1 cup water
1/2 cup white vinegar
1 tablespoon soy sauce
1 cup packed brown sugar
1 1/2 lbs boneless skinless chicken breasts (cut in bite size pieces) or 1 1/2 lbs chicken thighs (cut in bite size pieces)
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Combine ketchup, water, vinegar, soy sauce and sugar in slow cooker; whisk together well.
  • Add chicken pieces and stir.
  • Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
  • Combine cornstarch and second amount of water in a small bowl; stir into slow cooker when above times have been reached.
  • Cook on High, stirring often, for 15 to 20 minutes or until thickened.
  • For faster cooking, pour into saucepan and heat on stove, stirring often, until thickened.

1 (14 ounce) can low-sodium low-fat chicken broth
1/4 cup vinegar
3 tablespoons brown sugar or 1 1/2 tablespoons Splenda brown sugar blend
1 teaspoon minced garlic
2 teaspoons reduced sodium soy sauce
1 large red bell pepper, cut into 1 inch chunks
1 medium onion, cut into 1 inch chunks
3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Spray inside of slow cooker with cooking spray.
  • Place chicken breasts in slow cooker. combine pineapple syrup, broth, vinegar, brown sugar, garlic, and soy sauce in small saucepan.
  • Cook over medium heat, stirring frequently until sugar dissolves.
  • Pour mixture over chicken.
  • Cover and cook on high heat for 1 hour.
  • Add pineapple chunks, onion, bell pepper; cover and cook on low for 6-8 hours.
  • Combine cornstarch and water in a small bowl and mix until smooth.

1 cup baby-cut carrots, cut in half
1 medium onion, chopped (1/2 cup)
3 cloves garlic, finely chopped
1 teaspoon finely chopped gingerroot
2 pounds boneless, skinless chicken thighs, cut into 2-inch pieces
1/2 cup reduced-sodium soy sauce
1/2 cup packed brown sugar
1 medium red bell pepper, cut into 1-inch pieces
1 medium green bell pepper, cut into 1-inch pieces
1/4 cup cornstarch
1/4 cup water
Hot cooked rice or chow mein noodles, if desired

Steps:

  • Drain pineapple, reserving juice. Place pineapple chunks in small bowl; cover and refrigerate.
  • Place carrots, onion, garlic and gingerroot in 4 1/2- to 6-quart slow cooker. Top with chicken. Mix soy sauce, brown sugar and reserved pineapple juice; pour over chicken.
  • Cover and cook on low heat setting 7 to 9 hours or until juice of chicken is no longer pink.
  • During last 30 minutes, add pineapple and bell peppers. Increase to high heat setting. Mix cornstarch and water; stir into chicken mixture during last 10 minutes of cooking. Serve with rice.

1 Tbsp. cornstarch
1 green pepper, cut into strips
1 red pepper, cut into strips
3 cups hot cooked long-grain white rice

Steps:

  • Place onions, carrots and celery in slow cooker sprayed with cooking spray; top with chicken.
  • Mix sugar, dressing, soy sauce and ginger until blended; pour over chicken. Cover with lid.

4 tablespoons cornstarch, divided
¼ teaspoon garlic powder
¼ teaspoon ground ginger
1 ½ pounds skinless, boneless chicken thighs, cubed
1 tablespoon vegetable oil
1 (20 ounce) can pineapple chunks in juice
½ cup chicken stock
¼ cup rice vinegar
¼ cup brown sugar
2 tablespoons ketchup
2 tablespoons soy sauce
1 medium red bell pepper, seeded and chopped
1 green onion, chopped

Steps:

  • Mix 2 tablespoons cornstarch, garlic powder, and ground ginger together in a small bowl. Toss chicken thighs in cornstarch mixture until they are evenly coated.
  • Heat oil in a skillet over medium-high heat. Cook chicken in the skillet until browned on all sides, 3 minutes per side. Transfer to a plate and set aside.
  • Drain juice from the can of pineapple chunks into a measuring cup. You should have approximately 3/4 cup to 1 cup of juice.
  • Mix 1/2 cup pineapple juice, chicken stock, rice vinegar, brown sugar, ketchup, and soy sauce together in a slow cooker. Add browned chicken pieces and stir to coat chicken with the sauce. Cook on Low for 3 1/2 hours.

4 frozen chicken breasts, skinless and boneless
1 (20 ounce) can pineapple tidbits
1/2 large onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 tablespoon soy sauce
1/4 cup Thai sweet chili sauce
1/2 cup chicken broth
1 tablespoon cornstarch
1/4 cup cold water

Steps:

  • Place the frozen chicken in the crockpot and dump the pineapple (WITH the juice) on top.
  • Scatter the chopped vegetables over the chicken and pineapple.

1 tablespoon canola oil
