NEVER-FAIL SCALLOPED POTATOES

Steps:
- Preheat oven to 350°. In a small saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Remove from heat; stir in cheese until melted., Coat an 8-in. square baking dish with cooking spray. Place half of the potatoes in dish; layer with 1/2 cup onion and half of the cheese sauce. Repeat layers. , Bake, covered, 50 minutes. Uncover; bake until bubbly and potatoes are tender, 10-15 minutes longer.

Bursting with flavor, this traditional, delicious scalloped potatoes dish is the ideal dish to treat a crowd. The recipe can be served as a main or side dish and is easy to prepare, leaving you with plenty of time to relax and have fun.

- Preheat the oven to 325 degrees F. Grease 8-quart capacity baking pans (for 100 servings you'll need 3 pans - adjust accordingly if you change the serving size). Heat the milk in a large stockpot or dutch oven over medium heat. Do not let it boil. Add the butter, salt, and pepper. Cook, stirring constantly, until the butter has melted. Reduce the heat to the lowest setting and keep warm Peel and slice the potatoes 1/4-inch thick (a mandoline works well for this task). Place some of the cream sauce mixture in the bottom of each baking pan. Top with a layer of potatoes. Lightly salt the potatoes then repeat the layering. Place the baking pans in the oven and bake at 325 degrees F for 2 hours or until the potatoes are tender. If the potatoes start to brown too much, cover lightly with foil. Serve warm.

- HEAT oven to 400ºF. COOK first 3 ingredients in saucepan on medium heat until cream cheese spread is melted and mixture comes to boil, stirring constantly with whisk. RESERVE 2 Tbsp. bacon. Layer half each of the potatoes, onions and remaining bacon in 13x9-inch baking dish; repeat layers. Add cream cheese sauce; cover. BAKE 1-1/2 hours or until potatoes are tender and top is golden brown, uncovering and topping with shredded cheese and reserved bacon for the last 10 min.

- Heat the oven to 180C/160C fan/gas 4 and butter a deep 20 x 30cm baking dish. Melt the butter in a pan over a medium heat and cook the onion and garlic with a pinch of salt for 8-10 mins until the onion has softened slightly. Tip in the flour, stir well, then cook for a few minutes more. Mix the milk and stock together, then gradually pour this in, whisking well between additions until everything is incorporated and you have a smooth sauce. Simmer for a few minutes, then season well.
- Lay half the sliced potatoes in a single layer in the buttered dish, slightly overlapping them if needed. Pour over half the sauce, then scatter over half the parmesan. Arrange the remaining potatoes on top, then pour over the remaining sauce and scatter with the remaining parmesan. Cover with foil and bake for 1 hr, then remove the foil and bake for another 30 mins until golden on top.

CROWD PLEASING POTATOES
I work at a big box store; somehow I ended up having to cook for our Christmas party. The problem? I only had a deep fryer or an oven to cook in! I came up with these potatoes. They were a huge hit.

Steps:
- Spray a large food service pan (12x20-inch) with cooking spray.
- Place 1/3 of the potatoes into pan; sprinkle with salt, pepper, garlic, 1/3 onions, 1/3 bacon, and 1/3 cheese.
- Repeat layers for a total of 3 layers. Leave cheese off last layer (keep for later in cooking).
- Pour cream over top; dot with butter. Cover tightly with foil. Bake at 400°F for 1 hour 15 minutes.
- Uncover; sprinkle with remaining cheese. Return to oven for 15 minutes or until cheese is melted.
