This thick, hearty chicken and veggie slow cooker pot pie eats like a meal, filled with onion, carrots, celery, and peas. Serve each bowl topped with a biscuit.

2 (10.75 ounce) cans condensed cream of chicken soup
1 ½ cups chopped carrots
1 ½ cups chopped celery
1 yellow onion, chopped
1 cup chicken stock
¼ cup chopped fresh parsley
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds skinless, boneless chicken breasts
1 ½ cups frozen peas
1 ½ cups frozen corn

Steps:

  • Combine cream of chicken soup, carrots, celery, onion, stock, parsley, paprika, oregano, salt, and black pepper in a slow cooker and stir to combine; the mixture will be thick. Nestle the chicken breasts in the mixture and spoon some over to cover.
  • Cook on Low for 7 1/2 hours. Remove chicken from the slow cooker and shred using 2 forks. Return shredded chicken to the slow cooker. Stir in peas and corn.
  • Continue cooking on Low until heated through, about 30 minutes more.

3 -4 frozen chicken breasts
2 (15 ounce) cans condensed cream of chicken soup
4 -5 medium potatoes, peeled and diced
2 cups frozen peas and carrots
1 chicken bouillon cube
1/2 teaspoon salt and pepper
1/2-1 cup shredded cheese
1 (7 1/2 ounce) can biscuits

Steps:

  • In Crock Pot, combine chicken breasts, potatoes, frozen vegetables, bullion cube, cream of chicken soup and mix well. Add additional salt and pepper if desired.
  • Cook on low for 6-8 hours until chicken is fully cooked. Use a sturdy spoon to break up the chicken after cooking.
  • Prepare biscuits.
  • Serve over biscuits.
  • Top with shredded cheese.

1/2 cup wine, dry white
2 tablespoons flour, all-purpose
1/2 teaspoon salt, Kosher
1/2 teaspoon pepper
4 medium carrots, cut into one inch pieces
2 stalks celery, sliced
1 onion, chopped
1 1/2 lbs chicken, boneless and skinless cut into 2 inch pieces
1 cup peas, frozen
3 tablespoons herbs, fresh (I used rosemary, sage and oregano)
8 biscuits, frozen and cooked according to directions

Steps:

  • In a 5-6 quart slow cooker, whisk together the wine, flour, 1/2 cup water, and 1/2 teaspoon each salt and pepper.
  • Add the carrots, celery, onion and chicken and toss to combine. Cook covered, until the chicken is cooked through and easily pulls apart, 6-7 hours on low or 4-5 hours on high.
  • When the chicken has 30 minutes left to cook, heat oven and cook the biscuits.
  • Gently fold the peas and herbs into the chicken and vegetables and cook, covered, until heated through, about 3 minutes. Spoon into bowls and sprinkle with additional herbs if desired. Top with the biscuit.

2 1/2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon garlic salt
1/2 teaspoon seasoning salt
2 cups boneless skinless chicken breasts, cubed
1 (10 -15 ounce) package frozen mixed vegetables
2 potatoes, cubed
1 garlic clove, chopped
2 cups chicken broth
2 cups water
1 egg
1/2 cup milk
1 cup pancake mix

Steps:

  • Mix the flour, salt, pepper, paprika, garlic salt, and seasoning salt.
  • Add the cubed chicken to flour mixture, mix.
  • Add vegetables, potatoes, and garlic.
  • Add the chicken broth and water, mix all together.
  • Turn crock pot on low, stirring occasinally for 8 hours.
  • Topping:.
  • Preheat oven to 400 degrees.
  • Mix egg, milk, and pancake mix.
  • Pour mixture over the top of chicken
  • Remove stone from bottom of crock pot.
  • Bake in the oven for 15-20 minute.
  • Note: You could also use your homemade pancacake recipe instead of the mix.

Steps:

  • Combine chicken, soup, milk, potatoes, onions and spices in crock pot.
  • Cook on low for 6 Hours.
  • Add package of peas and carrots- cook for 10 minutes longer.
  • Transfer to pie plate.
  • Cover with crescent rolls.
  • Bake according to crescent roll's package.
