- Preheat oven to 350 degrees. Arrange baguette slices on two large rimmed baking sheets; brush both sides with oil, and season with salt and pepper.
- Bake, rotating sheets halfway through, until golden, 15 to 20 minutes (if undersides are not browning, turn crostini over once during baking). Let cool on baking sheets. Top crostini with desired toppings, and serve.

BEEF TENDERLOIN CROSTINI
Steps:
- For the beef tenderloin: Preheat the oven to 500 degrees F.
- Place the beef tenderloin on a baking sheet, drizzle with the olive oil and season liberally with salt and pepper. Rub the oil and seasoning evenly over the meat.
- Roast the tenderloin until an internal thermometer reads 125 to 130 degrees F for rare to medium rare, about 20 minutes. Remove from the oven, tent with aluminum foil and let rest until it reaches room temperature, at least 20 minutes. Transfer to a cutting board and thinly slice.
- For the crostini: Turn down the oven temperature to 400 degrees F.
- Put the baguette slices on a baking sheet in 1 layer. Drizzle with the olive oil and sprinkle with salt and pepper. Bake until golden brown and toasted, about 5 minutes.
- For the horseradish sauce: Add the sour cream, applesauce, horseradish, mayonnaise, breadcrumbs and chives to a medium bowl and mix until combined. Season with salt and pepper.
- To assemble: Spread a dollop of horseradish sauce onto each toasted baguette piece, add a slice of beef tenderloin and then top with another dollop of horseradish sauce and a few watercress leaves.
CROSTINI ALLA CAPRESE
Crostini are made from thinly sliced Italian or French bread and lightly toasted. These are topped with a version of Caprese Salad (mozzarella, fresh basil, tomato). These can be served like a canape or threaded onto small skewers. You should be able to find the marinated mozzarella balls in the deli department. If not, use plain mozzarella balls rolled in oregano flakes or small pieces of mozzarella.

Steps:
- Cut bread into 1/2 inch rounds and place, in a single layer, on a baking sheet.
- In a small skillet, heat oil, over medium low heat; add garlic and saute 5 minutes to infuse the oil with garlic flavor.
- Very lightly brush bread with the garlic flavored oil.
- Toast lightly under the broiler.
- Top each crostini with a tomato slice, fresh basil leaf, and half a mozzarella ball.
- Lightly drizzle all with vinegar and sprinkle with crushed red pepper flakes, if desired.
- ALTERNATIVELY: You can skewer the ingredients on small 4-inch skewers, then drizzle with vinegar and red pepper flakes, if desired.

Steps:
- Add ricotta to a bowl; add in the parmesan, salt, and pepper; beat with a wooden spoon until well mixed.
- Add the sausages and a few tablespoons water in a small saute pan; puncture the skin of the sausages with a fork and cook over medium heat.
- When the water evaporates, continue cooking sausages until they brown.
- Remove from heat and, when cool enough to handle, skin the sausages and crumble the meat.
- Add the crumbled sausages to the ricotta mixture; blend well.
- Spread the ricotta and sausage mixture on the crostini; serve immediately.

CROSTINI ALL'ARETINA - SAUSAGE TOAST
I got this recipe from the book "la dolce vita The Sweet Life in Cortona, Tuscany, Italy." Although I can't recommend the book, this recipe sounds very similar to something I had in Cortona this past summer. If any of the ingredients sound ambiguous, blame the author! There is no serving size information in the book, so that is a guess on my part.

Steps:
- Preheat oven to 400 degrees.
- Squeeze the sausage meat out of the casings and into a mixing bowl. Add the cheese and pepper and mix very thoroughly with a fork.
- Spread each toast with a generous helping of the sausage and cheese mixture. Place on a cookie sheet.
- Bake for 5 minutes or until the cheese has melted and the topping is bubbling.
- Serve piping hot, straight from the oven.
