FRENCH ONION NOODLE CASSEROLE
French onion and chicken noodles soups both find a home in this creamy and crunchy casserole.

- Preheat the oven to 350 degrees F.
- Melt 3 tablespoons butter in a large skillet over medium-high heat. Add the onions and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper and cook, stirring occasionally, until the onions are very soft and just begin to brown, about 20 minutes. Add 1 tablespoon thyme and cook for an additional minute. Set aside.
- Meanwhile, bring a large pot of salted water to a boil. Cook the noodles according to the package directions. Reserve 1/2 cup of the pasta water. Drain the noodles and return them to the pot.
- While the noodles are still warm, add the cooked onions, sour cream, cream cheese, reserved pasta water and 1/2 cup Gruyere. Stir until the sauce is smooth and creamy and coats the noodles. Fold in the chicken. Season with salt and pepper. Transfer to a 2-quart baking dish.
- Microwave the remaining 5 tablespoons butter in a medium microwave-safe bowl until melted. Add the fried onions, breadcrumbs, remaining 1/2 cup Gruyere and 1 tablespoon thyme to the butter and toss until the breadcrumbs are coated. Sprinkle the buttered breadcrumb mixture evenly over the noodles to cover completely.
- Bake until the topping is golden brown, 35 to 40 minutes.

- In a large nonstick skillet, saute onion and garlic in oil until tender. Add chicken; cook and stir until no longer pink. Add the broth, carrots, celery and savory. Bring to a boil. CRUNCHY CHICKEN CASSEROLE
The water chestnuts and sliced almonds gives this dish a nice "crunch". I cook the chicken and rice the day before I plan to serve. Then the next day, I just throw it all together and bake. Serve this casserole with a side dish of cooked broccoli. Makes a wonderful meal.

- Cook noodles according to package directions.
- Combine cooked, cubed Chicken breast, cream of chicken Soup, milk, 1 cup french fried onions, sauteed veggies, cooked noodles and 1/2 cup cheese and pour into a greased 2 Quart Casserole dish. Cover with foil and bake for 30 minutes. Combine the other cup of french fried onions and other cup of cheese. Remove foil from casserole and top with cheddar cheese and french fried onion mixture. - Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil.
- Cook the egg noodles until al dente as per the package directions. Drain and set aside.
- In a medium bowl, combine the cottage cheese and sour cream. Add plenty of freshly ground black pepper. Add to the noodles and stir. Add the Cheddar and green onions, then stir.

- Preheat oven to 375 degrees fahrenheit
- Put oil in a large frying pan and brown ground chicken with chopped onion and cook until onion is translucent.
- Add tomatoes to the mixture along with the tomato paste and cook until most of the liquid has evaporated and the mixture is nice and thick and set aside.
- Put ground chicken mixture in a 1 1/2 quart casserole dish layering on the bottom of the dish
- Cook macaroni noodles for 8 to 10 minutes in boiling salted water and then set aside
- In a small saucepan combine butter, flour and milk to make a roux and then add grated cheese and cook until cheese is melted and mixture is smooth
- Mix in cheese sauce with macaroni and then put macaroni on top of ground chicken
- Mix together butter, corn chips and bread crumbs with a pastry cutter and then sprinkle on top of macaroni noodles
- Top with grated cheese and then put in the oven for approximately 15 minutes or until cheese is nicely melted.

- My Note: I couldn't help but tweak it a little since there was such great opportunity for flavor enhancement. Sometime I added a couple of cloves of garlic, 2 stalks of finely diced celery, and 1/2 of a small onion, also finely diced. I also added about 1/2 teaspoons of thyme, and about 1/2 bag of frozen mixed vegetables. I increased the cooking time to about 45-50 minutes, so that the added vegetables would get cooked. The last thing I changed was I added about 3/4 can of milk to the soup mixture to give it a little moisture so it wouldn't dry out.
- Update: I sprinkled the chicken w/kosher salt & fresh ground pepper and spinach & herb seasoning that I get from Tastefully Simple -- but you could use any herbs you like. Then I browned it over fairly high heat in butter and olive oil, removed the chicken and set aside. Added about 1/2 cup chicken broth to the pan and scraped up all those yummy bits, then added the chicken back to the pan and covered & cooked till done. Remove chicken and reduce broth by half (1/4 cup). I cooked the noodles in water and the remaining chicken broth from the can, drained & added the cut chicken to the noodles. Mixed cr. of chicken w/ herbs soup & mush soup w/ sour cream & added the reduction. Mixed that w/ a little more herb seasoning. Added chicken & noodles & combined well. Topped w/ shredded cheddar and cracker crumb mixture. WOW! My son ate 3/4 of the casserole and my grandchildren LOVED it! A definite add to the rotation!

- Spray 2-quart casserole with non-stick cooking spray.
