An easy recipe for Crock Pot Teriyaki Chicken that takes less than 10 minutes to prep! Delicious, healthy, and so much better than takeout!

1 1/2 pounds boneless, skinless chicken thighs
2/3 cup low-sodium soy sauce
3 tablespoons rice vinegar
3 tablespoons honey
3 tablespoons brown sugar
1 clove garlic (minced)
1 tablespoon minced fresh ginger
2 tablespoons water
1 tablespoon cornstarch
Toasted sesame seeds (for serving)
Chopped green onions (for serving)
Prepared brown rice

Steps:

  • Place the chicken thighs in the bottom of a 6-quart or larger slow cooker.
  • In a medium bowl or large measuring cup, whisk together the soy sauce, rice vinegar, honey, brown sugar, garlic, and ginger. Pour over the chicken thighs.
  • Cover and cook on high for 2 hours or low for 4 hours, until the chicken is tender and cooked through. Remove the chicken to a plate and shred with two forks. Strain the cooking liquid through a mesh sieve and into a medium saucepan.
  • In a small bowl, whisk together the cornstarch and water until smooth. Add to the strained cooking liquid, whisk to incorporate, then heat the saucepan over medium high, stirring constantly until the sauce bubbles. Continue cooking and stirring until glossy and thickened, 1 to 2 minutes. Remove from heat.
  • Add the chicken to the sauce. Toss to coat. Serve warm with rice or quinoa, garnished with sesame seeds and green onions as desired.

1 young roasting chickens
1 cup bottled teriyaki marinade
1 (1 lb) package birds eye broccoli carrots and water chestnut mix
1 (1 lb) package Birds Eye Seven Vegetable Stir Fry (with broccoli, carrots, onions, red peppers, celery, water chestnuts & mushrooms)
1/3 cup soy sauce
4 cups hot cooked rice

Steps:

  • Marinate the chicken in the marinade overnight, flipping a couple of times.
  • Remove chicken from marinade and let excess drip off (there will be a lot).
  • Place vegetables in crock pot.
  • Place chicken breast side down on top of vegetables.
  • Pour soy sauce over the top of the chicken.
  • Cover and cook on LOW until thermometer reads 170F (6 hours).
  • Let sit uncovered in crock pot 5 minutes before serving.
  • Serve chicken and vegetables over rice.

½ cup soy sauce
½ cup honey
1 cup onion, chopped
¼ cup rice vinegar
1 tablespoon ginger, grated
2 garlic cloves, grated
¼ teaspoon black pepper
2 lb chicken thighs
1 broccoli head
1 carrot
1 zucchini
¼ cup water
3 tablespoons cornstarch

Steps:

  • Make the teriyaki marinade. In a medium bowl, mix soy sauce, honey, onion, rice vinegar, ginger, garlic, and black pepper, and set aside.
  • In the slow cooker, add chicken and teriyaki marinade.
  • Cook on high for 4 hours, or cook on low for 8 hours.
  • Cut vegetables into bite-size pieces.
  • Mix water into cornstarch and mix until cornstarch is melted.
  • Add cornstarch slurry and vegetables into the slow cooker for 30 minutes.
  • Serve by itself or in a bowl of brown rice.
  • Enjoy!

From the "Fix it and Forget It" cookbook of crockpot recipes. Turns out with little effort. We enjoy it served over rice, with a salad on the side. I also use jarred ground ginger and jarred minced garlic--comes out just as well. I often double the sauce ingredients that go on top of the chicken--if you like it with more sauce, I suggest you do this. I also use low-sodium soy sauce, otherwise it will be really salty.

6 -8 skinless chicken thighs
1/2 cup low sodium soy sauce
2 tablespoons brown sugar
2 tablespoons grated fresh ginger

Steps:

  • Wash and dry chicken. Place in slow cooker.
  • Combine remaining ingredients. Pour over chicken.
  • Cover. Cook on high 1 hours Reduce heat to low, cook 6-7 hours. (Again, I wanted to start this in the morning and have it for dinner that evening, so I cooked it only on low for about 9 hrs and it turned out perfectly--fall off the bone tender. I think you can adjust times as you see fit.).

500 g broccoli, cut into florets
4 garlic cloves, chopped
1 tablespoon teriyaki sauce
fresh ground black pepper
olive oil flavored cooking spray

Steps:

  • Preheat the oven to the hottest temperature, and line a non-stick oven tray with baking paper.
  • Wash the broccoli, dry thoroughly with paper kitchen towelling, place it in a large mixing bowl, add the chopped garlic, season with pepper, sprinkle with teriyaki sauce and toss to coat thoroughly.
  • Place the broccoli in a single layer on the prepared oven tray, spray lightly with olive oil, turn it over and spray lightly again.
  • Bake for 6 minutes; turn broccoli and bake for a further 6 minutes, or until just tender.

  • Add all the ingredients for the teriyaki sauce to a blender and blend until smooth. Set aside 1 cup of the sauce for the crock pot teriyaki chicken, and pour the rest of the teriyaki sauce (about 1 cup) into a saucepan. Heat to medium-high and bring teriyaki sauce to a full boil. Reduce the heat to a simmer and cook until thickened, about 8 to 10 minutes. Transfer the thick teriyaki sauce to a jar and refrigerate until ready to serve the crock pot chicken.
  • Add the chopped onion and sauté, stirring occasionally, until onion begins turning brown, about 10 to 15 minutes. Add the garlic and continue sautéing 2 minutes, until garlic is fragrant. Transfer the sautéed onion and garlic to your crock pot.
  • Place the raw chicken breasts on top of the sautéed onions in the crock pot and pour in the reserved 1 cup of teriyaki sauce, along with the chicken broth. Stir until broth and sauce are combined. Cover the crock pot and place on the lowest setting. Cook for 6 to 8 hours, or until chicken is tender and cooked through. Transfer chicken to a cutting board, leaving the juices in the crock pot. Use two forks to shred the chicken, then place it back in the crock pot.
