1 pound lean ground beef
1 small (1/2 cup) onion, chopped
1 (4-ounce) can chopped mild green chiles
1 (11-ounce) can Mexican-style corn, * drained
1 (10-ounce) can mild enchilada sauce
9 (6-inch) corn tortillas
6 (3/4-ounce) slices Land O Lakes® Deli American
Topping
Sour cream, if desired
Sliced green onion, if desired
Salsa, if desired

Steps:

  • Spray 4-quart slow cooker with no-stick cooking spray; set aside.
  • Cook ground beef and onion in 10-inch skillet over medium-high heat until no longer pink; drain, if necessary. Stir in green chiles, corn and enchilada sauce.
  • Place 3 tortillas in bottom of slow cooker; top with 1 1/3 cups meat mixture and 2 cheese slices. Repeat layers twice except last 2 cheese slices.
  • Cover; cook on Low heat setting 3-4 hours or High heat setting 2-3 hours, or until bubbly. Turn off heat. Top with remaining 2 cheese slices. Cover; allow cheese to melt.
  • Dollop each serving with sour cream; top with sliced green onion and salsa, if desired.

2 (14 oz.) cans chili con carne (or a homemade chili con carne)
5-6 Del Real Cheese Tamales
1/2 cups of onion, chopped
2 cups corn chips or tortilla chips
2 cups shredded Mexican blend cheese, divided
Shredded lettuce and diced tomatoes for garnish

Steps:

  • Empty the cans of chili in to the crock of a 6 or 8 quart slow cooker. You can also use a homemade chili con carne, but make sure it is saucy. Spread the chili con carne over the bottom of the slow cooker. Unwrap the Del Real Cheese Tamales from the corn husks. Lay the tamales over the chili the length of the slow cooker. If the slow cooker is small, you can also cut the tamales in half or in to small pieces to fit. Sprinkle the onions on top of the tamales. Place the chips in a plastic bag and use a rolling pin to crush. Scatter the crushed chips on top of the onions and tamales. Sprinkle 1 cup of the cheese over the top. Cover and cook on low for 3 1/2 hours. Remove the cover and sprinkle the remaining 1 cup of cheese over on top. Replace cover and cook for another 30 minutes. Serve with shredded lettuce, diced tomatoes, guacamole, sour cream and salsa.

Steps:

  • Preheat crock pot to high.
  • In a large skillet, cook beef and sausage in oil, until crumbled and no longer pink.
  • Put meat in slow cooker reserving 1 T. of the liquid from the pan.
  • Add reserved oil, onions, carrots and celery to the pan. Cook and stir until softened. Add jalapeno, chili powder, cumin, oregano, salt and pepper. cook and stir for about 1 minute. Add ketchup and refried beans an stir well. Add stock and corn and bring to a boil. Pour over meats in slow cooker and stir well to combine.

  • Topping will rise and get crusty and the meat will be bubbly and hot.

1 teaspoon cumin
1/2 yellow onion, diced
1 garlic clove, minced
1/2 teaspoon kosher salt
1 (4 ounce) can chopped green chilies
1 (15 ounce) can corn, drained
1 cup shredded cheddar cheese (optional)
4 cups masa harina
2 1/2 cups beef broth
2 teaspoons baking powder
1 teaspoon kosher salt
1 1/3 cups lard (I used crisco) or 1 1/3 cups vegetable shortening (I used crisco)
1 (6 ounce) package dried corn husks

Steps:

  • If you're going to use the rotisserie chicken, combine the meat with the onion, garlic, can of green chilies, cumin, salt, and drained corn in a 4 quart (or so) crockpot and cook on high for 3-4 hours, or on low for 6. The onions need to be translucent before going into the tamales. If you don't have time for this step, skip the garlic and onion, and combine the chicken with the chiles, cumin, salt, and drained corn in a mixing bowl. Set aside.
  • Soften the corn husks by soaking them in very hot water until they are quite pliable.
  • To make the masa, combine all dough ingredients in a large mixing bowl, and beat on medium-to-high speed until everything is mixed well and the dough is spongy. Check the dough by dropping a little ball of it into a glass of water. It should float. If it doesn't float, this source says to continue to beat the dough.
  • Take a bit larger than a golf-ball size piece of masa dough, and spread it into a wet corn husk. The dough should be about 1/4 inch thick--you do not want to see the corn husk through the dough. Add a bit of filling, and some cheese. Fold the corn husk over to join the edges of the masa. If you need to add more dough, do so---no filling should peek through. Fold all corn husk edges into the center and place into the bottom of an empty crockpot, seam side down (I used a 6.5 quart, and fit 19 inside).
  • Repeat. Many, many, many times. It took me about 2 hours to make all of the tamales. If you find that your corn husks are unraveling, you can add another the other way to secure it, and tear off a long piece to tie around. I had to do this a few times. I also needed to add more hot water to the soaking husks to keep them pliable. If you need to step away from the tamale-making-process for a bit, put the lid on your crockpot to keep moisture inside.
  • When the crockpot is full, put the lid on and cook on high for 4-6 hours, or until a tester tamale looks and tastes done. The tamales on the edges will cook a bit faster. Once your tester looks good (I used the same one, and kept re-wrapping it and adding it back when it wasn't ready), unplug the crockpot and keep the lid off. Don't unwrap any others until they've set for about 15 minutes. My tamales were cooked at 6 hours, but I began checking every 45 minutes at 4 hours.

Steps:

  • Brown the Ground Beef and Chorizo together.
  • Drain most of the fat off (but the chorizo has a lot of flavor, so reserve some of the fat for flavor).
  • Pre-mix the egg, milk and cornmeal.
  • Except for the cheese, put all the other ingredients into the crock pot (including the meats).
  • Mix them thoroughly.
  • Put the cornflour-egg-milk mix on top.
  • Set the Crock pot to high or low.
  • Cook for 5-6 hours on high or 10-12 hours on low.

1 10 oz can Rotel Diced Tomatoes with Green Chilies
1 10 oz can enchilada sauce
1 15 oz can southwestern corn
1 15 oz can black beans
2 cups Mexican style shredded cheese
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon ground cumin
1 box Jiffy cornbread mix
1 large egg
1/3 cup milk

Steps:

  • Brown and drain ground beef.
  • Add ground beef, cumin, salt, pepper and garlic to a 6 quart crock pot and mix well.
  • Add corn, black beans, enchilada sauce and 1/2 cup Mexican shredded cheese to the crock pot and mix well.
  • Sprinkle 1/2 cup of Mexican cheese over top.
  • Mix corn bread mix as directed.
  • Drop by spoon fulls over top of ingredients in crock pot and spread it into an even layer.
  • Place a triple layer of paper towels over the top of the crock pot.
  • Place crock pot lid on and cook on low for 3 hours.
  • Check corn bread for doneness by inserting a tooth pick in the center. If done sprinkle remaining cheese over top, replace paper towels and cook until cheese is melted. If corn bread is not done replace paper towels and cook another 30 minutes or until done.
  • Once done cover with cheese and cook until melted.
  • Serve with spanish rice or favorite side dish.
  • Garnish with sour cream and green onions if desired.

3 -4 lbs pork roast
4 dried red chilies
1/2 sliced onion
2 garlic, cloves crushed
2 jalapenos, seeded and cut in half
salt and pepper

Steps:

  • Toss all ingredients in a Crock pot and cook for min 10 hours (usually I'll start this the night before and let cook all night).
  • Take out roast and strain the broth, reserving about 3 cups.
  • Take all the"stuff" you strained out and put into a blender (you'll get a nice paste mixture).
  • Mix in some of the reserved broth (but you don't want it to be too running) and blend once more.
  • Shread your pork and place into a large bowl.
  • Now mix all the stuff you blended into the meat.
  • Make sure to taste it and adjust if you need more broth or salt and pepper.
  • Spread mixture on your prepared masa or on a burrito shell.
  • It's wonderfully flavored.

1 cup Salsa Verde ([See Note 4])
1 cup Fiesta Corn ([See Note 5])
1/4 cup Green olives, sliced ([See Note 6])

Chopped Cilantro
Pico de Gallo (Fresh Salsa)
Sour Cream
Additional Salsa Verde

Steps:

  • Prepare the filling. Combine 1 to 1-1/2 lbs of shredded meat with 1 cup of Salsa Verde. If you are using diced onions, fiesta corn, and sliced olives, adds them here. Note: Shredded rotisserie chicken makes this recipe super easy for any weeknight meal.
  • Prepare Dough. Combine masa, warm chicken broth, baking powder, salt, and oil in a large bowl, Mix together until the dough has the consistency of a soft paste. Cover & let rest for at least 15 minutes at room temperature so the dough can thoroughly absorb the liquid ingredients
  • Preheat the oven. Preheat the oven to 350 degrees F and lightly oil a 9 x 9-inch (2-1/2 quart) casserole dish. This will not quite fit in an 8 x 8-inch (2-quart) dish. NOTE: If you do not have a 2-1/2 quart casserole, move up to a 13x9-inch (3-quart) dish to prevent spillage.
  • Form the Bottom Tamale Layer. Press half of the tamale dough into the casserole dish forming a thin bottom layer. With your fingers, a fork, or a small spatula, press the mixture evenly across the bottom of the pan and halfway up the sides, about 1/4- inch thick.
  • Add the Filling. Spoon the meat mixture prepared earlier evenly over the entire dough surface.
  • Prepare the top tamale layer. Spread the remaining tamale dough over the filling, trying to make the top portion about the same thickness as the bottom. Do this by spreading the dough out on a piece of plastic wrap and then inverting it over the tamale casserole and then peeling back the plastic wrap. If it tears a little bit, don't worry! It will come together during baking.
  • Create the Steam Bath. Fill a large roasting pan with about 2 inches of hot water. Place the uncovered tamale casserole into the water bath. Cover both the tamale casserole and roaster pan with one layer of aluminum foil and place in oven. The water will steam the tamale and cook it all the way through.
  • Bake. Bake for 45 to 60-minutes or until the Masa layer is set. Let it cool slightly (10-minutes) before serving so it holds its form.
  • Serve. Serve warm with pico de gallo, salsa verde, sour cream, cheese sauce, enchilada sauce, crumbled cheese, chopped onions, or a traditional red salsa. There's no wrong way to eat a tamale!
  • Store. Store any leftover tamale pie covered in the refrigerator for up to 7 days.
  • Freeze. Alternatively, tamale pie may also be frozen in smaller portions and reheated in the microwave. This makes a quick and easy weekday lunch.Warm at 50% power until heated through.

1 large onion, diced
1 16-oz jar(s) green tomatillo salsa
2 15-oz can(s) chili con carne, without beans
1 15-oz can(s) black beans, rinsed, drained
1 2-oz can(s) sliced ripe olives, drained
10 tamales (chicken or beef), wrappers or husks removed
2 7-oz can(s) whole green chilies, drained, cut into 1/2-inch strips
cheddar cheese, shredded, optional
sour cream, optional

Steps:

  • 1. Place half of the diced onions in a 4-quart electric slow cooker.
  • 2. Top with half each of the salsa, the chili, beans and olives.
  • 3. Place 4 or 5 of the tamales on top.
  • 4. Cover the tamales with half of the chili strips.
  • 5. Repeat the layers, ending with the remaining chili strips.
  • 6. Cover and cook on the low setting 6 1/2 to 7 hours.
  • 7. Pass shredded cheese and sour cream on the side.
  • 8. Tips: If you are using frozen tamales, the wrappers will be easier to remove if you microwave them for a few seconds first. Also, if using frozen tamales, increase cooking time about 1 hour.

1 pound lean ground beef (ground round, sirloin, or similar)
3/4 cup yellow cornmeal
1 1/2 cups milk
1 large egg (beaten)
1 envelope chili seasoning mix
1 teaspoon seasoned salt
1 (14.5-ounce) can tomatoes (cut up)
1 (12- to 16-ounce) can whole kernel corn (drained)
1 small can sliced ripe olives (drained)
1 1/2 cups grated Mexican blend of cheeses

Steps:

  • In a skillet, cook ground beef until crumbly; drain well.
  • In large bowl mix cornmeal, milk, egg. Add drained ground beef, dry chili seasoning mix, seasoned salt and tomatoes, corn, and olives. Pour into the slow cooker.
  • Cover and cook on high for 3 1/2 to 4 1/2 hours. Sprinkle cheese over top. Cover and cook for 5 to 10 minutes longer.
