CROCKPOT THAI CHICKEN CURRY

This Crockpot Thai Chicken Curry is healthy, tasty, & only takes one dish & five minutes to put together! 3 hours of cook time & you've got one yummy meal!

1 (14 oz) can full fat coconut milk (could also use lite)
1/4 cup peanut butter
2 tablespoons red curry paste
2 tablespoons fish sauce
3 tablespoons lime juice
2 tablespoons brown sugar
4 cloves garlic (minced or pressed)
1/2 cup chicken stock
1/2 teaspoon ground ginger
1/2 teaspoon crushed red pepper flakes
1 1/2 pounds boneless skinless raw chicken breasts
red bell peppers (sautéed - optional, but recommended*)
cilantro (for topping)
peanuts (for topping)
sliced green onions (for topping)

Steps:

  • Grease crockpot with cooking spray.
  • Whisk together sauce ingredients: coconut milk, peanut butter, red curry paste, fish sauce, lime juice, brown sugar, garlic, chicken stock, ground ginger, and crushed red pepper flakes directly in the crockpot.
  • Place chicken breasts on top.
  • Spoon sauce over the chicken, so it's fully submerged.
  • Cook in crockpot on LOW for 3 hours.
  • After 3 hours, remove chicken from the crockpot and cut into large, bite sized chunks. Place back into the sauce and stir to coat.
  • Serve immediately with sauteed bell peppers over rice. Top with chopped cilantro, crushed peanuts, and sliced green onions.

An easy recipe for a busy weeknight. Just throw 2 chicken breasts in a crockpot in the A.M., cover with coconut milk, spices & broth & let it cook. Serve over quinoa for a healthy dinner.

1 1/4 pounds boneless chicken breast
1 cup chicken broth
1 can coconut milk
1/2 cup creamy peanut butter
2 cloves garlic, (minced)
1 teaspoon minced ginger
3 Tablespoons Dixie Crystals Light Brown Sugar
2 Tablespoons soy sauce ((Tamari for gluten-free))
2 Tablespoons rice vinegar
1 lime, (juiced)
2 cups fresh broccoli florets
1 cup frozen edamame, (without pods)
Garnish: green onions, (sliced, cilantro, chopped, peanuts)
1 cup quinoa
2 cups chicken broth

Steps:

  • Place chicken in bottom of crockpot.
  • Combine all ingredients except broccoli, edamame and garnishes. Whisk together then pour over chicken.
  • Cook chicken for 6 hours on low. When time is up, shred chicken with 2 forks. It is not necessary to take out of crockpot as it will just fall apart when you fork it. Do not turn off crockpot.
  • Crockpot will go to warm setting when cooking is complete. Place broccoli and edamame in crockpot, cover again, and let steam for 30 minutes while you make the quinoa.
  • To make quinoa, place 1 cup quinoa and 2 cups chicken broth in saucepan. Bring to a boil, cover, turn down heat and simmer for 15 minutes. Remove from heat and fluff with fork.
  • To serve: Place quinoa is serving bowl and ladle Thai chicken on top. Sprinkle peanuts on top and garnish with green onions and cilantro.

1/4 cup flour
1 tablespoon red curry (I used Taste of Thai red curry base)
1 tablespoon minced garlic
1 teaspoon salt
4 chicken breasts, cut into bite-sized pieces
1 medium onion, halved and thinly sliced
2 large carrots, thinly sliced
1 medium bell pepper, quartered and sliced

Steps:

  • Whisk coconut milk, flour, and curry base in slow-cooker until smooth.
  • Whisk in garlic and salt.
  • Add chicken, onion, and carrots; stir to mix.
  • Scatter bell pepper over top.
  • Cover and cook on low 6 to 8 hours until chicken and vegetables are tender.

4 boneless skinless chicken breast halves
3 medium potatoes, peeled and chopped
1 medium onion, sliced
1 (14 ounce) can coconut milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons curry powder (or to taste)
1 teaspoon hot sauce (optional, more if desired)
1 cup chicken broth
1 (10 ounce) package frozen peas, thawed
2 -3 tablespoons toasted flaked coconut (optional)

Steps:

  • Heat oil in a medium fry pan.
  • Add chicken breasts and brown on both sides.
  • Place potatoes and onion in crock pot.
  • Place chicken breasts on top.
  • Combine coconut milk, salt, pepper, curry powder, hot sauce and chicken broth in a bowl and stir thoroughly.
  • Add to crock pot.
  • Cover and cook on low 6 to 8 hours.
  • One half hour before serving, add peas on top of chicken mixture.
  • Just before serving, stir mixture thoroughly and sprinkle with toasted coconut if using.
  • Serve over rice or Asian noodles, if desired.

2 tablespoons Thai curry paste (1 for less spicy tastes)
1 cup water
2 cups chicken broth
3/4 lb skinless chicken breast

2 fresh lemongrass, bruised (cut off bottom 5 inches, peel off outer layer and smash the stalk with the back of a chef's knife)
fresh lime juice, to taste

1 small onion (cut thin)

1 tablespoon lime juice
2 (400 ml) cans coconut milk (Chaokoh brand)

6 leaves Thai basil
