1/2 cup milk
1/2 cup sugar
1 1/2 teaspoons salt
1/4 cup shortening (better yet 1/4 cup unsalted butter)
1/2 ounce dry yeast, 2 packages (1 envelope or packet of Active Dry Yeast, Instant Yeast, Rapid Rise Yeast, Fast Rising Yeast or Brea)
1/2 cup very warm water
2 eggs, beaten
5 cups all-purpose flour

Steps:

  • Scald milk and stir in sugar, salt and shortening.
  • Cool to lukewarm.
  • Dissolve yeast in very warm water.
  • Stir until dissolved, then stir into the lukewarm milk mixture.
  • Add beaten eggs and 3 cups flour.
  • Beat until smooth and stir in an additional 2 cups flour.
  • Turn dough out onto lightly floured board and knead until smooth and elastic.
  • Place in a greased bowl and brush top with soft shortening.
  • Cover and let rise in a warm place, free from draft, until double in bulk (about 1 hour).
  • Punch down and turn out onto lightly floured board.
  • Use as desired to make any of the following sweet breads.

My mother's recipe. CDQ = Can Do Quick. It only needs to rise once. We grew up eating cinnamon rolls made with this. She also recommends it for crescent rolls. In my opinion, breads made with this tend to be dry so it's not my first choice. But it is quick . . .

2 (1/4 ounce) packages yeast
1/2 cup warm water
1 1/2 cups buttermilk or 1 1/2 cups sour milk
2 eggs
5 1/2 cups flour
1/2 cup soft butter
1/2 cup sugar
2 teaspoons baking powder
2 teaspoons salt
1/4-1/2 cup sugar
1 teaspoon cinnamon

Steps:

  • In large bowl, dissolve yeast in water.
  • Add buttermilk, eggs 2 1/2 cups flour, butter, sugar, baking powder, and salt.
  • Blend 30 seconds on low speed, 2 minutes on medium. Stir in remaining flour. Dough should remain soft and sticky.
  • Shape as desired. Let rise in warm place until double. (about 1 hour) Dough is ready when slight impression remains when you poke it.
  • Bake in moderate oven.
  • For cinnamon rolls: roll in 2 12 X 7 oblongs. Spread with softened butter. Sprinkle with cinnamon sugar mixture. Roll up long edge and slice appx. 1 1/2 inch slices. Place in greased pan and bake at 375* for 25-30 minutes.

Before she passed away, I was able to watch her make this dough and wrote the measurements down. It is a favorite of all the family, so I wanted to share it with everyone. 2 (1/4 ounce) packages dry yeast
1/2 cup warm water (105-115 degrees)
1 1/4 cups buttermilk
2 eggs
5 1/2 cups flour

Steps:

  • Dissolve yeast in the warm water in a large mixing bowl. Add buttermilk, eggs, 2 1/2 cups flour, butter, sugar, baking powder and salt.

  • Beat 2 minutes on medium speed. Stir in remaining 3 cups of flour. Dough should be soft and slightly sticky.

(about 1 hour -- depending on temperature) Dough is ready to bake if slight dent remains when touched. Bake at 375 degrees. I don't have a bake time, but 20 minutes is about standard. 1 package (1/4 ounce) quick-rise yeast

3 tablespoons sugar
1/4 teaspoon baking powder
1/8 teaspoon salt
4 tablespoons (1/2 stick) cold unsalted butter
1 large egg

Steps:

  • To mix the dough by hand, combine flour, sugar, salt and baking powder in a medium mixing bowl and stir well to mix. Cut butter into 1-tablespoon pieces and add to dry ingredients. Toss once or twice to coat pieces of butter. Using your hands or a pastry blender, rub the butter into the dry ingredients by breaking it into tiny pieces, continuously pinching and squeezing it into the dry ingredients. 2 3/4 cups all-purpose flour, plus more for dusting

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. 1 teaspoon sugar
1/2 cup water (105-115)
1 package active dry yeast
2/3 cup milk
1/4 cup sugar
1 teaspoon salt
1/4 cup butter or 1/4 cup shortening
1 egg
3 -4 cups all-purpose flour

Steps:

  • Dissolve 1 tsp.
  • sugar in warm water in large bowl.
  • Sprinkle in yeast.
  • Let stand 10 minutes, then stir well.
  • Heat milk to lukewarm.
  • Stir in 1/4 cup sugar and salt.
  • Add lukewarm milk mixture, butter,egg and 1 cup flour to dissolved yeast mixture.
  • Beat for 3 minutes.
  • Stir in about 3 cups remaining flour gradually.
  • If necessary, add more flour to make a soft dough which leaves sides of bowl.
  • Turn out onto lightly floured board.
  • Knead dough, adding more flour as necessary, until dough is smooth, elastic and no longer sticky (about 5 minutes).
  • Place in lightly greased bowl.
  • Turn dough to grease top.
  • Cover with greased waxed paper and tea towel.
  • Let rise in warm place until doubled (about 1 hour).
  • Punch down.

Basic Rich Sweet Yeast Dough image

An old fashioned sweet dough recipe for coffee cakes, coffee bread, babka, buns, kolacky, rolls, and so on. Prepare 24 hours ahead of time. This rich dough needs the chilling and long rest period to produce a wonderful versatile dough. You may halve the recipe if you wish.

1/2 lb butter (2 sticks)
1/2 teaspoon salt
1 1/4 cups milk
1 cup sugar
6 -8 cups flour
2 packages active dry yeast
1/4 cup water
4 egg yolks
2 whole eggs
1 teaspoon ground cardamom (this really adds a special flavor) (optional)
1 cup powdered sugar
1 tablespoon water
1 tablespoon cream, more if needed to thin to desired consistency
1 teaspoon rum extract or 1 teaspoon vanilla extract
2 tablespoons finely grated coconut (optional)

Steps:

  • (Icing may be doubled and used for any cake or bun icing).
  • Dissolve yeast in 1/4 cup warm water and set aside until foamy.
  • Heat milk, shortening, sugar and salt to melt shortening.
  • Cool to warm and add yeast mixture, egg yolks and whole eggs.
  • Beat well by hand.
  • Gradually beat in by hand 6 cups of flour and the cardamom.
  • Knead well on a floured surface only adding additional flour to make a smooth and elastic dough.
  • Place dough in an oiled bowl, turn to coat with oil and cover and let rise double in volume.
  • Punch down and cover dough and refrigerate overnight in large bowl.
  • When ready to use, punch down and knead briefly to warm up dough.
  • Use dough as you wish for coffee cakes, sweet breads, buns, etc.
  • You may divide dough into 6 buns, or 4 equal pieces to make 4 small loaves or braids.
  • If braiding, divide each piece into 3 loose strands and braid and tuck under ends.
  • Brush with melted butter.
  • Place on baking sheets/pans and let rise double in volume.
  • Bake in a 350F oven about 30 minutes or golden and tested done.
  • Remove from pans/baking sheet to cool on rack.
  • Mix icing ingredients and drizzle over warm cake/bread.

Steps:

  • Heat milk in a small saucepan over medium heat or in a microwave until an instant-read thermometer registers 110°F-115°F. Transfer milk to a 2-cup measuring cup; stir in 1 tablespoon sugar. Sprinkle yeast over milk and whisk to blend. Let sit until yeast is foamy, about 5 minutes. Add eggs; whisk until smooth.
  • Combine remaining 4 tablespoons sugar, flour, and salt in the bowl of a stand mixer fitted with a dough hook. Add milk mixture. This sweet dough recipe is my mother's, and this works out really well because it is an old recipe. I have also used others which were more recent and still turned out well, but this one is the best I have found. Use this recipe for the basis of your sweet breads.

1 cup milk
8 cups sifted all-purpose flour
1 ¼ cups cold water
2 (0.6 ounce) cakes compressed fresh yeast
2 teaspoons salt
½ cup white sugar
4 tablespoons shortening
2 eggs

  • Scald milk in a medium saucepan. Add cold water to scalded milk. Remove 1/4 cup liquid; mix yeast into liquid when cooled to lukewarm. To liquid in saucepan, add salt, sugar, shortening, and eggs. Add dissolved yeast to saucepan. Mix well.

Turn dough out onto a floured surface and continue to knead until the dough is smooth and elastic, about 10 minutes. Grease a large bowl with 1 tablespoon of oil. Place the dough into the bowl and turn once to coat. Cover and let stand in a warm place until double in size, about 1 hour.
  • Use remaining oil to grease a cookie sheet or 9x13 inch pan. For plain rolls, punch down dough and divide into 12 equal pieces. Roll the pieces into balls and place them into the greased pan side by side. Let dough rise for 20 to 25 minutes, or until almost double. Preheat oven to 375 degrees F (190 degrees C).
  • Bake for 20 to 25 minutes in the preheated oven, until rolls are golden brown.

Down in Louisiana this dough is used to make what we call Cajun Sweet Dough. The traditional filling is fig and it is made into turnovers, but it can also be used as pie crust, although it is not as flaky. It is supreme as turnover dough, for ANY kind of filling.

Number Of Ingredients 10

¾ cup unsalted butter, softened
1 ⅓ cups white sugar
1 teaspoon vanilla extract
1 egg
4 ½ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
½ cup milk
1 (12.5 ounce) can cherry pie filling
1 egg white (for egg wash)

Steps:

  • Sift together the flour, baking powder, and salt. Set aside.
  • In a separate bowl, beat the butter, then add the sugar a little at a time. Add the vanilla. Beat the mixture until it is nice and fluffy. Beat in the egg. Stir in the flour mixture alternately with the milk.
  • Before you use this dough, be sure you chill it well at least 2 hours or even overnight.
  • To make turnovers: Preheat the oven to 350 degrees F (175 degrees C). Roll dough out to 1/4 inch thickness on a lightly floured surface. Cut into 3 inch squares. Spoon about 2 teaspoons of the pie filling into the center of each square and fold over to form a triangle. Pinch the seams to seal or press with the tines of a fork. Place at least 2 inches apart on a greased baking sheet. Brush with egg white.
  • Bake for 12 to 15 minutes in the preheated oven, until golden brown on the tops and bottom.
