Number Of Ingredients 6

12 scallops, on the shell if possible
1 tablespoon olive oil
2 tablespoons fresh herbs of choice (we suggest parsley, lemon thyme or chives)
1/4 cup white wine
2 tablespoons lemon juice
freshly ground salt and pepper

Steps:

  • Remove the scallops from the shell.
  • Heat the olive oil in a pan over medium high heat.
  • Add the scallops and cook for about 2 minutes, turn and cook a further minute on the other side. Return to the shell.
  • Add remaining ingredients to the pan and cook for about 3 minutes or until reduced by about a half.
  • Drizzle a little of the sauce over each scallop, distributing the herbs evenly.
  • serves 2 as an appetiser.

This is a recipe by chef Jeremy Jones as heard on Radio NZ. I have added a few extra ingredients. It is simple and very tasty. There is no reason why you couldn't use the same as a topping for other fish. I hope you enjoy!! :o)

1/2 cup olive oil
1 large onion, finely chopped
2 garlic cloves, finely chopped
1 cup fresh breadcrumb
1/4 cup cashew nuts
1/4 cup fresh parsley
1 lemon, zest of, only
1/4 cup parmesan cheese, grated
2 tablespoons capers, chopped
1/2 red pepper, finely chopped
fresh ground black pepper
rock salt
24 scallops

Steps:

  • Heat oven to 200c.
  • Heat 1/2 the oil in a frypan and cook onion & garlic until soft and golden.
  • In a bowl mix together breadcrumbs, roughly chopped cashews, parsley, lemon rind, parmesan, capers, red pepper and the cooked onion & garlic.
  • Dry the scallops with a paper towel then.
  • toss with the breadcrumb mix, pepper & salt and remaining oil.
  • Place on an oven proof serving dish and cook.
  • for 8 mins until the sides are bubbling and the crumbs are golden brown.

Curried Scallops image

This is my favourite recipe for curried scallops. It is creamy and rich, with a nice tangy flavour to the sauce. This is the mixture I use for my curried scallop pies, or you can just serve it over rice.

500 g scallops
45 g butter
2 tablespoons flour
2 teaspoons curry powder
1 1/2 cups skim milk
1/2 cup low-fat mayonnaise
2 teaspoons lemon juice
1 egg
1 onion, finely chopped

Steps:

  • Melt butter, add onion and cook gently until softened.
  • Add flour and curry powder, mix well.
  • Gradually add milk and mayonnaise, stirring continuously.
  • Cook until sauce starts to thicken, then add scallops.
  • Leave on heat until scallops are just cooked - Don't over cook them!
  • Remove from heat, add egg and lemon juice.
  • Stir well, and serve hot over rice, or leave to cool and make into pies.
