce
1 tablespoon chopped fresh rosemary (or 1/2 teaspoon dried)
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper (optional, plus additional to taste)
Canola or vegetable oil (for grilling)
Optional for serving: Herby Avocado Sauce; these also make delicious mushroom burgers

Steps:

  • In a shallow baking dish, whisk together the balsamic vinegar, olive oil, soy sauce, rosemary, garlic powder, black pepper, and cayenne. Taste and adjust seasonings if you like. Add the mushrooms and turn to coat. Let sit for 5 minutes on one side, then flip and let sit 5 additional minutes. While the mushrooms marinate, prep the grill and anything you'd like to serve with them. You can let them sit for up to 30 minutes, so feel free to take your time-the longer they sit, the more intense the flavor will be.
  • Heat a grill or a large skillet over medium heat (about 350 to 400 degrees F). Brush the grill with oil to prevent sticking. Remove the mushrooms from the bowl, shaking off any excess marinade and reserving the marinade for basting. Cook on each side for 3-4 minutes, or until caramelized and deep golden brown. Brush the remaining marinade over the mushrooms several times as they cook.
  • To serve, top the portobello mushrooms with the avocado sauce or any topping you like.

GRILLED PORTOBELLO MUSHROOMS WITH TOMATOES AND FRESH MOZZARELLA

Grilled Portobello Mushrooms With Tomatoes and Fresh Mozzarella image

Great on the grill but you can cook these on the stove and finish them off in the broiler. To avoid watery portobellos, cook the downside facing up first, then turn them so all the moisture cooks away. Minimal effort, maximum dining pleasure. Categories     Cheese

Time 30m

Yield 4 serving(s)

Number Of Ingredients 12

3 tablespoons olive oil, plus extra for greasing grill pan
4 large portabella mushrooms, stemmed (about 5 inches in diameter)
salt & freshly ground black pepper
garlic powder (optional)
onion powder (optional)
1 dash red pepper flakes (optional)
3 tablespoons extra-virgin olive oil, plus extra for drizzling
2 garlic cloves, minced
3 vine ripened tomatoes, cut into 1/2-inch pieces (small to medium)
8 ounces fresh water-packed mozzarella cheese, drained, cut into 1/2-inch cubes
1/4 cup chopped fresh basil leaf
balsamic vinegar (optional)

Steps:

  • Prepare the barbecue (medium-high heat).
  • Drizzle 3 tablespoons of olive oil over both sides of the mushrooms. Sprinkle the mushrooms with salt and pepper. Sprinkle garlic powder, onion powder and red pepper flakes on now if using.
  • Drizzle olive oil on grill pan to prevent mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5 minutes per side.
  • Meanwhile, whisk the extra-virgin olive oil and garlic in a medium bowl to blend. Add the tomatoes, cheese, and basil and toss to coat. Season the tomato salad, to taste, with salt and pepper.
  • Place 1 hot grilled mushroom gill side up on each of 4 plates. Sprinkle with more salt and pepper. Spoon the tomato salad atop the mushrooms, drizzle with extra-virgin olive oil to finish, about 1 tablespoon and serve.
  • Drizzle with a splash of balsamic vinegar to finish off if desired. Enjoy!

GRILLED PORTOBELLO MUSHROOMS

Grilled portobello mushrooms image

Grilled portobello mushroom caps are a terrific vegetable-forward entree for your cookout. Serve them as a main course, or pop them into a bun as a sandwich.

Provided by Cadry Nelson

Categories     Main Course

Time 45m

Number Of Ingredients 9

4 portobello mushrooms
2 Tablespoons olive oil (Plus more if needed)
2 teaspoons red wine vinegar
1 clove garlic (minced)
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Generous pinch salt
Dash pepper

Steps:

  • Clean portobello mushrooms with a damp cloth. Remove stems using your fingers or a knife. If you'd like, use a spoon to remove the dark brown gills from underneath the mushroom. They don't affect the flavor at all, but they do release dark brown liquid while they cook.
  • In a mixing bowl, combine olive oil, red wine vinegar, minced garlic, dried parsley, dried basil, dried oregano, a generous pinch of salt, and a dash of pepper. (For the garlic, I like to use a Microplane zester, so that it's almost paste-like & easy to combine with the other ingredients.)
  • Add the mushroom caps to the mixing bowl. Use your hands to make sure that each cap gets covered front & back with the marinade. If your mushroom caps are especially large, you can add more oil if needed to make sure it's all evenly dispersed.
  • Put the bowl with mushrooms in the refrigerator, and let them soak in the marinade for 30 minutes to an hour. (If your refrigerator isn't large enough to hold a mixing bowl, the mushrooms can go into a freezer bag instead to marinate.)
  • Bring a grill, fire pit with grate, or grill pan to a medium high heat. (For a gas grill, I aim for about 500 degrees.)
  • Put the marinated mushroom caps on the grill, grate, or grill pan. Cook for about 4 minutes on each side & then flip. (Don't flip until the mushrooms have nice grill marks.) Remove from heat & serve.

  • Clean the portobellos by lightly running them under water, then quickly patting them dry with paper towels. Some suggest using a brush but I find I need a bit of water to get the dirt off. Don't let the mushrooms stay under water long however or they will absorb it and not grill up well.I remove the inside gills, just because they taste odd, but they are edible. I also remove the stem. In both cases, using a spoon works well to remove and clean these areas.
  • In a bowl, stir together the tamari sauce, balsamic vinegar, olive oil, garlic, and cayenne. Taste and add more seasonings if you like. Some suggestions best for grilled steak include a steak seasoning, rosemary, dill, black pepper, and salt.Add the mushrooms to the bowl, and spoon the marinade all over them.Let them sit for 10 minutes each side. So they marinade a total of 20 minutes. No longer or they might become too sour or salty.
  • Heat a hand grill pan or a large skillet over medium heat on the stove.Spray with olive oil, and set the mushrooms in the pan, pressing for a few minutes so the grill marks transfer. I found cooking each side about 4 minutes led to juicey steaks.
  • The grilled portobellos tasted fine after 2 days of refrigeration. After that, they can get a bit rubbery.
