- Cut roast in half and place in a 3- or 4-qt. slow cooker. In a small bowl, combine the ketchup, brown sugar, barbecue sauce, Worcestershire sauce, mustard, liquid smoke if desired and seasonings. Pour over beef., Cover and cook on low for 8-10 hours or until meat is tender. Remove meat; cool slightly. Skim fat from cooking liquid., Shred beef with two forks; return to the slow cooker. Cover and cook for 15 minutes or until heated through. Using a slotted spoon, place 1/2 cup on each bun. Serve with onions, pickles and jalapenos if desired. Freeze option: Place individual portions of cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little broth / water if necessary.

- Mix first nine ingredients. Cut roast in half; cut slits in roast and insert garlic. Place in a 5-qt. slow cooker. Pour sauce over top. Cook, covered, on low until tender, 8-10 hours., Remove beef. - In 3 1/2- to 4-quart slow cooker, place beef. In 4-cup measuring cup or bowl, mix 1 1/2 cups of the barbecue sauce and the root beer; pour over beef.
- Cover; cook on Low heat setting 10 to 12 hours.
- About 20 minutes before serving, remove beef from slow cooker; place on large plate. Pour juices from slow cooker into 12-inch skillet. Cook over medium-high heat about 15 minutes, stirring occasionally, until juices are thickened and reduced to about 3 cups. Meanwhile, shred beef with 2 forks; return to slow cooker.
- Stir remaining 1/2 cup barbecue sauce into reduced juices in skillet; pour over shredded beef in slow cooker. Stir in salt and pepper to taste. Spoon about 1/2 cup beef mixture into each bun.

This quite tasty after a long day at work, more seasonings can be added, to add heat if you wish. Serve with a salad. I have also served it with mashed potatoes and veggies, without buns.

Steps:
- Trim excess fat from beef.
- Cut beef into 4 pieces.
- Place beef in 4-5 quart crock pot slow cooker.
- Mix remaining ingredients except buns, pour over beef.
- Cover and cook on low heat setting 7-8 hours or until beef is tender.
- Remove beef from slow cooker.
- Cut beef into thin slices.
- Stir back into sauce.
- Cover and cook on low heat setting 20-30 minutes longer or until beef is hot.
- Fill buns with beef mixture.
- The leftover beef can be frozen with the sauce if you do not need 12 at one sitting.
CROCK POT BEEF BRISKET SANDWICHES
This is a pretty simple recipe, and I'm sure people are already making these. BUT if you were looking for ideas, sometimes things as simple as this goes a long way at the dinner table. I thought of making this on a whim one day while roaming the meat isle, and to my surprise it's one of the dishes my family loves. It also smells really good while cooking. This does make quite a bit, so freezing for a rainy day is a very good option. Just put in the microwave at a later date and serve it up again. Although in this house, we are usually fighting over the left overs the next day. Enjoy!!

- Put beef brisket in crock pot.
- Top with your favorite BBQ sauce. Just enough to cover the meat.
- Place onion slices and diced garlic on top of meat.
- Cook on low for 8 hours. When done, use a fork to shred the meat. (Poke the meat and then pull down with the fork) Once shaved it will mix with the BBQ sauce nicely.
- Serve on a fresh bun of choice and top with either a thick Cheddar or American cheese slice. Another alternative could be melted Velveeta. Make sure each sandwich has a little bit of the onion slices in there, it really adds to the flavor and texture.
- I usually serve this with a little side salad for a quick dinner.

Growing up, my Mom used to make barbecued beef in the crock pot and it always tasted so good. It's definitely comfort food for me. After I got out on my own, I was determined to make barbecue beef just like hers, so I tried lots of recipes and finally came up with one of my own. I was so pleased! - Combine the onion, brown sugar, pepper, salt, chili powder, paprika, oregano, garlic, ketchup, water, white vinegar, canola oil, Worcestershire sauce, and liquid smoke in a slow cooker; stir. Lay the beef pieces into the sauce. Cook on LOW for 10 hours.
