Crispy chicken and roasted zucchini top a bed of greens, apple slices, walnuts and dried cranberries for a healthful, savoury salad. Our crunchy autumn chicken salad recipe is filling enough to be the main dish!

0.5 cup Plain dry bread crumbs / chapelure nature
1 28-g sachet Dry onion soup mix / mélange pour soupe à l'oignon
4 Boneless, skinless chicken breasts / poitrines de poulet désossées, sans la peau
0.3 cup Light mayonnaise type dressing / sauce de type mayonnaise légère
2 Zucchinis
8 cups Mixed salad greens / mélange de laitues
0.5 cup Dried cranberries / canneberges séchées
0.5 cup Walnuts, toasted / noix de Grenoble
1 Granny Smith apple / pomme Granny Smith

Steps:

  • HowToStep
  • Position rack in centre of oven, then preheat to 425°F. Line a baking sheet with parchment. ##Combine bread crumbs and soup mix in a shallow dish. ##Coat chicken with mayonnaise, then press into bread crumb mixture. Arrange chicken on baking sheet, then arrange zucchini around chicken. ##Bake, turning zucchini once, until an instant-read thermometer inserted into the centre of chicken reads 165°F, about 20 minutes. Let chicken cool slightly, then slice. ##Divide salad greens among plates. Top with chicken and zucchini, then cranberries, walnuts and apple. Drizzle with your favourite dressing.

2 tablespoons minced fresh parsley
1 tablespoon lemon juice
1 tablespoon cider vinegar
1 teaspoon spicy brown mustard
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
3 cups cubed cooked chicken
1 cup seedless red grapes, halved
1 cup thinly sliced celery
1 cup pecan halves, toasted
Lettuce leaves

Steps:

  • In a large bowl, mix the first eight ingredients until blended. Add chicken, grapes, celery and pecans; toss to coat. Serve on lettuce.

4 frozen breaded chicken tenders (about 8 ounces)
1/3 cup mayonnaise
3 tablespoons honey
2 tablespoons rice vinegar
1-1/2 teaspoons Dijon mustard
1/4 teaspoon sesame oil
1 package (10 ounces) hearts of romaine salad mix
1 package (14 ounces) coleslaw mix
1/4 cup crispy chow mein noodles
1/3 cup sliced almonds, toasted

Steps:

  • Cook chicken tenders according to package directions. Meanwhile, whisk together mayonnaise, honey, vinegar, mustard and sesame oil., To serve, place romaine and coleslaw mixes in a large bowl; toss with dressing. Divide among four plates. Cut chicken into bite-sized pieces; place over salads. Sprinkle with noodles and almonds.
