SPINACH ARTICHOKE BAKED BRIE
Holiday appetizers have met their match with this spinach artichoke baked brie. The crispy puff pastry encases a layer of creamy spinach and melty brie, making the perfect mashup. Spread onto your favorite crackers or crostini and enjoy all season long.

- Put the spinach in a clean kitchen towel over a bowl or the sink and twist to squeeze out all the moisture. Coarsely chop.
- Put the cream cheese, mayonnaise, sour cream and garlic in a large bowl; mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and Parmesan, mixing to combine. Season with salt and pepper, then refrigerate until ready to use.
- Line a baking sheet with parchment paper. Whisk the egg with a splash of water in a small bowl. Roll out the puff pastry to a 13-by-12-inch wide rectangle. Cut a 1-inch wide strip of dough off the shorter end to create a 12-by-12-inch square, reserving the strip for decorating. Transfer the square to the prepared baking sheet. Place the wheel of brie in the center of the dough. Top with the chilled spinach-artichoke mixture. Fold the puff pastry up and over the brie, brushing the edges with a little egg wash and pinching to seal. Form the reserved strip of dough into a bow. Brush a little egg wash on the center of the pastry and gently press the bow on top to secure. Brush the bow and the entire exterior of the pastry with the egg wash, then return it to the refrigerator to chill, about 30 minutes.
- Preheat the oven to 375 degrees F.
- Bake until the pastry is golden brown and cooked through, about 40 minutes. Let sit for 15 minutes, then serve warm with crackers and/or crostini.

- Remove the brie from the refrigerator. Remove any paper wrapping and return the wheel to the bottom part of it's wooden box or place it on a small square of parchment paper (that is slightly larger than the brie wheel itself). Make very shallow slits across the top of the brie, just through the rind layer, every ½-inch to 1-inch, in a criss-cross pattern. Let rest at room temperature for 30 minutes.
- Preheat the oven to 350 degrees. Place the brie on a small sheet tray. Sprinkle the top with the fresh thyme and rosemary, and drizzle with honey. Bake for 20 - 25 minutes, until very soft.
- Carefully transfer the brie, in the box or on the sheet of parchment paper, to a serving plate. Serve warm alongside toasted bread, apple slices and/or grapes, for serving.
BAKED BRIE CROSTATA

- Preheat the oven to 400 degrees F.
- On a clean, lightly floured surface, roll the puff pastry out to an even thickness, about a 13-to-14-inch square. Place the Brie wheel in the center of the pastry and cut the pastry into a round 4 inches wider than the cheese on all sides. Remove the cheese and brush the pastry with a thin layer of beaten egg.
- Spoon the cranberry chutney into the center of the rolled pastry and spread with the back of a spoon so it is the same size as the circle traced for the Brie. Place the cheese on top of the chutney.
- Working from the bottom of the circle, begin folding the pastry over the cheese. It will not cover the cheese completely; rather the pastry should just come 1 to 2 inches over the edge of the cheese. Work all the way around the cheese until all the pastry is folded, forming a neat packet around the cheese. (If the pastry is too soft at this point, place in the refrigerator for 15 minutes to firm up.)
- Cut a 2-by-2-inch 'x' in the center of the exposed cheese.
- Brush the folded pastry with more beaten egg and sprinkle with the bagel spice or sesame seeds if using. Transfer to a baking pan and place in the oven. Cook until golden brown, 20 to 25 minutes. Cool 10 minutes before serving. To serve, cut into wedges. Serve with crackers if desired.

- Preheat oven to 400 degrees F.
- In small skillet, melt butter over medium heat.
- Add onion & garlic. Saute until onion is golden brown, then set aside.
- Microwave Brie & cream cheese in large bowl just until melted.
- Whisk in onion mixture, sour cream & remaining ingredients [except for the loaf of bread!].
- Season to taste with salt & pepper.
- Cut off top of bread loaf, & scoop out center, leaving 3/4" thick shell of bread.
- Spoon in cheese mixture.
- Cover with bread lid, & wrap in foil.
- Bake cheese-filled loaf until filling bubbles, about 1 hour.
- Unwrap & place on platter.
- Remove bread lid, & sprinkle sheese with paprika.
- Serve with crackers and/or vegetables [broccoli/cauliflower florets, carrot & bell pepper sticks, etc.
