Steps:

  • Add all ingredients to a large slow cooker and stir with water to combine.
  • Cover and cook on low for 5-6 hours or high for 3-4.
  • Let cool completely before serving to your pup.

2 tablespoons vegetable oil
3 tablespoons tomato paste
3 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper
3/4 pound ground turkey (preferably dark meat)
Kosher salt
One 28-ounce can fire-roasted diced tomatoes
2 3/4 cups low-sodium chicken broth, plus more for thinning the chili if needed
1/4 cup unsweetened cocoa powder
2 tablespoons red wine vinegar
1 tablespoon dried oregano
Two 15-ounce cans pinto beans, strained and rinsed
1 medium onion, chopped
2 cups crushed corn tortilla chips, plus whole for serving
3 cloves garlic, chopped
Sliced scallions, shredded Cheddar, sour cream and chopped pickled jalapeno, for serving

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat. Add the tomato paste, chili powder, cumin and cayenne and cook, stirring, until the oil is brick-red and the mixture is dry, about 2 minutes. Add the ground turkey and 1 teaspoon salt and cook, stirring and breaking up into smaller pieces, until the mixture is combined (the turkey doesn't need to be cooked all the way through at this point). Transfer the mixture to the insert of a 6-quart slow cooker.
  • Add the tomatoes, chicken broth, cocoa powder, vinegar, oregano and 1 teaspoon salt to the skillet over medium-high heat and bring to a simmer, whisking. Cook for about 2 minutes. Add the tomato mixture, beans, onions, crushed tortilla chips and garlic to the insert and give the mixture a good stir. Cover and cook on low for 6 to 8 hours.
  • Add chicken broth to thin the chili, if necessary. Season with salt. Serve with scallions, Cheddar, sour cream, pickled jalapeno and tortilla chips.

6 lb whole turkey or turkey breast
2 large onions
1 large orange
4 clove garlic
22 oz chicken broth
extra virgin olive oil
1 pkg good seasons italian salad dsg
1 tsp bells all natural seasoning (salt-free)
1 tsp badia poultry seasoning
1 tsp garlic powder
fresh ground pepper to taste
1/2 c chardonnay
dash of sweetner (used raw sugar)
2 pats of butter

Steps:

  • 1. Wash and Dry Turkey (or turkey Breast) - leave the skin on. Set aside. Coat crockpot with olive oil.
  • 2. Slice one onion in to fourths. Place onion on bottom of crockpot to make a shelf for turkey to sit on. For garlic lovers, add a few extra garlic cloves on the bottom in this step. Slice the other onion in to four wedges. Slice orange in to four wedges.
  • 3. In a bowl, thoroughly mix all dry seasonings together.
  • 4. Rub entire turkey (or turkey breast - both inside and out) with olive oil. Gently pull skin away from breast. Season entire turkey including under the skin. Add 2 pats of butter under the skin.
  • 5. Insert onions, oranges and garlic cloves into chest cavity.
  • 6. Place turkey in crockpot breast side up resting on the sliced onions.
  • 7. Add chicken broth and chardonnay, trying not to wash off seasons.
  • 8. This step is as per my crockpot. I have noticed that not all crockpots are alike. Adjust to your cooking crockpot time. Mine: 90minutes on high and 5 hours on low.
  • 9. Gently shred turkey in crockpot and keep warm.
  • 10. Very moist and juicy! Enjoy!

turkey or vegetable stock
1-9.5 lb. turkey, fresh is best
olive oil
potatoes
carrots
celery
onions
dry rub or mixed herbs (see below)

Steps:

  • 1. REMEMBER: DO STEPS 2 OR 3 24 HOURS AHEAD OF TIME TO ENSURE GOOD FLAVOUR!!! AND REMEMBER TO START EARLY IN THE MORNING ON HIGH IF IT'S A BIG BIRD. CHECK THE TEMPERATURE PERIODICALLY WITH A MEAT THERMOMETER. 180'F IS YOUR GOAL TEMPERATURE. IF THIS IS DONE FASTER THEN ANTICIPATED JUST PUT ON LOW OR BUFFET SETTING IF YOU HAVE ONE.
  • 2. Once you have washed and patted dry your turkey rub it all over with Olive Oil, then coat with your favourite dry rub. Salt and pepper the whole bird too.
  • 3. If you prefer to use just herbs using sage, thyme and marjoram is recommened. I'd even throw in a little rosemary to the mix because I like it.
  • 4. Once the bird has sat for a day in the fridge with the dry rub or herbs on it you're ready to start to cook the bird, first start with the veggies...
  • 5. Cut them up in good size chunks other wise they might dissintegrate on you. Lightly toss the veggies in olive oil and season with salt and pepper. Put in the bottom of the crock pot.
  • 6. Pour the stock into the crock pot, but use only a small amount, it's just for steam, not to boil the turkey. Place the turkey on top of the veggies and stock. If you have more veggies then can fit under the turkey slide them along side the turkey.
  • 7. Basting isn't necessary, it should baste itself, but if you open the lid a lot it might not baste properly, so hand baste if you like to peek a lot. You can also baste it with some whole cream or egg white to crisp the skin.
  • 8. When it hits 180'F it's done. When serving, be careful. Chances are the bird will be very tender and the meat will fall off the bones. You might want to take the wings, legs etc. off and display them on a nice platter. If you wish serve the cooked veggies along side in a nice dish. You can also add some greens around the edge of the platter under the turkey for presentation.
  • 9. If you have any juice left in the bottom use it to make gravy, it will be delicious.
  • 10. Enjoy!

This is a great recipe that I use when I need a lot of moist flavorful cooked chicken/turkey. It's great for salads, enchiladas etc. The breast is even moist enough to slice up and serve for dinner or put on sandwiches.

6 -6 1/2 lbs turkey breast
2 teaspoons vegetable oil
salt and pepper
1 medium onion
4 garlic cloves

Steps:

  • Rinse the turkey and pat it dry with paper towels.
  • Rub turkey all over with the oil.
  • Carefully pull back skin over breast and rub with seasonings.
  • Place breast, meaty side up into a 5 quart slow cooker.
  • Peel the onion, cut it into quarters and place around the edges of the pot.
  • Peel the garlic cloves and place around the sides of the cooker (maybe rub some minced under the skin).
  • Cook for 9 hours if frozen or 7 ½ hours if not frozen on low or to 170 degree internal temperature.
  • Let bird rest 10 minutes before carving.
  • Discard vegetables.

I now have my crock-pot 6 months. Because I don't need it as a time saver I have not used as much as I thought I would. But, it is great to make good chicken stock and I use it for that purpose a lot. I let the crock-pot do this during the night. My crock-pot is 3 liter/quart so a small one, adjust the ingredients to the size pot you are using and use your own judgement. I find it handy to freeze some of the stock in ice-cube bags for sauces. If you do not have all the ingredients on the list...it does not matter, you also do not have to follow the amounts exactly, be creative and add other veg or more of the same, or what you have in the fridge and think is suitable for making this recipe, just let it cook slowly to get a great rich stock. Have fun with this and enjoy the result!

3 -4 lbs chicken bones (raw or cooked, boiling fowl or chicken or carcasses)
onions, chopped or quartered leave the skin on it gives nice color to the stock

1 bay leaves or 1 bouquet garni

boiling water

Steps:

  • Preheat the crock-pot on high.
  • Try breaking up the bones as small as possible, place with all the other ingredients in the crock-pot.
  • Cover with as much boiling water your crock-pot can take, I can add approx 6 cups of water.
  • Switch to LOW and cook for 12 or up to 24 hours.
  • Strain, cool, skim of the fat, use the stock or freeze.
  • If there is any meat on the bones, remove it and use for the soup or other dishes, it will be also good for a ragout.
  • Enjoy!

1 1/2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/4 teaspoon pepper
3 medium onions, quartered
12 cloves garlic, peeled
1 bone-in skin-on whole turkey breast (about 6 pounds), rinsed and dried
1/2 cup (1 stick) butter, room temperature

Steps:

  • In a small bowl, mix the salt, garlic powder, smoked paprika and pepper until well combined. Put the onions in the bottom of a 6-quart slow cooker with the garlic cloves.
  • Slowly work your fingers under the skin of the turkey breast to separate the skin from the breast, being careful not to tear the skin. Rub the butter under the skin, covering the entire breast as evenly as possible, then rub the outside of the skin with the garlic powder mixture.
  • Place the turkey breast on top of the onions and garlic in the slow cooker and set the slow cooker to low. Cook until the meat is falling apart, 6 to 8 hours depending on the size of the breast.
  • Remove the turkey and any bones from the slow cooker. Pull the meat off of the bone and place the turkey back into the juices left in the slow cooker. Using 2 forks, shred the meat in the juices and allow to rest for 5 to 10 minutes before serving.

This makes a wonderfully easy appetizer that is great to serve with tortilla chips, hearty crackers, breadsticks or whatever you like! The bacon can be easily cooked in a microwave oven before adding to the crock pot. I usually just place the bacon strips without overlapping on a paper towel on a plate. I usually cook it for 1 minute per slice but it depends on your microwave and the thickness of the bacon. It's easier to cool the bacon before crumbling it so you don't burn yourself. The jalapeno is optional depending on if you like it spicy. I used a 5-quart crock pot for this recipe. Enjoy!
