CROCK POT TURKEY CHILI WITH BACON
Beware... this is a pretty hot chili. Ground beef can be substituted for ground turkey. Freezes very well.

Steps:
- Fry bacon until it starts to brown, cut into bite size pieces and put into crock pot.
- Brown the ground turkey with onions.
- Combine ground turkey, kidney and pinto beans, canned tomatoes, tomato paste, chili powder, cumin, and chicken broth and add to crock pot.
- Use food processor or mini-prep to puree garlic, tomato, and jalapeno peppers and add to crock pot.
- Mix all ingredients in crock pot and let it cook for 6-8 hours on low.

TURKEY & BACON SLOW COOKER CHILI RECIPE
Steps:
- Add oil to a sauté pan and heat over medium for a minute or so. Then add ground turkey meat and start to work your spatula through it. Break it up as it cooks into small pieces. Cook until it's white (not pink).
- Meanwhile, start assembling your crockpot. Add carrots first to the bottom of your slow cooker. They require the most direct heat for the longest period of time.
- Next add the pepper stripes, onion, garlic, celery, garlic, and frozen spinach in this order layered on top of each other.
- When the turkey is cooked, add it directly on top of the veggies.
- Start cooking the bacon in the sauté pan. Do not cook until crispy. You only need to cook it until it starts to brown. Then remove it from the pan and cut into 1/4" strips. Add them on top of the turkey meat.
- Pour the canned tomatoes evenly over top. Don't worry if the crockpot is quite full. Just shift the contents around to help the tomato sink into the crockpot around the veggies. If you think you may need more liquid, add about 1/2 cup water.
- Add the spices evenly over top. If you'd like to mix it up a bit, that's fine. But do not pull the veggies up in the process.
- Set your crockpot to cook for 8 to 10 hours on low. About an hour before you are ready to serve it, add the frozen peas.
- When it's done, add the cooked kidney beans to the crockpot and combine.
- Adjust spices to taste and serve.
CROCK POT TURKEY CHILI
No pretense to regional authenticity, but it's the way we like it! You can add more "heat" by increasing the pepper flakes. Goes good with Barb's "recipe #150277". Substitute canned black beans for a change of taste, or use 1 can each of kidney and black beans.

- Heat 1 tbs. oil in skillet. Saute onions and garlic until soft, and slightly browned. Put into crock pot.
- Heat remaining oil and brown ground turkey (I use ground dark meat, not as dry as breast meat when cooked). Put meat into crock pot.
- Add remaining ingredients to crock pot and stir together.
- Cover and cook on high for 4-6 hours.
- Serve in large bowls, with cornbread on side.
- Optional toppings at table: Diced red or sweet yellow onion. Shredded cheddar or pepper jack cheese. Sour cream.

FULL FLAVOR CROCK POT TURKEY CHILI
If you like a chili full of robust flavor... You have got to try this recipe! Everyone who has tried it says it is the best chili they have ever had and it's made with turkey! You can adjust the spice from Mild to HOT-HOT! If you don't want to use dried beans, please feel free to used canned.

- Mix and soak beans overnight per package directions.
- Process the fresh tomatoes, garlic, cumin, oregano, paprika, chili powder, cayenne pepper and jalapeno (hot) peppers in the food processor; place in the refrigerator overnight.
- Note: The 2 tablespoons each of hot spices makes a very mild chili- while the 4 tablespoons w/added hot peppers turns up the heat-- for those who like it HOT!
- Take out four or five cups of the soaked beans and place in crock pot (cut it to 3 cups if you did the fast soak- they will still expand while cooking).
- Freeze the rest for later use.
- If you are using canned beans you'll lose some of the flavor-- but it's still good.
- Fry the bacon until crispy and place in crock pot.
- Brown the ground turkey in some of the bacon drippings and place in crock pot.
- Add the crushed tomatoes, tomato paste, onions, bell peppers, broth, beer and tomato spice puree.
- Stir to mix and let cook for 10-12 hours on low.
- (You can also cook for 5-6 hours on high, but the beans will not soak up as much of the flavor).
- Serve topped w/the shredded cheddar cheese.
- This recipe is for a large crock pot. You can cut down on the ground turkey, beans and bell peppers a little if you have a smaller crock pot.
