CROWD-PLEASING BAKED ZITI
This isn't your mama's baked pasta! My zippy ziti boasts all the comfort and heartiness of Mom's but with little kick from crushed red pepper flakes. Feel free to take the heat up a notch by using hot Italian sausage instead of sweet. The dish is easy to transport, making it great for potlucks.

- While the pasta is cooking, butterfly your chicken breasts, season with the garlic powder and sprinkle with salt. In a medium pan, heat a few drizzles of olive oil. Cook the chicken breasts 3-4 minutes per side until browned and no longer pink inside. I found 4 minutes per side was good for me. I also like to cut into the chicken and make sure it’s no longer pink. Once the chicken is cooked, shred into small pieces.
- Once the pasta and the chicken are done, pour the pasta into a 9×13 dish or large casserole baking dish. Pour in the marinara sauce and stir to coat all the noodles. Pour in the shredded chicken and stir so it is blending evenly throughout the pasta. Next, cover the entire top of the dish with the shredded Mozarella cheese. Then in spoonfuls, dollop the ricotta cheese over top. Lastly, dollop the pesto overtop. I like to make sure the pesto is spooned on top of the ricotta not just on the noodles. Lastly, sprinkle the top with the Parmesan cheese.
- Place dish under the broiler on high until the Mozzarella cheese has melted and is browned and bubbly. This can vary as it depends on how close your dish is to the heat source. Always keep a close eye on something under a broiler since it can burn very quickly. Once browned and bubbly, remove from the oven and take a knife or spoon and gently stir the ricotta and pesto together so it’s slightly swirled. Enjoy!
11 TIPS FOR ALISON ROMAN’S BAKED ZITI (PLUS ... - PASTA.COM
From pasta.com
Estimated Reading Time 8 mins
- Use Any Pasta. Don’t let the fact that you don’t have ziti or rigatoni keep you from this amazing dish. The chef for this recipe uses rigatoni instead of the typical ziti, but you could use anything on hand that would help to hold sauce – so a penne or a cavatappi or even a macaroni could work.
- Don’t Overcook Your Pasta. Make sure to undercook your pasta slightly or it will be too soft once baked. Alison recommends to make sure that it’s almost underdone and has a bit of a bite to it as well.
- Save the Pasta Water. The water that the pasta is cooked in is full of starch and can help to pull your sauce together and thicken it. It’s a step that in a rush, people tend to forget, (present company included) and once you strain your pasta, it’s too late.
- Crush the Canned Tomatoes. The recipe calls for whole canned tomatoes and they need to be crushed. In her video she does this by hand, but this could definitely be done using a fork as well (though the hand-crushing is definitely more fun!)
- Toast the Tomato Paste. Tomato paste is best used to bring out the flavors of other dry herbs and aromatics such as onions and garlic. It takes an extra couple of minutes, but really helps to meld the flavors together and make the tastes all come out.
- What if You Don’t Have Fresh Mozzarella? The recipe tastes best with fresh mozzarella which adds a nice creamy texture, but if you can only get regular mozzarella make sure to reduce the amount of salt you use in other places in the recipe.
- Modify the Cheese to Your Preference. There is a generous amount of cheese in the recipe so you can modify the amount specifically to your preference.
- Use Heavy Cream – Instead of Half and Half. Let’s face it, baked pasta isn’t something one would typically choose to make when counting calories. The heavy cream is a must to add to the ricotta cheese, so we don’t recommend swapping it out for half and half.
- Adding Meat. While this dish is vegetarian, you could easily add in any meat of your preference. You could use Italian sausage, ground beef, or pancetta, but it would really work well with any kind.
- Add Some Wine. The pasta water does serve a purpose in that it helps to thicken your sauce up. If you feel like your sauce isn’t too loose, you can add wine to help create a deep flavor profile.
