STICKY SPICY SLOW-COOKED RIBS

Steps:
- Cut the racks into 2-rib pieces, season with salt and pepper and put into a slow cooker.
- In a bowl, mix together the preserves, ketchup, mustard, soy sauce, garlic, chipotles, ginger and hot sauce. Pour the mixture over the ribs and cover. Cook on low for 6 to 8 hours or high for 3 to 4 hours.
- When the ribs are cooked, preheat the oven to 375 degrees F. Line a baking sheet with foil.
- Carefully remove the ribs from the slow cooker and place them in a single layer on the prepared baking sheet. Skim the fat from the juices and transfer the juices to a pan. Place the pan on medium-high heat and bring to a simmer.
- Mix the cornstarch and 3 tablespoons water in a small bowl to create a slurry. Stir the slurry into the juices in the pan and cook until the desired thickness.
- Brush the ribs with the sauce and bake, brushing with more sauce every 10 to 15 minutes, until the ribs are glazed and sticky, about 45 minutes. Serve with extra sauce.
SPICY-SWEET RIBS AND BEANS CROCK POT
I found this recipe in Southern Living! Yummy! I've prepared this the night before on low to have done for an early dinner! I did tweak it. The optional ingredients were added to the original recipe from Southern Living.

- Place beans in a 5-quart electric slow cooker; set aside.
- Cut ribs apart; sprinkle with garlic powder, salt, and pepper.
- Place ribs on a broiling pan. Besides browning for taste this removes some of the fat.
- Broil 5 1/2 inches from heat 18 to 20 minutes or until browned, turning once.
- Add ribs to slow cooker, and sprinkle with onion, garlic, and pepper.
- Combine jelly, barbecue sauce, and hot sauce in a saucepan; cook over low heat until jelly melts. (I just added right to the beans and it melted in with no problem).
- Pour over ribs; stir gently.
- Cover and cook at HIGH 5 to 6 hours or at LOW 9 to 10 hours.
- Remove ribs.
- Drain bean mixture, reserving sauce.
- Skim fat from sauce.
- Arrange ribs over bean mixture; serve with sauce.
- Serve on a bed of rice.

CROCK POT SWEET AND SPICY PORK OR BEEF RIBS AND BEANS
For this recipe the ribs need to be browned under the broiler first for extra flavor. You can also cook this in a 300 degree oven.

- Place the drained beans in the crock pot; set aside.
- Cut the pork or beef ribs into serving-size pieces, then season with seasoned salt and black pepper.
- Place the ribs in a broiler pan, then broil in oven for about 20-25 minutes, turning once.
- Add the browned ribs to the slow cooker and then sprinkle the onion, fresh garlic and green pepper over the ribs.
- In a saucepan combine the BBQ sauce, jalapeno jelly and Tabasco hot sauce; cook stirring over low heat until melted and combined.
- Pour the mixture over the ribs and toss to coat with the sauce.
- Cover and cook on HIGH for about 5-6 hours or on LOW for about 9-10 hours.
- Remove the ribs and skim off any fat from the sauce.
- Arrange the ribs over the bean mixture.

- Wash the ribs. Place in a large mixing bowl and add the flour, salt and pepper. Toss the ribs and make sure they are well coated with the flour. Transfer any remaining flour to a cup and add a few tablespoons of water. Stir to make a paste and set aside.
- In a large pan, add a drop of olive oil and brown the ribs on all sides then transfer to the slow cooker.
- Using the same pan, saute the onions and garlic until soft. Use a spatula and stir everything, scraping the bottom and sides of the pan to get all the beef residue off.
- Add the tomato puree, bay leaves, paprika, honey, Worcestershire sauce, thyme and beef stock.
- Using the flour paste you made, add that to the broth mixture, stir over a high heat until it starts to boil. Add the carrots. Taste if you wish to add any salt and pepper.
- Transfer the broth mixture to the slow cooker. Place lid on and cook on LOW for 6 hours.
- **If cooking this in the oven, transfer everything to a casserole dish and cover. Place in the oven at oven at 300 F or 150 C for approximately 3 hrs.
- **TIP: 20 minutes before cook time (slow cooker and oven), just have a quick check to make sure the broth is as thick as you would like. if it is too thin, simply mix 1 tablespoon of cornstarch to 1 tablespoon of cold water in a cup and pour that into the broth and stir. this will thicken it when it continues to cook for the remaining cook time.
- When cooked, serve with some delicious creamy cheesy mashed potatoes and steamed vegetables.
