1 tsp. baking powder
1/2 tsp. baking soda
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup butter or margarine, softened
1-1/4 cups granulated sugar
2 eggs
1/4 cup milk
1 tsp. vanilla
1 jar (10 oz.) apricot preserves
2 cups BAKER'S ANGEL FLAKE Coconut
2/3 cup packed brown sugar
1/3 cup butter or margarine, melted
1 tsp. ground cinnamon

Steps:

  • Heat oven to 350°F.
  • Combine flour, baking powder and baking soda. Beat cream cheese, 1/2 cup butter and granulated sugar in large bowl with mixer until blended. Add eggs, 1 at a time, beating well after each addition. Blend in milk and vanilla. Gradually add flour mixture, beating well after each addition.
  • Pour half the batter into 13x9-inch pan sprayed with cooking spray. Dot with preserves; cover with remaining batter.
  • Bake 35 to 40 min. or until toothpick inserted in center comes out clean.
  • Heat broiler. Combine coconut, brown sugar, 1/3 cup butter and cinnamon; sprinkle over warm cake. Broil, 4 inches from heat, 2 to 3 min. or until golden brown. Cool.

175g butter , at room temperature
175g golden caster sugar
3 large eggs
225g self-raising flour
1 tsp baking powder
2 tsp vanilla extract
100g ground almonds
85g soured cream
5-6 ripe plums , halved and stoned
50g ground almonds
50g plain flour
50g golden caster sugar
50g butter , chopped into pieces
soured cream or yogurt, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line a 22cm deep, round cake tin (preferably with a loose bottom) with baking parchment.
  • First make the topping: put all the crumble ingredients in a bowl and rub together until crumbly.
  • For the cake, put the butter, sugar, eggs, flour, baking powder, vanilla, ground almonds and soured cream in a big bowl. Beat with an electric whisk until smooth, then tip into the tin and level the top. Arrange the plums, cut-side up, over the mix, then scatter over the crumble.
  • Bake for 50 mins-1 hr on a middle shelf until a skewer poked into the cake mixture comes out clean (plums will remain sticky, however). Cool in the tin for 20 mins, then finish cooling on a wire rack. Serve plain or with soured cream or yogurt. Keeps for 3-4 days in an airtight cake tin.

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
  • In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
  • To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.

220g golden caster sugar
3 large eggs , lightly beaten
250g self-raising flour
½ tsp baking powder
50g ground almonds
80g soured cream
300g fresh cherries , stoned and halved
45g plain flour
35g cold salted butter , cubed
20g golden caster sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter the base of a deep 20cm loose-bottomed cake tin and line with baking parchment.
  • To make the crumble topping, put the flour and butter in a bowl and rub together with your fingertips until you have a coarse, crumbly texture. Stir through the sugar, then transfer to the fridge.
  • Beat the butter and sugar with an electric whisk for 5 mins until light and fluffy. Gradually whisk in the eggs, beating well after each addition. Fold in the flour, baking powder, ground almonds and soured cream, then most of the cherries, reserving a handful to garnish. Spoon the mixture into the prepared tin and smooth over the top with a spatula. Dot with the reserved cherries, then bake in the centre of the oven for 30 mins.
  • Scatter over the crumble topping, then return the cake to the oven and bake for a further 30-50 mins until a skewer inserted in the middle comes out clean. Remove from the oven and leave to cool in the tin.
  • Slice the cake into thick wedges and serve with custard or ice cream, if you like. Store in a tin or airtight container for up to three days.

This will be the last crumb cake recipe you'll ever need. It's wonderful. It's my friend Fran's mother's recipe. It's far from low fat and I guess that's what makes it such a delicious cake. Everyone will ask you for the recipe.

1 (18 1/4 ounce) box butter recipe cake mix
1/4 cup butter, softened
4 large eggs
1 cup water
1 1/2 cups butter (VERY SOFT-almost melted)
3 cups flour
1 cup sugar
3 teaspoons vanilla
3 teaspoons cinnamon

Steps:

  • Grease and flour a cookie sheet with sides (11 x 17 or 10 1/2 x 15) just watch the time.
  • Mix cake using above ingredients.
  • Spread in cookie sheet.
  • Bake 350° for 20 minutes (20 minutes is the time for the 10 1/2 x 15 pan), so a little less time if you are using the bigger pan.
  • I like the 11 x 17 pan.
  • Crumbs: Add ingredients to bowl and mix together.
  • Spread in chunks covering cake.
  • Bake 15 minutes more.
  • Cool.
  • Sprinkle with powdered sugar.

BERRY CRUMBLE TRAYBAKE

This easy layered traybake is inspired by American coffee cakes - which contain no actual coffee, but are meant to be eaten with your morning cuppa. If you were really pushed for time, you could use a very good quality soft jam for the filling, but it will be much sweeter.

200g/7oz frozen berries (raspberries, blackberries, cherries, blueberries, blackcurrants all work well, or a mix)
50g/2oz caster sugar
2 tbsp cornflour
110g/4oz plain flour
70g/2½oz cold unsalted butter, cut into smallish cubes
30g/1oz caster sugar
220g/8oz plain flour
¾ tsp baking powder
½ tsp cinnamon
50g/2oz ground almonds
200g/7oz caster sugar
80g/3oz butter, melted
2 free-range eggs
40g/1½oz yoghurt thinned with 2 tbsp milk

Steps:

  • Preheat the oven to 180C/350F/Gas 4. Grease and line a rectangular baking tin (approximately 26cm x 20cm/10½in x 8in).
  • In a saucepan combine the fruit with 50ml/2fl oz water. Bring the fruit just to the boil, reduce the heat and simmer for 2-3 minutes.
  • In a mixing bowl combine the caster sugar with the cornflour. Stir into the fruit and continue to cook for 2-3 minutes, stirring frequently, until the mixture is thick and jammy. Set aside to cool.
  • For the crumble topping, add the flour to a mixing bowl and rub in the butter until the mixture resembles fine breadcrumbs and no large lumps of butter are left. Stir in the sugar and set aside.
  • For the cake, in a large mixing bowl, sift together the flour, baking powder and cinnamon. Stir in the ground almonds until thoroughly combined.
  • In another bowl beat together the sugar with the melted butter, eggs, yoghurt and milk mixture until thoroughly mixed. Stir into the flour mixture just to combine. Don't overmix it, but watch out for big lumps of unmixed flour.
  • Spoon two-thirds of the mixture into the lined tin, gently spreading out evenly to the corners. Spoon the cooled fruit mixture evenly over the top.
  • Using a teaspoon, dot the remaining cake batter evenly on top of the fruit. This will not cover the entire cake, but make little hillocks with gaps in between.
  • Sprinkle the crumble mixture over the top, filling in all the gaps to cover the fruit.
  • Bake in the oven for 45-50 minutes, until the crumble topping is golden-brown. Allow to cool for ten minutes in the tin, then transfer the cake in its paper to a cooling rack. This is cake is beautiful eaten while still warm, with a dollop of crème fraîche or yoghurt - but is equally nice the next day with a cup of coffee.

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
  • Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
  • Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
  • Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
  • Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

  • Preheat oven to 350 degrees F. Grease and flour a 10-inch tube pan. Cream butter and sugar in large mixing bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Add the vanilla extract and lemon juice. Beat very well.
  • Combine the flour, baking soda, baking powder and salt in a separate bowl. Alternately add the dry ingredients and the sour cream into the butter mixture. *Begin and end with the dry
  • Combine sugars, flour and cinnamon in a bowl. Cut in chilled butter with a pastry blender until mixture resembles coarse crumbs. You can also use an electric mixer with a paddle attachment. *You will have some extra streusel--keep in freezer for quick fruit tart another day!*
  • Assemble and Bake:
  • Spread half of the batter into the prepared pan. Sprinkle with a layer of the streusel. Top with remaining batter, then top with another layer of streusel. Bake for approximately 55 minutes. Cake will be done when golden brown, sides of cake pull away slightly from edge of pan and toothpick inserted in center comes out clean. Remove pan from oven and cool on a rack for 45 minutes. Unmold onto rack streusel side down and allow to cool completely. Then invert, streusel side up onto a cake plate. Serve dusted with confectioners sugar or with blueberry sauce.
  • In a saucepan over medium low heat add blueberries, sugar mixed with cornstarch, vanilla bean seeds and lemon juice. Heat to a boil, stirring occasionally. Cool completely. Serve with cake, over ice cream.

1 cup (200g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
1 Tablespoon ground cinnamon
1/2 teaspoon salt
1 cup (2 sticks; 230g) unsalted butter, melted
2 and 1/2 cups (313g) all-purpose flour (spoon & leveled)
2 and 1/2 cups (313g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup (1.5 sticks; 170g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
3 large eggs, at room temperature
1 cup (240g) full-fat sour cream, at room temperature*
2 teaspoons pure vanilla extract
optional: confectioners' sugar for topping

Steps:

  • Preheat the oven to 350°F (177°C) and grease a 9×13 inch baking pan or line with parchment paper. You can use a glass, ceramic, or metal baking pan. The bake time is similar for each, but use a toothpick to test for doneness. Metal baking pans cook cakes faster. Set pan aside.
  • Mix the brown sugar, granulated sugar, cinnamon, and salt together in a medium bowl. Stir in the melted butter, then gently mix the flour using a fork. Keep the mixture as large crumbles, do not over-mix. If over-mixed, this will turn into a thick paste. Set aside.
  • Whisk the flour, baking soda, baking powder, and salt together. Set aside.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the butter and granulated sugar together on high speed until smooth and creamy, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs, sour cream, and the vanilla. Beat on medium-high speed until combined. The mixture may look curdled; that's ok. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, mix in the dry ingredients until smooth. Do not over-mix. The batter will be thick, creamy, and sticky.
  • Spread the batter evenly into prepared baking pan. Top with crumb topping. Using a rubber spatula or the back of a large spoon, press the crumb topping tightly down into the cake so it sticks.
  • Bake for 45-55 minutes. Baking times vary, so keep an eye on yours and begin checking at 45 minutes. The cake is done when a toothpick inserted in the center comes out clean. If you find the top or edges of the cake is/are browning too quickly in the oven, loosely cover it with aluminum foil.
  • Remove the cake from the oven and set on a wire rack. Allow to slightly cool for at least 30-45 minutes before cutting. If desired, dust with confectioners' sugar before slicing and serving. Use a sifter/fine mesh sieve.

Steps:

  • Preheat the oven to 350 degrees. Grease a 9 x 13 inch baking pan.
  • In a mixing bowl, whisk together 3 cups flour, sugar, salt, cinnamon, and nutmeg. Add the melted butter and vanilla extracts and stir until the mixture is evenly moist. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla and sour cream. Meanwhile, in another bowl, mix together the flour, baking soda, salt, and baking powder. Add this to the butter mixture, stirring until the ingredients are just combined.
  • Spread half the batter into a thin layer at the bottom of the pan. Sprinkle the apple chunks evenly over the batter. Top with about 1 cup of the crumble mixture. Spread the remaining batter over top followed by the rest of the crumble.
  • Bake the mixture for 35-40 minutes or until a tester inserted in the center comes out clean. If the top gets too brown, cover with foil for the last 10-15 minutes.
  • While the coffee cake bakes, whisk together the powdered sugar, cider, milk, and salt. Serve the cake warm with the cider drizzle. This recipe can be made up to two days in advance. Store in an airtight container or in the pan with saran wrap on top.

3/4 cup (150g) unsalted butter (melted)
1 tsp ground cinnamon
1 3/4 cups (210g) plain/all purpose flour
19.5 oz (550g) cooking apples (such as Bramley apples - which is about 2 large apples)
6 oz (175g) eating apples - which is about 1 apple
1 tbsp lemon juice (fresh or from a bottle)
2 tbsp plain/all-purpose flour (for mixing with the apples)
1 cup (230g) unsalted butter (melted)
2 cups (360g) golden caster sugar
1 tsp vanilla extract
1 tsp cinnamon
4 large eggs
3 cups minus 1 tbsp (350g) plain(all-purpose) flour
4 tsp baking powder ((I know, 4 tsp sounds like a lot, but it's correct. Just make sure it's 4 level tsp))
1/4 tsp salt
2 tbsp demerara course sugar
2/3 cup (90g) icing/confectioner's sugar
6 tbsp double/heavy cream
1/2 tsp vanilla extract

Steps:

  • First make your crumble by mixing the sugar, butter and cinnamon in a large bowl. Add in the flour and mix with a spoon until you have a crumbly mixture. Set aside.
  • Preheat the oven to 180c/350f. Line a 24cmx24cm (9 1/2 inch x 9 1/2 inch) square baking tin with baking parchment. Note - the sides of the tin need to be at least 8cm/3.1 inches high as the cake will spill over if the sides aren't high enough.
  • Peel and core the apples and chop into bite-sized chunks. Mix the apples with the lemon juice to stop them turning brown. Then mix with the 2 tbsp of flour.
  • In a large bowl, mix the melted butter with the caster sugar, vanilla extract and cinnamon. Mix in the eggs and then fold in the flour, baking powder and salt. Gently stir the apples into the cake mixture.
  • Spoon the mixture into the prepared baking tin.
  • Sprinkle the crumble mixture over the top (I like to have a mix of small and large chunks) and then sprinkle over the demerara sugar.
  • Place in the oven and cook for 45-55 minutes - until an inserted skewer comes out clean. Cover with foil for the last 10-15 minutes if it's starting to look too brown.
  • Take out of the oven and leave to cool in the tray for 10 minutes, then remove from the tray and leave to cool completely on a cooling rack.
  • Once cool, whisk together the icing sugar, half of the cream and the vanilla extract. If it looks drizzle-able stop there. If not, continue to add more cream until you get a thick but pourable mixture. Drizzle over the top of the cake using a spoon, or you can use a piping bag (like I did) to get the neat lines of drizzle.
  • Cut into 16 pieces and serve.

1 stick (4 ounces) unsalted butter, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup sour cream

Steps:

  • In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, cinnamon, and salt. Using a spoon, stir in the cake flour one cup at a time, until the mixture forms a cohesive dough, like a very thick and clumpy cookie dough. As you add the last cup of flour, the mixture will be difficult to stir, so feel free to ditch the spoon and use your hands to mix it in. Set aside.
  • Preheat the oven to 350°F and set an oven rack to the middle position. Grease a 9 x 13-in cake pan.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • In the bowl of an electric mixer, beat the softened butter and granulated sugar on medium-high speed, scraping the bowl as necessary, until light and fluffy, 2 to 3 minutes. Add the eggs one at a time, beating until incorporated after each addition (don't worry if the batter looks a little curdled at this point). Beat in the vanilla and scrape the bowl to make sure everything is evenly combined. Add the flour mixture alternately with the sour cream (half of the flour/all of the sour cream/then the remaining half of the flour), mixing on low speed with each addition, until just combined.
  • Spread the cake batter evenly in the cake pan (it will only come about ¾ inch up the sides of the pan). Top the batter with the streusel crumbs, using your fingers to break it apart and form it into roughly ½-inch chunks. Bake for 40 to 45 minutes, until a cake tester inserted into the middle of the cake comes out clean. Let the cake cool fully on a rack. Dust with powdered sugar and cut into squares to serve. Cover the cake with aluminum foil and store at room temperature; it will keep nicely for up to 3 days. To keep the cake fresher longer, store it in the refrigerator but bring it to room temperature before serving.
  • Freezer-Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, wrap it tightly with aluminum foil or freezer wrap. Thaw overnight on the countertop before serving.

350g (12oz) self-raising flour
10ml (2tsp) ground cinnamon
175g (6oz) unsalted butter, chilled and diced
150g (5oz) caster sugar
2 medium eggs, beaten
2 large apples, peeled cored and diced
150g (5oz) blueberries
150g (5oz) blackberries
45ml (3tbsp) demerara sugar
75g (3oz) mixed chopped nuts

Steps:

  • Preheat the oven to 190°C, 375°F, Gas 5. Place a baking sheet in the oven to heat up. Grease a 20cm x 24cm (8in x 91/2in) cake tin and line with baking parchment, allowing the edges of the parchment to hang over the side.
  • Sift the flour and cinnamon into a large bowl. Add the butter and rub into the flour with your fingertips until the mixture resembles coarse breadcrumbs. Remove 175g (6oz) of the crumble mixture to another bowl and set aside.
  • Stir the caster sugar and beaten eggs into the larger amount of crumble to make a soft and slightly sticky dough. Press evenly into the base of the cake tin using floured hands. Scatter over the diced apple and berries.
  • Stir the demerara sugar and chopped nuts into the rest of the crumble mixture and spoon over the fruit, pressing down gently.
  • Bake on the hot baking sheet for 35-45 mins (covering loosely with foil after 20 mins) until the cake is golden brown. Leave to cool in the tin for 20 mins, then remove by gently lifting the parchment. Serve warm or cold.
