SIMPLE CORNISH HEN ALA CROCK-POT



Simple Cornish Hen Ala Crock-Pot image

My favorite cooking appliance is the crockpot. It is so versatile and I am finding can be used for anything. I came up with this recipe and just made it last evening very easy. Only 4 ingredients.

Number Of Ingredients 4

2 Cornish hens, split
2 white onions, sliced
10 small red new potatoes, halved
spike seasoning

Steps:

  • Split the hens lengthwise wash and pat dry.
  • Slice the onions.
  • Halve the potatoes.
  • Spray a light coating of nonstick spray on bottom of crockpot.
  • Sprinkle chicken liberally with spike seasoning both inside and out.
  • Lay hens skin side down on bottom of crock pot.
  • Layer onion slices on top of hens.
  • Dump Potatoes on Onions.
  • Sprinkle more Spike seasoning.
  • Cover crock pot. Turn to high for about 4 hours and then on warm till served.

This is a delicious way to serve something a little exotic without slaving over a hot stove with complex recipes. Serve this with your favorite hummous and pita bread along side a spinach salad.

2 Cornish hens, thawed and halved
1 garlic clove, crushed
1 tablespoon honey
1/4 teaspoon ground turmeric
1 teaspoon grated onion
1/2 teaspoon allspice
1/4 teaspoon salt
1/16 teaspoon cayenne pepper
1 liter lg tomatoes, seeded and chopped

Steps:

  • Rinse hens.
  • Pat dry.
  • In small bowl, combine garlic, honey, turmeric, onion, allspice, salt and cayenne.
  • Brush this mixture on hens.
  • Cover and refrigerate at least 4 hours.
  • Place in cooker with juice from marinade.
  • Sprinkle tomatoes over top.
  • Cook on low 5 and 1/2 to 6 hours.
  • Arrange on serving platter over hot, cooked rice.
  • Sprinkle with toasted sesame seeds if desired.

This is my fiance's favorite slow cooker meal of mine. I usually serve it with the veggies over wild rice. You can turn this recipe for 2 into 4 by splitting the hens lengthwise after cooking.

2 Cornish game hens
1 (10.75 ounce) can golden mushroom soup (such as Campbell's®), divided
2 cups chopped baby portobello mushrooms
1 (7 ounce) jar pimento-stuffed green olives, drained and chopped
1 large zucchini, chopped
1 teaspoon garlic salt

Steps:

  • Coat the hens with about 1/4 of the mushroom soup.
  • Mix the remaining mushroom soup with mushrooms, olives, zucchini, and garlic salt in a bowl. Stuff the mixture inside the hens. Arrange hens, breast sides up, in the slow cooker. Spoon any remaining soup mixture over the hens.
  • Cook the hens in the slow cooker on High for 4 hours.

  • wash chicken and pat dry. Sprinkle cavity generously with salt and pepper and parsley. Place in crock pot and dot with butter. Sprinkle with spices. Cook on high for one hour, then low 8 hours.

  • Shake marinade ingredients together in a gallon-size resealable bag. Add defrosted hens and marinate in refrigerator 20-30 minutes. (Or add frozen hens and let them marinate as they defrost overnight in the refrigerator's meat drawer.)
  • Slice the onions in half and place them flat-side down in the crockpot. (Alternatively: wad 4 pieces of aluminum foil into lemon-sized balls. Place these in the bottom of your crockpot.)
  • Put each hen on top of 2 of the onion halves (or foil balls), so it's raised at least 1 inch from the bottom of the crockpot. Pour remaining marinade over the hens. (Optional: melt and drizzle the butter over the hens.)
  • Cook on LOW for 8 hours or HIGH for 4 hours. Remove the crockpot lid and let the hens rest 5 minutes before transferring to serving plates.
