Steps:
- Heat olive oil in a large skillet over medium heat; cook pork chops in the hot oil until browned, about 5 minutes per side. Transfer browned pork chops to a slow cooker; top pork chops with onion and green peppers.
- Whisk tomato sauce, brown sugar, vinegar, Worcestershire sauce, and salt together in a bowl. Pour sauce into slow cooker, gently stirring to coat meat and vegetables.
- Cook pork chops on Low until tender, 6 to 8 hours.
- Transfer pork chops to a serving platter; tent with aluminum foil to keep warm. Whisk cornstarch into sauce until thickened; spoon sauce and vegetables over pork chops.

SLOW COOKER PORK CACCIATORE
A wonderful Italian neighbor showed me how to make this recipe after I commented on how good it made the neighborhood smell when she had her windows open when she made it. This American-Italian term refers to food prepared 'hunter-style,' with mushrooms, onions, tomatoes, various herbs, and sometimes wine. I found adding cheese gave it something special, it also made it mine.

- In a large skillet, brown chops over medium-high heat. Transfer to slow cooker.
- In the same pan, cook onion in oil over medium heat until browned. Stir in mushrooms and bell pepper, and cook until these vegetables are soft. Mix in pasta sauce, diced tomatoes, and white wine. Season with Italian seasoning, basil, and garlic. Pour over pork chops in slow cooker.
- Cook on Low for 7 to 8 hours. To serve, place a slice of cheese over each chop, and cover with sauce.

Steps:
- Heat oil in either a dutch oven or pot
- Cut onion into quarters. Peel garlic cloves.
- Add onion and garlic in oil.
- Season pork chops with salt and pepper.
- Brown pork chops on each side.
- Pour peeled tomatoes into bowl. Squeeze with hand to crush.
- If using slow cooker, add tomatoes to crock pot. Add Chops. Cook on low 6 to 8 hours.
- If using dutch oven, cook everything in dutch oven, add tomatoes, white wine.
- Add 1 teaspoon sea salt and a few grinds of black pepper.
- If the sauce looks too thick add a half cup water.
- Cook on very low for three hours either at 300 degrees in oven or on lowest possible burner on top of stove, stirring occasionally.
- If you want to add in green beans, trim and cook with the sauce.
- Discard the onion, garlic and carrot before serving.

CROCK POT PORK CHOP CHILI
Adapted from a recipe by Jen Santiago (http://www.recipezaar.com/member/137839): I needed a pot of chili to take to a Cook-Off, and had pork chops on hand. I tweaked Jen's recipe for pork chops with chili sauce, then I added tomatoes and kidney beans in the last 2 hours of cooking to make a pot of chili. Got great reviews from my friends!

- Lightly brown onions in oil.
- Add garlic powder, Worcestershire sauce, chili powder, water and ketchup.
- Simmer the sauce for 10 minutes.
- Arrange pork chops in crock pot, pour sauce over the chops.
- Cover and cook for 20 minutes on HIGH.
- Turn to LOW HEAT for 3 1/2 hours.
- Add beans and tomatoes. Cover and cook for another 1 1/2 hours, for a total of 5 hours cooking on LOW heat.
- The pork will fall off the bones. Remove bones and serve.
- If you're in a hurry, you can add the tomatoes and beans earlier and cut the total cooking time. In my crock pot, the pork is well-cooked at about 4 hours.
- Note: This is the kid-friendly not-very-spicy version. For extra heat, feel free to add more chili powder.

- Heat a large skillet over medium-high heat. Add the cooking oil. Add the pork chops to the pan and brown on both sides, no need to cook all the way through, the slow cooker will do that. Set aside while you make the sauce.
- Add the diced tomatoes, tomato paste, chicken broth, garlic, salt, pepper, thyme and oregano to the slow cooker. Stir until the tomato paste dissolves into the diced tomato juice. Add the onion and mushrooms, stir again. Add the pork chops into the sauce.
- Cover and cook on low for 6-7 hours without opening the lid during the cooking time.
- Serve over pasta or rice and enjoy!

Whenever I prepare this crock-pot dish the "F" word comes to mind ...FLAVORFUL! The porkchops slowly simmering in tomatoes, garlic, onion, wine and Italian seasonings will have your kitchen smelling wonderful and your family's mouths watering. The chops are so moist and tender that you can cut them with your fork. It makes for a perfect weeknight family meal, the church pot-luck dinner, or a relaxed dinner party. - Wash chops and pat dry with paper towels. Trim excess fat from meat.
- In a large skillet, heat the olive oil.
- Coat the pork chops in a mixture of flour, salt, garlic and onion powders, and Parmesan cheese. Lightly brown on both sides in the heated oil (YOUR PORKCHOPS SHOULD NOT BE COMPLETELY COOKED); drain chops on paper towels.
- Place the mushrooms, onion, and garlic in the bottom of your crock-pot; add the chops by laying them on top.
- In a large mixing bowl, combine the tomato sauce, whole tomatoes, wine or sherry, lemon juice, salt and spices (except the bay leaves). Give a good stir.
- Pour the tomato sauce mixture over the pork chops. Add bay leaves to crock-pot. Cover and cook on LOW for 7 - 9 hours (HIGH: 4 to 5 hours).
- 30 minutes before the cooking time is up, turn crock-pot to HIGH and arrange the green and yellow pepper rings on top of the pork chops. Cover and continue cooking for the last 30 minutes.
- Just before serving, top with mozzarella cheese. Serve with your favorite hot cooked pasta and a freshly tossed garden salad. Don't forget the warm and crusty Italian bread to dip into the delicious tomato sauce.
CROCK POT PORK CHOPS
This originally was a Campbell's Soup recipe which I doctored for our taste and adapted it for my crock pot too. This is great for a Fall or Winter meal. It is also yummy served over mashed potatoes. Since it was reviewed, I have altered it to make it more tasty.

- In a bowl mix tomato soup, sherry and Worcestershire sauce together.
- Mix flour thoroughly in water and add to soup mixture, stirring.

TOMATO SMOTHERED PORK STEAKS (OR CHOPS) FOR THE CROCK-POT
A tasty way to use, and stretch, an inexpensive cut of meat -- pork butt steaks. Simmering all day suits less-premium cuts, which don't dry out like boneless pork loin does. Served over pasta or rice, the spinach variation is a meal in one but otherwise you'll probably want a salad. Italian greens like endive or escarole would go particularly well with these flavors. Note: written for a 6-7qt crockpot. Note 2: I don't cook with salt but usually add it at the table. I found that I needed none on this so be cautious if you choose to add salt to the pot.

- Cut each steak into 2 or 3 pieces and trim excess fat.
- Pour one can of tomatoes into the bottom of a 6-7qt Crockpot. Top with 1/3 of each of the ingredients, ending with a layer made from half the pork steak pieces.
- Make another layer of 1/3 of everything, ending with the rest of the pork steaks.
- Finish with the remaining ingredients.
- Cook on low for 6-8 hours.
- Remove pork steak pieces carefully (they will probably break up so tongs will work better than a fork).
- Use a slotted spoon to scoop out the veggies and serve them over pasta or rice.
- Top with Parmesan.
- Tip: If you chill the flavorful juices to remove the fat you'll have a delicious starter for soup.
- Note: I do not recommend using an extra-lean cut such as boneless pork loin for this. Extra lean meat tends to dry out in long cooking even when submerged in liquid this way.
- Note: This should be just as good made with beef chuck or chicken thighs.
