CROQUETTES, SPANISH STYLE (CROQUETAS)
My grandmother grew up cooking at her uncle's side; he was a chef in a very fancy restaurant in Northern Spain. Needless to say, she was very accomplished in the kitchen! This is a Spanish staple, and always a kid's favorite. Enjoy!

Steps:
- Melt butter over medium heat. Add the onions and cook until they become translucent, about 5 minutes. Stir in 1 1/2 cups of the flour and stir constantly. Cook the roux for 5 minutes until the flour is cooked through and golden brown. Pour the milk into the flour mixture and cook, stirring constantly, for about 2 minutes, until you have a thick sauce.
- Add the chicken or other protein/veggie, and sprinkle in 1/2 teaspoon of salt and the nutmeg. Cook for another 2 minutes and cool a little; it should be very thick. Try to make a little ball in your hands; it shouldn't stick too much. If it does stick, return to pan and cook a little longer. Spread the mixture on a baking sheet and cool.
- Take a a golf-ball sized ball of the mixture and roll in your hands to make a cylinder. Roll in the remaining 1 cup flour, then in the eggs, and then in the breadcrumbs and set aside to dry on another cookie sheet. Repeat with the remaining mixture.
- In a small deep frying pan, heat the olive oil to 375 degrees. Working in small batches, add the croquetas, making sure they are covered completely in oil. Fry until golden, about 1 minute, then transfer to a paper towel-lined rack to drain. Be sure to allow the oil to return to 375 degrees F on a thermometer between batches. Season with salt and serve hot.

- Preheat the oven to 375°F
- In a small roasting pan, toss the chicken thighs with the onion, leek, carrot and garlic.
- Add the olive oil and 1 1/2 teaspoons of the Madras curry powder and season with salt and pepper.
- Roast, turning once, until the chicken thighs are cooked through and the vegetables are tender, about 35 minutes; let cool.
- Meanwhile, in a medium saucepan, bring the milk to a simmer with the remaining 1 1/2 teaspoons of curry powder over moderately high heat.
- Remove from the heat and let cool.
- In a food processor, pulse the chicken with the roasted vegetables until a puree forms.
- Season the puree generously with salt and pepper.
- Melt the butter in a large skillet.
- Add the 3/4 cup of flour (making a roux) and cook over moderately low heat, stirring constantly, until lightly browned.
- Stir in the chicken puree.
- Gradually add the milk, little by little at first and whisking constantly until it has all been added.
- Cook over low heat, stirring constantly, until the mixture is no longer sticky, about 15 minutes.
- Season with salt and pepper and let cool to room temperature, about 1 hour.
- In a large saucepan, heat 1 1/2 inches of vegetable oil to 350°F
- On a lightly floured work surface, roll the croquette mixture into 3/4-inch-thick ropes.
- Cut the ropes into 1 1/2-inch pieces.
- In a shallow bowl, beat the eggs.
- Spread the bread crumbs in another shallow bowl.
- Dip the croquettes in the egg, then coat all over with the bread crumbs.
- Add the croquettes to the hot oil in batches, taking care not to crowd the pan, and fry until golden brown, about 1 minute.
- Transfer the croquettes to paper towels to drain and serve piping hot.

- À feu doux, dans une casserole à fond épais, faites cuire les morceaux de brochet dans l’huile d’olive jusqu’à ce qu’ils soient bien défaits. Ajoutez la gousse d’ail hachée et assaisonnez bien. Laissez tempérer et égouttez.
- Dans un bol, mélangez le brochet cuit avec la pomme de terre en purée, la ciboulette, l’échalote et la mayonnaise. Rectifiez l’assaisonnement. Formez des petites galettes à la main ou à l’aide d’un emporte-pièce et laissez refroidir 2 heures. Lorsque les galettes sont bien fermes, panez-les à l’anglaise : farinez-les, passez-les dans les œufs battus, puis dans la chapelure (panko). Réservez.
- Lavez bien la peau du citron et zestez. Faites blanchir les zestes quelques secondes dans l’eau bouillante. Faites 3 fois cette opération en changeant l’eau chaque fois. Déposez les zestes blanchis dans une petite casserole, puis recouvrez du sucre granulé et de 3 c. à soupe d’eau. Faites cuire à feu doux jusqu’à ce qu’ils deviennent translucides, c’est-à-dire confits (le liquide sera complètement évaporé). Faites refroidir, puis hachez et mélangez avec la crème fraîche et un peu de sel.
- Faites blanchir les pois verts dans l’eau salée. Égouttez en réservant l’eau et passez au mélangeur en ajoutant peu à peu le liquide de cuisson afin d’obtenir une purée lisse. Passez la purée au tamis pour une finition plus délicate.
